BIG SOFT GINGER COOKIES
These are just what they say: big, soft, gingerbread cookies. They stay soft, too. My oldest son's favorite.

- Preheat oven to 350 degrees F (175 degrees C). Sift together the flour, ginger, baking soda, cinnamon, cloves, and salt. Set aside.
- In a large bowl, cream together the margarine and 1 cup sugar until light and fluffy. Beat in the egg, then stir in the water and molasses. Gradually stir the sifted ingredients into the molasses mixture. Shape dough into walnut sized balls, and roll them in the remaining 2 tablespoons of sugar. Place the cookies 2 inches apart onto an ungreased cookie sheet, and flatten slightly.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Store in an airtight container.

EASY CHEWY GINGER COOKIES

- Preheat oven to 350 degrees F (175 degrees C).
- Whisk flour, ginger, baking powder, cinnamon, and salt together in a bowl.
- Beat butter in a large bowl until creamy. Gradually beat in 2 cups sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in molasses. Stir 1/2 of the flour mixture into butter mixture; add remaining flour mixture and stir until dough is just-combined.
- Pour 3/4 sugar into a shallow bowl. Roll dough into 2 inch balls and roll each ball in sugar to coat. Place sugar-coated dough balls 2 1/2-inches apart on a baking sheet.
- Bake in the preheated oven until cookies are light brown and puffed, 12 to 14 minutes. Cool on the baking sheet for 2 minutes before transferring cookies to a wire rack to cool completely.

- Place butter in a large bowl; beat with a mixer at medium speed until fluffy. Gradually add 2/3 cup sugar, beating at medium speed until light and well blended.
- Add molasses and egg; beat well.
- Combine flour and the next 4 ingredients (through mace), stirring with a whisk.
- Gradually add flour mixture to butter mixture, stirring until well blended.
- Divide dough in half.
- Wrap each portion in plastic wrap, and freeze for 30 minutes.
- Preheat oven to 350°.
- Shape each portion of dough into 26 (1-inch) balls.
- Roll balls in remaining 3 tablespoons sugar, and place 2 inches apart on baking sheets coated with cooking spray.
- Flatten cookies with the bottom of a glass to 1/2-inch thickness.
- Bake for 12 minutes or until lightly browned.
- Remove from pans, and cool completely on wire racks.

LIGHT GINGER COOKIES
My children love to decorate gingerbread cookies but don't like to eat gingerbread. This recipe is halfway between sugar cookies and gingerbread. The girls love the taste. They are a light golden color and perfect for decorating or simply sprinkled with raw sugar before baking. A crisp cookie.

- Beat the butter, shortening, sugars, baking powder, spices and salt until light and fluffy.
- Add the egg and molasses and beat well.
- Mix about half the flour into the butter mixture.
- When well combined add the cornstarch and the remaining flour.
- Divide in half and wrap well.
- Chill for 1 hour or longer for easier rolling.
- Roll dough to 1/8" to 1/4" thick on a flour dusted work surface and cut into desired shapes with cookie cutters.
- Place on parchment lined or lightly greased cookie sheets.
- Bake the cookies in a preheated 350 degree oven for 10 to 12 minutes until lightly browned at the edges.
- Let cool for 5 minutes on cookie sheet before transferring to wire racks.

- In a large bowl, combine the butter and sugar.
- Using an electric mixer set on medium speed, beat until the mixture is fluffy and light.
- Add the egg and continue to beat on medium speed until fully incorporated, then beat in the molasses.
- To another, smaller bowl, sift together the flour, soda, salt and ground ginger.
- With the mixer set on low speed, beat the flour mixture into the butter mixture, one third at a time, beating well after each addition.
- Stir in the candied ginger and pecans.
- Turn the dough out onto a lightly floured work surface.
- Knead briefly, then divide into 2 equal portions.
- Using your palms, roll each portion into a log, 1 1/4 to 1 1/2 inches in diameter.
- Wrap each log separately in plastic wrap and chill about two hours.
- Preheat oven to 325*F (165*C) LIne two baking sheets with standard parchment paper.
- On a lightly floured surface, slice the dough logs crosswise 1/8th inch thick.
- Place the dough rounds 1 inch apart on the prepared baking sheets.
