These crunchy cookies are inspired by Thai cookies called Tong Ek (Golden Cookies). Baking with coconut milk plus shredded coconut adds tropical coconut flavor and cacao nibs add crunch. These delicious cookies are ideal for every coconut fan!

1 ½ cups all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
¾ cup brown sugar
½ cup unsalted butter (room temperature)
2 egg yolks
1 teaspoon vanilla extract
½ cup coconut milk or coconut cream**
¾ cup cacao nibs (or mini chocolate chips)
¼ cup unsweetened coconut (shredded)
½ cup unsweetened coconut (shredded)
¼ cup cacao nibs (or mini chocolate chips)

Steps:

  • Preheat oven to 350 degrees F. Line a large baking sheet with parchment paper.
  • In a large mixing bowl, whisk together the flour, baking powder, salt, and brown sugar.
  • Cut in the butter with a fork, until the dough is crumbly like coarse meal.
  • Mix in the yolks, vanilla, and coconut milk.
  • Fold in the nibs (or chocolate chips) and coconut until evenly distributed.
  • Using a small (2 teaspoon)cookie scoop, place balls of dough on the prepared cookie sheet 1"-2" apart.
  • Top each coconut cookie dough ball with a pinch of shredded coconut and a few cocoa nibs (or mini chocolate chips).
  • Bake cookies for 12-14 minutes until golden brown.
  • Cool five minutes on the baking sheet before moving to a wire rack to cool completely.
  • Store in an airtight container at room temperature for up to one week.
  • **To make homemade coconut milk: In a small saucepan combine 1 cup of unsweetened shredded coconut with ½ cup of water. Bring to a boil. Remove from heat and allow the coconut to seep for 30 minutes. Strain out the shredded coconut through a sieve. To make coconut cream follow the same process using ½ cup of milk instead of water.

1 package (14 ounces) sweetened shredded coconut (5 1/3 cups)
1 cup sugar
1/2 teaspoon salt
1/4 teaspoon baking powder
1/2 cup (1 stick) chilled unsalted butter, cut into small pieces
1 large egg
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour, (spooned and leveled)

Steps:

  • Preheat oven to 350 degrees. Set aside 2 loosely packed cups of coconut on a plate. Place remaining coconut in a food processor along with sugar, salt, and baking powder; process until finely ground. Add butter, and process just until no lumps remain. Add egg and vanilla; process just until smooth. Add flour; pulse until a crumbly dough begins to form, scraping sides of bowl as needed (do not overmix).
  • Forming 5 or 6 at a time, scoop level tablespoons of dough, and place in reserved coconut. Roll into balls, coating with coconut.
  • Arrange balls, about 2 inches apart, on baking sheets. Bake until lightly golden, 23 to 25 minutes. Cool on baking sheets 1 to 2 minutes; transfer to a wire rack to cool completely.

Steps:

  • Preheat oven to 325 F.
  • Line a large baking sheet with parchment paper.
  • Combine all ingredients in a bowl, stirring well.
  • Grease a tablespoon or cookie scoop.
  • Using the teaspoon or cookie scoop, measure out balls of the coconut mixture, roll into balls with lightly oiled hands and arrange onto the prepared baking sheet. Or simply drop mounds onto the baking sheet, and skip the rolling step.
  • Bake for 10 to 12 minutes, until lightly browned around the edges.
  • Carefully move to a wire rack to cool.

These amazing Coconut Oil Shortbread Cookies, are vegan, easy to make and only 6 ingredients including coconut oil. They do not have a strong coconut flavor and taste like a simple shortbread cookie!

1/2 cup coconut oil (room temperature)
1/4 cup cane sugar or granulated sugar
2 tsp pure vanilla extract
1/4 tsp salt
2 Tbsp water
1 1/4 cup all-purpose flour

Steps:

  • In a large mixing bowl, add your room temperature coconut oil. It should be solid, but not hard. With an electric mixer on medium-high, mix coconut oil until it's smooth and not chunky.
  • Add your sugar, vanilla extract, salt and water and mix for another 2-3 minutes until combined.
  • Now with a large spoon, stir in the flour until combined.
  • The dough shouldn't be soft and soggy but it shouldn't be dry and crumbling either. Aim for the between, if it's too dry add a little more water; if it's too soggy add a little more flour.
  • Grab a piece of syran wrap or wax paper and sprinkle a little flour so the dough doesn't stick to the wrap/paper. The dough needs to be formed into a log shape about 2 inches in circumference and then wrapped in the wrap or paper. This can be done with your hands.
  • Wrap tightly and refrigerated for at least 30 minutes.
  • Preheat the oven to 350° F and line a baking sheet with parchment paper.
  • When your dough is hard and ready, take out of fridge and unwrap it. With a sharp knife cut into 1/2 inch pieces and place on baking sheet about 1 inch apart.
  • Bake in the preheated oven for 18-20 or until the edges are little brown. Transfer them to a cooling rack and cool completely before serving.
  • *Optional: You can drizzle baking chocolate over them and add some sprinkles. They make perfect holiday treats for Valentine's Day, Easter, Christmas, ect.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C.) Combine the flour, baking soda, and salt; set aside.
  • In a medium bowl, cream the butter, brown sugar, and white sugar until smooth. Beat in the egg and vanilla until light and fluffy. Gradually blend in the flour mixture, then mix in the coconut. Drop dough by teaspoonfuls onto an ungreased cookie sheet. Cookies should be about 3 inches apart.
  • Bake for 8 to 10 minutes in the preheated oven, or until lightly toasted. Cool on wire racks.

1 cup shortening
1 cup sugar
1 cup packed brown sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup old-fashioned oats
1 cup sweetened shredded coconut

Steps:

  • In a large bowl, beat shortening and sugars until blended. Beat in eggs and vanilla. In another bowl, whisk flour, baking powder, baking soda and salt; gradually beat into sugar mixture. Stir in oats and coconut., Divide dough into 4 portions. On a lightly floured surface, shape each into a 6-in.-long log. Wrap in waxed paper; freeze 2 hours or until firm., Preheat oven to 350°. Unwrap and cut dough crosswise into 1/2-in. slices, reshaping as needed. Place 2 in. apart on ungreased baking sheets. Bake 10-12 minutes or until golden brown. Cool on pans 5 minutes. Remove to wire racks to cool., Freeze option: Place wrapped logs in a freezer container; return to freezer. To use, unwrap frozen logs and cut into slices. If necessary, let dough stand a few minutes at room temperature before cutting. Prepare and bake as directed.
