1/4 cup chopped onion
1/4 cup chopped green pepper
1 tablespoon butter
2 cups whole kernel corn
1/4 cup diced tomato
1 teaspoon salt
1/8 teaspoon pepper
Cayenne pepper to taste

Steps:

  • In a large saucepan or cast iron skillet, saute onion and green pepper in butter until tender. Stir in the corn, tomato, salt, pepper and cayenne. Cover and simmer for 5-10 minutes or until heated through, stirring occasionally. ,

Trying several corn chowders, I decided to try to come up with one with a little more pazazz. Atfer many errors, I developed this hearty corn chowder. I use Jimmy Dean or Williams brands of hot sausage to spice this soup up a bit. My husband, who's not much of a soup eater, even asks for this soup on cold fall and winter days. I usually serve it with crusty french bread.

32 ounces chicken broth
3 medium potatoes, peeled and diced
1 teaspoon red devil pepper sauce
1 lb spicy bulk sausage
1/2 cup onion, chopped
8 ounces cream cheese, softened and cubed
2 (15 ounce) cans whole kernel corn, drained
2 (15 ounce) cans creamed corn
1 cup milk
seasoning salt
pepper

Steps:

  • In a 5 qt dutch oven, put chicken broth, pepper sauce and potatoes. Boil until pototoes are fork tender.
  • While potatoes are cooking, brown sausage and onions. When all of the pink is out of the sausage add cream cheese cubes and heat until cheese is completely melted. Heat this mixture slowly and stir often so the cheese doesn't scorch.
  • When potatoes are done, add sausage mixture to potatoes and broth and mix well.
  • Add corn and milk. Stir. Add seasoned salt and pepper to taste. Heat just until it just starts to boil. Turn heat down to a slow simmer for 15 minutes.
  • Tip: This soup tends to thicken so more milk can be added, or whole kernel corn can be added without draining it.Recipe can be cut down but it does not freeze well.

Instant Pot Corn Chowder with a Spicy Kick image

Number Of Ingredients 10

4 strips bacon
½ onion (diced)
4 cloves garlic (minced)
4 cups yellow corn kernels (about 4 ears of corn)
1 potato (peeled and cut into cubes)
2-4 spicy peppers (depending on the spicy kick preference)
Salt and black pepper
3 cups chicken broth
2 cups whole milk
2 green onions (scallion)

Steps:

  • Set the instant pot to saute and cook the bacon until crisp to your liking. Set bacon aside on a paper towel lined plate. Keep about 1 Tbsp of bacon fat in the pot, remove the rest.
  • In the instant pot, add the onion and garlic, cook until lightly browned. Continue to add in the corn, potatoes and spicy peppers. Saute for about one minute to bring out the flavors. Pour in the chicken broth and season the soup with salt and pepper. Cover the instant pot and set on manual, high pressure for 10 minutes. Once it's done, let it natural release for just a few minutes so the broth doesn't spurt out the top.
  • Pour about ½ of the chowder into a blender and blend until the chowder becomes more combined (similar to a chunky smoothie consistency) but not yet pureed. Pour the mixture back into the instant pot.
  • Set the instant pot back on to saute. Continue to stir the chowder mixture while adding in the milk and cheese. Cook for another 5 minutes until the cheese has melted and the chowder has thickened.
  • Serve the corn chowder in large soup bowls topped with bacon and green onions! I love to eat with this with toasted bread to dip into the chowder!

Extra-virgin olive oil
1 onion, diced
2 garlic cloves, minced
6 sprigs fresh thyme, leaves only
1/4 cup all-purpose flour
6 cups canned vegetable stock
2 cups heavy cream
2 Idaho potatoes, peeled and diced
6 ears corn
Salt and freshly ground black pepper
1/4 cup chopped fresh parsley leaves

Steps:

  • Heat the butter and 1 tablespoon olive oil in a soup pot over medium heat. Add the onion, garlic, and thyme and cook until the vegetables are good and soft, 8 to 10 minutes. Dust the vegetables with flour and stir to coat everything well. Pour in the vegetable stock and bring to a boil. Add the cream and the potatoes, bring to a boil and boil hard for about 7 minutes, until the potatoes break down (this will help to thicken the soup and give it a good texture).
  • Cut the corn kernels off the cob and add to the soup. Season with salt and pepper and simmer until the corn is soft, about 10 to 12 minutes. Stir in the parsley and give it another little drink of olive oil. Ladle the soup into bowls and serve.

6 cups chopped yellow onions (4 large onions)
4 tablespoons (1/2 stick) unsalted butter
1/2 cup flour

1/2 teaspoon ground turmeric
12 cups chicken stock
6 cups medium-diced white boiling potatoes, unpeeled (2 pounds)
10 cups corn kernels, fresh (10 ears) or frozen (3 pounds)
2 cups half-and-half
1/2 pound sharp white cheddar cheese, grated

Steps:

  • In a large stockpot over medium-high heat, cook the bacon and olive oil until the bacon is crisp, about 5 minutes. Remove the bacon with a slotted spoon and reserve. Reduce the heat to medium, add the onions and butter to the fat, and cook for 10 minutes, until the onions are translucent.
  • Stir in the flour, salt, pepper, and turmeric and cook for 3 minutes. Add the chicken stock and potatoes, bring to a boil, and simmer uncovered for 15 minutes, until the potatoes are tender. If using fresh corn, cut the kernels off the cob and blanch them for 3 minutes in boiling salted water. Drain. (If using frozen corn you can skip this step.) Add the corn to the soup, then add the half-and-half and cheddar. Cook for 5 more minutes, until the cheese is melted. Season, to taste, with salt and pepper. Serve hot with a garnish of bacon.

2 slices bacon, cut into 1/2 inch pieces
1 medium yellow onion, diced
2 -3 chipotle peppers (in adobo sauce, finely diced)
4 cups low sodium chicken broth
1 1/2 cups heavy whipping cream
4 ounces green chilies, diced
3 tablespoons cornmeal
salt

Steps:

  • Slice the kernels off the corn cob.
  • Cut bacon into 1 inch pieces and cook in large pot over medium heat until the fat begins to render, about 2 minutes.
  • Add the diced onion to the pot and cook it until the onion is translucent and the bacon is cooked but still chewy, about 5 minutes.
  • Throw in the corn kernels and stir.
  • Mince chipotle peppers and stir them into the corn. Continue cooking for about 3 minutes.
  • Pour in the low sodium chicken broth followed by a splash of heavy cream.
  • Stir to combine.
  • Add the green chilies.
  • Let the soup simmer for 25 to 30 minutes.
  • Mix the cornmeal with 1/4 cup water and stir together.
  • Stir the mixture into the soup and simmer for another 10 minutes, or until thickened.
  • Taste and add salt if needed.
