Zucchini-Pecan-Fig Quick Bread with Brown Butter Glaze image

Pour an easy brown butter glaze over this zucchini bread packed with figs and pecans.

Number Of Ingredients 18

1/2 cup melted unsalted butter or vegetable oil, plus more melted butter, for the pan
1 1/4 cups all-purpose flour
3/4 cup granulated sugar
1 teaspoon baking powder
1 teaspoon kosher salt
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon freshly grated nutmeg
1 cup chopped dried figs
3/4 cup chopped toasted pecans
1/2 cup plain yogurt or sour cream
1 teaspoon pure vanilla extract
2 large eggs
1 teaspoon grated lemon or orange zest, optional
1 cup shredded zucchini, excess moisture squeezed out
3 tablespoons unsalted butter
1/2 cup confectioners' sugar
2 tablespoons milk

Steps:

  • For the quick bread: Preheat the oven to 350 degrees F. Lightly brush one 9-by-5-by-3-inch loaf pan or three 6-by-3-by-2-inch mini loaf pans with melted butter and set aside.
  • Combine the flour, granulated sugar, baking powder, salt, baking soda, cinnamon and nutmeg in a medium bowl. Add the figs and pecans and toss together. Set aside.
  • Whisk together the melted butter, yogurt, vanilla extract, eggs and grated zest if using in a small bowl. Stir in the shredded zucchini. Fold this mixture into the flour mixture until just incorporated.
  • Transfer the batter to the prepared loaf pan(s). Tap the bottom on a hard surface a few times and smooth the top. Bake until a toothpick inserted in the center comes out clean, 55 to 60 minutes for the regular loaf and 35 to 40 minutes for the minis. Transfer to a wire rack to cool for 30 minutes, then turn the bread out and let cool completely on the rack.
  • For the brown butter glaze: When the bread is cool, cook the butter in a small pan over low heat until brown; keep warm.
  • Put the confectioners' sugar and milk in a small bowl and whisk in the brown butter until smooth. Use immediately.
  • Pour the glaze over the bread and allow to set at room temperature, 15 to 20 minutes. Store in an airtight container for up to 1 week.

2 teaspoons thyme
9 ounces mozzarella cheese

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Add the garlic and cook for a few seconds, until fragrant. Add the zucchini and season with salt and pepper. Cover, lower the heat to medium, add cook for 6 minutes, until slightly softened. Remove the lid and cook for another 5 to 6 minutes, stirring gently from time to time, until the rounds are tender but still retain their shape, and most of the juices have evaporated.
  • While the zucchini is cooking, combine the breadcrumbs, butter, Parmesan, and thyme in a medium mixing bowl. Rub with the tips of your fingers until the mixture resembles coarse meal. (The zucchini and the crumble mixture can be prepared up to a day ahead and refrigerated in separate airtight containers).
  • Preheat the oven to 400°F Arrange the zucchini over the bottom of a large baking dish. Thinly slice the mozzarella and pat dry with paper towels. Arrange the cheese and figs over the zucchini. Sprinkle the crumble mixture over the dish and bake for 20 minutes, until heated through and golden. Serve warm or at room temperature.

1 1/2 cups granulated sugar
1 cup red-wine vinegar
1 cup port
2 sticks cinnamon, broken
20 whole cloves

Steps:

  • Rinse figs, cover with water and simmer 20 minutes. Drain, reserving the liquid. Return one cup of the cooking liquid to the pan, along with the remaining ingredients and simmer briefly, just until the sugar dissolves.
  • Return figs to the pan and simmer 10 minutes longer. Cover and allow to stand overnight in syrups.
  • Transfer to clean jars or containers and refrigerate or reheat to boiling, transfer to clean, hot, 16-ounce canning jars, process 15 minutes in a boiling water bath and seal with new lids according to manufacturer's directions.

3/4 teaspoon ground cumin
2 garlic cloves, minced
3/4 teaspoon paprika
1/2 teaspoon whole black peppercorn, crushed
12 ounces pork tenderloin, trimmed
6 ounces white pearl onions, peeled and halved
1/2 teaspoon cardamom seed, crushed
1 bay leaf
24 small zucchini, ends trimmed, about
1 tablespoon olive oil
8 fresh figs, halved

Steps:

  • In small bowl combine cumin, garlic, paprika, pepper, and 1/4 teaspoon of salt. Cut tenderloin crosswise into ¾-inch thick slices; rub the cumin mixture over surfaces of tenderloin and set aside.
  • In large nonstick skillet, combine onion, cardamom, bay leaf, 1/2 teaspoon of salt and 1/2 cup of water. Bring to boil over high heat; reduce heat. Cover and cook for 5 minutes. Add zucchini and cover and cook 3 to 4 minutes or until zucchini and onion are just tender. Transfer mixture to a bowl and keep warm. Wipe skillet clean.
  • In skillet, heat oil over medium high heat. Add tenderloin slices. Cook for 6 minutes or until pork is just slightly pink in center, turning once. Remove from skillet and keep warm. Place figs in skillet cook for about 1 minute or until just heated through set aside.
  • To serve, arrange pork on 4 plates. Serve zucchini and onion mixture with pork and figs.
