A light and yummy chilled couscous-based salad. Perfect for summer because it's no fuss! I titled it a "toss" instead of a salad because it can stand alone as a cool light vegetarian entree. It can also be served as a side dish. You could add diced cheese and or/salami if you'd like to make it heartier. Perfect for a pot luck or picnic because it won't spoil if it sits out a while and it's still delicious served at room temperature. Cook time includes chill time...it's even better if allowed to sit overnight in the refrigerator. You can easily vary the canned veggies based on what you have in your pantry.

6 cups cooked couscous, prepared with chicken broth
1 can garbanzo beans, drained and rinsed
1 can corn, drained and rinsed
1 can black-eyed peas, drained and rinsed

3 green onions, chopped
1/2 bottle Italian salad dressing

Steps:

  • Allow couscous to cool slightly.
  • Mix all ingredients together.
  • Chill and serve.
  • Amazingly delicious!

4 cups couscous
4 cups water
3/4 cup vegetable oil
6 ears fresh corn, cooked and cut off cob
1/2 cup sesame seeds, toasted
1/2 cup cilantro
2 cups spinach, chiffonade
3 cups tomatoes, chopped
2 cups avocados, cubed and tossed with a little dressing
salt and pepper
1 3/4 cups vegetable oil
1 1/2 cups rice wine vinegar
1/2 cup sesame oil
2 tablespoons garlic
1 teaspoon coriander, ground
1 teaspoon white pepper, ground
1 1/2 teaspoons salt
2 tablespoons sugar
1/4 cup soy sauce

Steps:

  • Boil water, pour over couscous, cover and let sit for 10 minutes.
  • Fluff couscous, toss with oil and cool.
  • (note: couscous can be toasted in a pan with olive oil first if desired).
  • Add remaining ingredients and mix well.
  • Toss with enough dressing to just coat.
  • Adjust seasoning.
  • Dressing:Blend all ingredients in food processor or blender.

2 cups chicken broth
1 (10 ounce) box couscous
¾ cup olive oil
¼ cup fresh lemon juice
2 tablespoons white balsamic vinegar

2 large cooked skinless, boneless chicken breast halves, cut into bite-size pieces
1 cup chopped English cucumber
½ cup chopped sun-dried tomatoes
½ cup chopped pitted kalamata olives
½ cup crumbled feta cheese
⅓ cup chopped fresh Italian parsley
salt and ground black pepper to taste

Steps:

  • Place chicken stock in a saucepan and bring to a boil over medium-high heat. Stir in couscous. Remove pan from the heat; cover, and let stand for 5 minutes. Fluff couscous with a fork. Cool for 10 minutes.
  • Meanwhile, make the dressing by combining the olive oil, lemon juice, and vinegar in the bowl of a blender or food processor; mix on low until mixture thickens. Stir in rosemary. Season to taste with salt and pepper.
  • Combine the chicken, cucumber, sun-dried tomatoes, and olives in a large bowl. Stir in the couscous, Feta cheese, and parsley. Season to taste with salt and pepper. Toss the salad with half the dressing. Taste, and add more dressing as desired, or, if making the salad in advance, add additional dressing just before serving.

¾ cup olive oil
¼ cup apple cider vinegar
1 teaspoon Dijon mustard

1 clove garlic, crushed

1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 ½ pounds cooked shrimp, peeled and deveined
2 medium tomatoes, chopped
1 cup chopped fresh parsley

Steps:

  • Pour water into a saucepan, and bring to a boil. Stir in couscous, cover, and remove from heat. Let stand for 5 minutes, then immediately fluff with a fork. (otherwise it will clump). Set aside to cool.
  • In a small bowl, whisk together the olive oil, cider vinegar, Dijon mustard, garlic, salt and pepper. Set aside.
  • In a large salad bowl, toss together the shrimp, cooled couscous, red and yellow bell peppers, tomatoes, parsley and feta cheese. Whisk vinaigrette to blend, then pour in about half of it over the couscous. Toss to coat, and add more dressing to coat thoroughly without drenching. Refrigerate at least 2 hours before serving.

1 1 1/4-pound skinless and boneless tuna steak, about 1 inch thick
Salt and freshly ground pepper to taste
1 tablespoon olive oil
2 sprigs fresh thyme, or 1 teaspoon dried
1 tablespoon olive oil
4 tablespoons finely chopped onion
1 teaspoon finely chopped garlic
1 teaspoon ground cumin
1 cup water
Salt and freshly ground pepper to taste
1 cup couscous
4 tablespoons red-wine vinegar
6 tablespoons olive oil
2 tablespoons light soy sauce
1/2 teaspoon finely chopped jalapeno pepper, or to taste
1/4 teaspoon Tabasco sauce
1 cup finely diced celery
1 1/2 cups diced, peeled and seeded tomatoes
2 teaspoons finely minced chopped garlic
1/2 cup coarsely chopped fresh basil, coriander, chervil or parsley
2 tablespoons fresh lemon juice
2 teaspoons grated orange rind
Salt and freshly ground pepper to taste

Steps:

  • Preheat broiler to high, or preheat outdoor grill.
  • To prepare tuna, put it on a plate and sprinkle both sides with salt and pepper and brush with a mixture of the oil and thyme. Cover closely with plastic wrap and let stand until ready to broil or grill.
  • If broiling, arrange steak on a rack and place under broiler, about 6 inches from heat source. Broil 4 minutes with door partly open. Turn steak and continue broiling, leaving door open, about 4 minutes more.
  • If grilling, put steak on hot grill and cover. Cook 4 minutes. Turn fish, cover grill and cook about 4 minutes more. Remove fish; let cool.
  • To prepare couscous, heat oil in a small saucepan. Add onion, garlic and cumin and cook, stirring, until vegetables are wilted. Add water, salt and pepper. Bring to a boil and add couscous, stirring. Cover closely. Remove from heat and let stand 5 minutes. Put in a bowl to cool.
  • Meanwhile, combine all ingredients for salad dressing in a large bowl. Blend well with a wire whisk. Check for seasoning.
  • Cut tuna into bite-size pieces and add to the couscous in the bowl. Pour dressing over all and toss well. Serve immediately.

1 ¼ cups whole wheat couscous
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
1 pinch cayenne pepper
3 tablespoons olive oil
1 (8 ounce) skinless, boneless chicken breast half
1 pinch kosher salt to taste
1 tablespoon olive oil, or more to taste
½ cup diced red onion
1 cup chicken broth
½ cup diced zucchini
½ cup diced green beans
½ cup diced red bell pepper
¼ cup thinly sliced green onions
½ teaspoon smoked paprika
½ teaspoon ground turmeric
2 tablespoons chopped flat-leaf (Italian) parsley, or to taste

Steps:

  • Place couscous in a heat-proof mixing bowl. Add salt, pepper, cayenne, and olive oil; stir with a spoon until all couscous is coated with oil. Level off to smooth the top and set aside.
  • Season chicken on both sides with salt.
  • Heat olive oil in a saucepan over high heat. Add chicken and sear for 2 to 3 minutes on one side. Flip and add onions. Sear chicken on second side, while sauteing onions at the same time, for 2 to 3 minutes.
  • Remove chicken to a plate and let cool for a few minutes. Cut chicken into 1/2-inch cubes and return to the saucepan.
  • Add chicken broth, zucchini, green beans, bell pepper, green onions, paprika, and turmeric to the saucepan. Place over high heat. As soon as it boils, remove from the heat and carefully dump it on top of the couscous; do not stir. Immediately wrap bowl tightly with foil and set a timer for 5 minutes.
  • When timer goes off, unwrap foil and toss in parsley. Stir to combine ingredients. Taste and adjust for salt.
  • Spoon couscous onto serving plate and garnish with feta cheese, chili flakes, and parsley and a drizzle of olive oil.
