GEORGE'S FRUIT COOKIES

A man named George gave my mother this recipe when he was eating lunch one day while putting in a new furnace over 50 years ago!

Ingredients

1 cup shortening
1 ½ cups white sugar
3 eggs
2 tablespoons molasses
1 cup chopped walnuts
1 (8 ounce) can fruit cocktail, drained
1 cup raisins
1 teaspoon vanilla extract
1 teaspoon ground cloves
1 teaspoon ground cinnamon
1 teaspoon baking soda
3 tablespoons hot water
½ teaspoon salt
3 ½ cups sifted all-purpose flour

Steps:

Preheat oven to 375 degrees F (190 degrees C). In a small bowl, dissolve baking soda in warm water.
In a large bowl, cream together the shortening and the sugar. Beat the eggs and mix in. Stir in molasses, chopped nuts, fruit cocktail, raisins and vanilla. Mix in spices, baking soda and salt. Sift the flour and stir in. Mix until well blended.
Drop by teaspoon on a cookie sheet and bake for 10 to 15 minutes.

2 cups butter
2 cups packed brown sugar
2 cups white sugar
4 eggs
1 teaspoon vanilla extract
5 cups rolled oats
4 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
1 cup milk chocolate chips
3 cups dark chocolate chips
12 (1 ounce) squares German sweet chocolate, chopped

Steps:

Preheat oven to 375 degrees F (190 degrees C).
Combine butter, sugar, eggs and vanilla. In a blender or food processor, process the oats until finely chopped. Then, in separate bowl, combine chopped oatmeal, flour, baking powder and baking soda. Add flour mixture to butter mixture. Gradually add the chopped milk chocolate chips and whole chocolate chips.
Roll dough into golf ball size balls. Press with fork. Bake for 6 to 8 minutes. Do not overbake. When they come out of the oven, the cookies will be soft. Place a chocolate chunk in the center.

BANANA PUDDING

This classic dessert comes together in just a few minutes with no baking needed. You'll love the creamy pudding with lots of bananas and cookies inside.

2 cups whole milk
14 oz sweetened condensed milk (1 can)
5 oz instant vanilla pudding mix (one package )
3 cups heavy cream (divided)
3 tbsp granulated sugar (divided)
3 tsp vanilla extract (divided)
1 box vanilla wafer cookies (16-oz.)
5 bananas (sliced into coins)

Steps:

In a large bowl whisk together the milk and sweetened condensed milk then sprinkle in the instant pudding and mix until completely incorporated with no lumps remaining. You can do this by hand or with an electric mixer. Refrigerate for 5 minutes or until set.
Add 3 cups of whipped cream with two tablespoons of sugar and 2 teaspoons of vanilla to a bowl then mix on high until stiff peaks from.
Remove pudding from the refrigerator then fold the whipped cream into it.
Add a layer of cookies to the bottom of your trifle dish or a larger bowl. Place a quarter of the pudding mixture over then smooth using a spatula. Add another layer of cookies then place a row of cookies facing the horizontal edge of your dish. Add a layer of banana slices on top then add another quarter of the pudding mixture and smooth.
Continue layering with cookies, bananas and pudding until complete. Alternate a row of banana slices with the cookies you're pressing against the wall of the trifle dish. Chill for three hours.
For the topping whip cup of cup of cream with a tablespoon of sugar and a teaspoon of vanilla to stiff peaks. Pile on top and crumble the remaining cookies over then serve.
