1 tablespoon Dijon mustard
4 tablespoons sherry vinegar
1/3 cup extra-virgin olive oil
Salt and freshly ground black pepper
2 sweet red peppers, seeded, cored and slivered
1 green pepper, seeded, cored and slivered
1/2 red onion, sliced paper-thin
1 tablespoon minced scallions
1 teaspoon minced fresh chili pepper
2 smoked chicken breasts, skinned and slivered
1/4 cup fresh coriander leaves, coarsely chopped

Steps:

  • Beat the mustard and vinegar together in a salad bowl. Beat in the olive oil. Season the dressing to taste.
  • Add the peppers, onion, scallions and chili pepper and mix.
  • Add the chicken and toss all the ingredients together. Just before serving, fold in the coriander.

This delicious and tasty chicken salad is seasoned with fresh chopped cilantro, lime juice, and poultry seasoning.

2 tablespoons olive oil, or more as needed
2 pounds skinless, boneless chicken breasts, or more to taste, cut into bite-sized pieces
1 teaspoon garlic powder, plus more to taste
kosher salt and ground black pepper to taste
1 pinch poultry seasoning, or more to taste
1 cup chopped celery
1 cup red onion, chopped
¼ cup slivered almonds, or to taste
3 tablespoons mayonnaise, or to taste
2 squeezes lime juice, or to taste
1 teaspoon ground cumin
1 teaspoon chili powder
1 tablespoon chopped fresh cilantro, or more to taste

Steps:

  • Heat oil in a large skillet over medium heat and add chicken. Season with garlic powder, salt, pepper, and poultry seasoning. Cook until chicken is no longer pink inside and juices run clear, 10 to 12 minutes. Transfer cooked chicken to a large mixing bowl.
  • Add celery, red onion, and almonds to the bowl with the chicken. Toss in mayonnaise, lime juice, cumin, chili powder, and cilantro. Season with additional salt, pepper, and garlic powder. Add additional mayonnaise if salad seems too dry.
  • Cover and refrigerate for about 1 hour. Serve chilled.

Number Of Ingredients 13

• 3 lb Skinless chicken pieces
• 2 tbsp Ground coriander
• 3 Garlic cloves, chopped
• 5 Ounces plain yogurt
• 1 Chicken stock cube
• 1/2 tsp Black pepper
• 1 tsp Ground mixed spice
• 1/2 tsp Turmeric
• 1/2 tsp Chili Powder
• 4 Fluid ounces warm water
• 1 Onion, sliced
• 5 tbsp Oil
• Salt to taste

Steps:

  • Combine the garlic with the yogurt and pour over the chicken, leave to marinate over night.
  • Heat the oil in a pot and saute the onions until golden brown then remove the onion from the pot, set aside
  • Fry the coriander, mixed spice, black pepper and turmeric for about 30 seconds.
  • Add chicken and the yogurt and fry the chicken for 5 minutes over medium heat
  • Add the chili powder, stock cube, onions, water and salt to taste, then bring it to a boil, reduce the flame and simmer for about 30 minutes
