TWINKIE BANANA CREAM PUDDING DESSERT
This a very easy recipe. Everyone loves it. Tastes cool and creamy on a warm day and doesn't heat up the kitchen!

Steps:
- Split Twinkies lengthwise and lay in 9x13 pan (should use whole box).
- Prepare instant pudding with 1 1/2 cups milk.
- Lay sliced bananas over Twinkies in pan and pour pudding over bananas.
- Prepare 2 envelopes of Dream Whip as per package directions and spread this over the top of pudding.
- Chill in refrigerator until set (about an hour or longer).

I copied this recipe down ages ago, always meaning to give it a try. I found it today in one of my piles of recipes and decided to share it. This is not a sweet bread. Supposedly, this recipe is from Liberia.

Steps:
- Combine dry ingredients in a large bowl.
- Mix together eggs, oil, and water, then add along with the mashed bananas to the dry mixture.
- Sutr just enough to moisten all ingredients, but do not overmix.
- Pour into a greased 9x13" baking pan in a preheated 350 F oven for about 45 minutes, or until a knife inserted in the center comes out clean.
- Let cool 10 minutes, then remove from pan and let cool.
- Cut into squares and serve.

- Preheat oven to 275°F. Grease and flour a 9 x 13 pan.
- In a small bowl, mix mashed bananas with the lemon juice; set aside.
- In a medium bowl, mix flour, baking soda and salt; set aside.
- In a large bowl with an electric mixer, cream 3/4 cup butter and 2 cups sugar until light and fluffy; about 3 minutes. Beat in eggs, one at a time, then stir in 2 teaspoons of vanilla.
- Beat in the flour mixture alternately with the buttermilk, starting and ending with the flour, until just combined. Stir in mashed bananas.
- Pour batter into prepared pan and bake in preheated oven for 60-75 minutes, or until toothpick inserted in center comes out clean. This could take longer than 75 minutes depending on your oven.
- Remove from oven and place directly into the freezer for 45 minutes. This will make the cake extremely moist.
- While the cake rests in the freezer, make the frosting. Beat the butter and cream cheese with an electric mixer until smooth. Add in 1 teaspoon vanilla and mix until incorporated.
- Add powdered sugar and beat on low speed until combined, then on high speed until frosting is smooth.
- Spread over cooled cake. Store leftovers in an airtight container in the refrigerator for up to 4 days.

- Using a fork, combine graham cracker crumbs and honey in a small mixing bowl. Press into the bottom of a 13 x 9 x 2 inch pan.
- In a medium bowl, whisk together the instant vanilla pudding and milk until thickened, about 90 seconds; set aside.
- In another bowl, beat together cream cheese and sugar using a mixer on low speed.
- Using a rubber spatula, fold in the pudding until blended.
- Spread pudding mixture over graham cracker crust. Arrange bananas on top of pudding mixture; sprinkle with coconut. Spread on nondairy whipped topping; sprinkle on nuts.
- Cover and chill at least two hours.

FAVORITE BANANA BREAD
I got this banana bread recipe from the Family Circle magazine in 1988, and have baked it 3-4 times a year since then. I get requests for this from my co-workers every Christmas. Makes a great gift!

- Preheat oven to 350 degrees, grease& flour 9x5x3 inch loaf pan.
- Combine flour, baking soda, baking powder& salt in medium size bowl.
- Beat together butter and sugar until light colored, then beat in eggs, one at a time.
- Stir in vanilla, then stir in flour mixture, a little at a time with the banana& milk.
- Add 2/3 cup nuts, and pour batter into pan.
- Sprinkle remaining nuts on top.
- Bake for 1 hour& 20 minutes or until done (when a toothpick inserted in center comes out clean).
- Cool bread in pan on wire rack for 10 minutes.
- Loosen around the edges and cool completely on rack.
- Wrap tightly& store at room temperature.
- TIP: Make sure the bananas are ripe, or the bread will be dry& crumbly.
- The riper the bananas, the moister the bread.
- Bread is better the next day.
- Freezes well- up to 6 months.

SUPER EASY LITE BANANA PUDDING
This is my traditional way of fixing banana pudding. When ever I take this some where I never bring home any leftovers, so I split it into two casseroles. This will make a 9x13 or 2 smaller casseroles.

- In whatever size dish you use. Put a single layer of vanilla wafers in bottom, and set aside.
- In large bowl, mix pudding mix and milk according to directions on box. Let sit for 5 minutes till set.
- Fold cool whip into pudding.
- Slice bananas into 1/4 inch slices and layer over wafers. Spoon pudding mixture over bananas.
- Top as desired. I usually lay a layer of vanilla wafers around outside of dish, but you can also crush some wafers and sprinkle over the top, or top with additional bananas and cool whip. But if you use bananas for garnish, toss with lemon juice first to avoid browning.
