These easy Ice Cream Cupcakes are the perfect summer treat! AND customize them anyway you like with different ice cream flavors!

Steps:
- Line a muffin tin with cupcake liners. Set aside.
- In a medium bowl combine the crushed cookies and melted butter. Divide the mixture between the 12 cupcake liners and press firmly into the bottom.
- Top each crust with 1/3- cup of ice cream and press in evenly. Drizzle 1- 2 teaspoons of chocolate syrup on each cupcake. Top with 1/4- cup of whipped topping and sprinkles.
- Cover and freeze for at least 3 hours.

- Preheat oven to 350 degrees. Line two 12-cup muffin tins with paper liners. In a large bowl, combine flour, cocoa, sugar, baking soda, baking powder and salt. Add eggs, melted butter, buttermilk, vanilla and 1/2 cup hot water; whisk until smooth.
- Spoon 1 tablespoon batter into each muffin tin and press a cookie firmly into each cup until batter comes up sides of cookies. Divide remaining batter evenly among cups. Bake, rotating pans halfway through, until cupcakes are puffed and set, 15 to 17 minutes. Let cool completely in pan on wire rack.
- Put the buttercream in a large piping bag fitted with a 1/2-inch plain round tip (such as Ateco #808). Pipe onto cupcakes and sprinkle with crushed crumbs.

- Preheat oven to 350°F. Grease 24 muffin pan cups or line with paper baking cups.
- Stir together flour, baking powder and salt in large bowl. Stir in sugar. Add milk, butter & vanilla
- Beat with electric mixer at medium speed for 2 minutes.
- Add egg whites; beat another 2 minutes.
- Stir in 1 cup crushed cookies.
- Spoon batter evenly into muffin cups, filling two-thirds full.
- Bake 17-20 or until toothpick inserted into centers comes out clean.
- Remove from pan and cool on wire racks for 10 minutes
- Frost cupcakes and garnish with additional crushed cookies.

- Preheat oven to 350°. Line 24 muffin cups with paper liners. In a large bowl, combine cake mix, bananas, water and egg whites; beat on low speed 30 seconds. Beat on medium 2 minutes. - In a mixing bowl combine the butter and sugar, beat using an electric mixer, 1-2 minutes until fluffy. Add in the egg whites, mixing with a spatula. Add in the sour cream, milk, and vanilla extract. Beat lightly with the electric mixer. In a separate mixing bowl combine the flour, baking soda, and salt. Gradually add the flour mixture to the wet ingredients a few spoonfuls at a time. Add in the crushed oreos. Mix until just incorporated. Fill the muffin liners 1/2-3/4 full.
- Bake for 5 minutes at 400º F. Keeping the cupcakes in the oven, turn the heat down to 350ºF and bake for 8-9 minutes, or until a few moist crumbs remain on a toothpick when inserted into the center. Allow the cupcakes to cool completely before adding the frosting.
- In a mixing bowl, combine the butter and vanilla extract, beat using an electric mixer until fluffy. Begin to add the powdered sugar, about 1 cup at a time, mixing by hand. Continue adding powdered sugar until the frosting no longer looks wet and tastes good to you. Add in the finely blended oreos (I like to call it "oreo flour").
