Steps:
- Snap the stem ends of the green beans, or cut them off in a big bunch with a knife if you'd prefer.
- Melt the bacon grease in a skillet over medium-low heat. Add the garlic and onions and cook for a minute. Then add the green beans and cook until the beans turn bright green, about a minute. Add the chicken broth, chopped red pepper, salt and pepper to taste. Turn the heat to low and cover the skillet with a lid, leaving the lid cracked to allow steam to escape. Cook until the liquid evaporates and the beans are fairly soft, yet still a bit crisp, 20 to 30 minutes. You can add more chicken broth during the cooking process, but don't be afraid to let it all cook away so the onions and peppers can start to caramelize.
FRESH GREEN BEANS (A.K.A TOM CRUISE GREEN BEANS)
Steps:
- Wash and drain the beans. Put 1 cup water in a medium saucepan. Add the beans and cook until tender but still very crisp, about 6 minutes. Drain the beans and add the butter, tossing to coat as it melts. Season with salt.
OLD-FASHIONED GREEN BEANS
Mom would prepare homegrown green beans using this recipe and, boy, did they ever taste good! The bacon provides rich flavor and the brown sugar a touch of sweetness. This is one irresistible side dish. -Willa Govoro, St. Clair, Missouri

A great alternative to fast-food French fries. My family and friends love these as a snack or hors d'oeuvre. No matter how many I make, it's never enough!

FRESH GREEN BEANS
An explanation of how you can get a lot more from simple ingredients by adding a "pairing" flavour. This one goes exceptionally well when served as a "side" to roast pork. Check your beans that they feel "crisp" and not "leathery" (Do they "snap" easily, and leak a bit of juice? If not, don't buy them)

Steps:
- Clean the beans, "tip and toe" them, and cut to 1" lengths.
- Boil salted water in a pot and add the almond extract when boiling.
- Place the beans and almond slivers in a steaming basket and cook until just about done (still some "crunch" left in the bean, but not chewy).

9 FRESH WAYS TO COOK GREEN BEANS - THE SPRUCE EATS
From thespruceeats.com

- Braise Them. Along with frying and grilling, braising is one of my favorite ways to cook green beans. Rather than cooking them to a trendy crisp-tender texture, this method slowly cooks green beans until they are extremely tender and infused with the flavor of the cooking liquid, but stops short of turning them mushy.
- Fry Them. It may not be a very common way to cook green beans, but frying them certainly is a delicious one. I like to serve these as an appetizer, often with small grape or cherry tomatoes alongside to provide a bit of sweet snap.
- Grill Them. It's true: You can grill green beans. And not for nothing. Grilling intensifies the grassy, vegetal flavor of green beans beautifully.
- Marinate Them. Soaking quickly steamed green beans in a bright vinaigrette like the shallot-infused one pictured here—takes advantage of their study texture and ability to absorb flavor.
- Pickle Them. These bright, crispy refrigerator pickles are easy to make and add their spicy kick to any relish tray, crudité platter, or a very special Fresh Tomato Bloody Mary.
- Put Them In a Casserole. Baking green beans in a saucy, flavorful mix and topping them with something crunchy is a Thanksgiving favorite.
- Roast Them. Roasting gives green beans crispy edges to contrast their tender insides. It's a delicious and easy way to cook green beans, whether for one or for a crowd.
- Serve Them In a Salad. Raw green beans might be a bit much for most people— that's a lot of vegetal goodness. Yet, I love using green beans in salads, even if I lightly steam them first.
- Steam Them. Steaming is a classic method of cooking green beans. When steamed to a crisp-tender texture and dressed with a bit of fresh butter, sea salt, and freshly ground black pepper, fresh garden green beans are a complete delight.

- Cook the beans: Bring a large pot of water to a boil. Season well with salt. Cook the beans for 5 minutes, then start checking them for done-ness. They should be tender but still crisp, without squeaking between your teeth when you chew them.
- Drain and chill: Drain the beans, then immediately rinse under cold water to stop the cooking process.
- Sauté with aromatics: Place the oil in the pot and heat over medium heat. Add your aromatics and sauté until fragrant and softened. Add the green beans and sauté just until heated.
- Add some extra taste: Stir in tastemakers like browned butter and mustard, sprinkle on toppings like chopped nuts. Serve right away for maxed out taste!
