Coon Hash

COON HASH

this is a southern dish loved by many. it is usually made in the fall and winter. it goes great with dry white rice and collard greens.

Time: 180 minutes

Steps:

  • boil raccoon with salt and 1 onion chopped until the raccoon is falling off the bones
  • turn off heat and let cool enough to handle
  • when cooled , remove meat from the bones
  • in a large skillet , heat oil put in coon , onion , salt and pepper
  • sprinkle in red pepper flakes
  • if coon becomes too dry , add more oil to continue frying
  • cook until coon is hashed and browned with some crispy bits

Steps:

  • Place the raccoon pieces in a large pan. Add the wine, onions, bay leaves, salt, pepper and garlic. Add enough water to cover the meat. Bring to a boil. Cover and simmer for 1 hour. After 1 hour, remove the meat and drain. Place the raccoon in a greased baking dish. Mix the barbecue sauce and paprika together and pour over the meat. Cook at 325 degrees for 50 - 60 minutes.

  • ~ 1 tbsp paprika

  • In a large bowl, combine sausage, biscuit baking mix and cheese. Form into walnut size balls and place on baking sheets.
  • Bake in preheated oven for 20 to 25 minutes, until golden brown and sausage is cooked through.
