Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease and flour one 9x13 inch cake pan.
- Beat vegetable oil and eggs until foamy. Add the sugar, flour, ground cinnamon, baking, soda, salt, and vanilla and mix well. Stir in the diced apples. Pour batter into prepared pan.
- Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes. Cool cake in pan for 10 minutes. Cake needs no frosting.

DELICIOUS APPLE CAKE
My husband introduced me to this rich, moist apple cake. It makes a delightful fall treat, especially with vanilla ice cream! I like to use a combination of Granny Smith and Braeburn apples. Refrigerate any leftovers.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch baking dish.
- Whisk sugar into vegetable oil in a mixing bowl. Beat eggs, vanilla extract, salt, flour, and baking soda into the sugar mixture, one ingredient at a time, in that order. Fold apple slices into the batter; pour into the prepared baking dish.

- In a bowl, beat the cream cheese, 1 cup sugar and brown sugar until blended. Add eggs and egg whites, one at a time, beating well after each addition. Add the applesauce, orange juice, oil and vanilla; beat until smooth. Combine flour and baking powder; add to egg mixture and mix well. In a bowl, toss the apples, walnuts, cinnamon and remaining sugar., Coat a 10-in. fluted tube pan with cooking spray and dust with flour. Spoon a third of the batter into prepared pan. Top with half of the apple mixture. Top with another third of the batter and the remaining apple mixture. Top with remaining batter. Bake at 350° for 70-80 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Dust with confectioners' sugar.

LIGHT APPLE CAKE

- Turn on the oven to 180°C - 350°F Line a square baking pan with baking paper.
- In a large mixing bowl beat egg whites until soft peaks form, using the hand electric mixer. Gradually add the sugar and beat until it's well combined. Add oil and continue to beat until it's fluffy and white cream.
- Turn off the electric mixer. Sift the flour with the baking powder upon the egg white mixture. Stir gently with the wooden spoon until it's completely combined.
- Peel, core and slice the apple. Arrange the fruit slices on the bottom of the prepared baking pan. Sprinkle with all spice. If desired you can now cover the apple with sliced almonds.
- Drop batter over the apples.
- Bake in the preheated oven about 30-35 min, or until a toothpick insered in the center of the cake comes out clean.
- Allow to rest about 10 minutes on a wire rack, then remove from the pan. Slice into squares and dust with confectioners' sugar.

EASY & LIGHT APPLE CAKE
This a Cooking Light recipe from 1997 but with a few adjustments to make it less sweet. The original recipe called for 1 3/4 cups sugar. This has been adjusted by reviewers and made even better. I like to use a mandolin to thinly slice apples instead of coarsely chopped.

- Preheat oven to 350*.
- Beat 3/4 cup sugar, butter, vanilla and cream cheese with a mixer at medium speed until well blended (about 4 minutes).
- Add eggs, one at a time, beating well after each addition.
- Combine flour, baking powder and salt in a bowl. Can be sifted together to make sure it is fully blended.
- Add flour mixture slowly to creamed mixture beating at low speed until blended.
- In a small bowl combine 1/4 cup sugar and 1 teaspoon.
- Place peeled and chopped apples in a bowl and sprinkle with 3 tablespoons of the sugar cinnamon mixture. Stir till apples are covered.
- Stir apple mixture into cake batter. It will be thick.
- Pour batter into an 8 inch spring form pan coated with cooking spray. Smooth top of cake and sprinkle with remaining sugar cinnamon mixture.
- Bake at 350* for 1 hour 15 minutes. Cool completely or can be served warm. For a 9 inch pan reduce cooking time by 5 minutes.

This is a moist, easy, healthy and delicious coffee cake with a streusel topping. I modified the original recipe a little but included the original amounts in brackets so you can make my adapted version or the original. The magazine recommends serving it warm (you can rewarm slices for a few seconds in the microwave). Recipe can easily be doubled. MAKE AHEAD: Cool completely, wrap (still in the pan) in foil, and leave out at room temperature for up to one day, or freeze for up to three months. To reheat thawed cake, unwrap and bake at 250 F for 15-20 minutes. The recipe is from Robin Miller in "Cooking Light" (Nov. 2007).

- To prepare cake, lightly spoon the flour into dry measuring cups; level with a knife. Combine flour and next 4 ingredients (through salt) in a large bowl, stirring with a whisk. Make a well in center of mixture. Combine milk, melted butter, vanilla, and egg, stirring with a whisk; add to flour mixture, stirring just until moist. Fold in apple. Pour batter into an 8-inch square baking pan coated with cooking spray.
- To prepare streusel, combine brown sugar, 2 tablespoons flour, and 1/2 teaspoon cinnamon; cut in butter with a pastry blender or 2 knives until mixture resembles coarse meal. Sprinkle streusel evenly over batter.
- Bake at 350 F for 45 minutes or until a wooden pick inserted in center comes out clean. Cool in pan 10 minutes on a wire rack before serving. Serve warm.

- Melt corn syrup and butter in a 10-inch cast-iron skillet coated with cooking spray over medium-high heat; remove from heat. Sprinkle with 1/2 cup sugar and pecans; arrange apple slices spokelike over brown sugar mixture, working from center of skillet to edge.

- Spoon batter over apples. Bake at 375° for 30 minutes or until a wooden pick inserted in center comes out clean. Cool in pan 5 minutes on a wire rack. Loosen cake from sides of pan with a knife. Place a plate upside down on top of cake. Invert cake onto plate. Cut into wedges. Serve with whipped cream. Garnish with cinnamon, if desired.
