  1. butter
  2. onion
  3. garlic cloves
  4. fresh corn kernels
  5. jalapenos
  6. salt
  7. flour
  8. yellow cornmeal
  9. sugar
  10. baking powder
  11. baking soda
  12. chili powder
  13. buttermilk
  14. eggs
  15. egg white
  16. fresh lime juice
  17. honey


  1. preheat oven to 400
  2. melt 1 tablespoon butter in a large nonstick skillet over medium high heat
  3. add onion and garlic to pan
  4. cook 2 minutes stirring occasionally
  5. add corn , jalapeno and 1 / 4 teaspoon salt
  6. cook 2 minutes
  7. remove from heat
  8. add 2 tablespoons butter , tossing to melt
  9. combine flour , remaining 3 / 4 teasopon salt , cornmeal , and next 4 ingredients in a large bowl
  10. combine buttermilk , eggs and egg white in a large bowl
  11. add onion mixture to buttermilk mixture
  12. add buttermilk mixture to flour mixture , stirring just until moist
  13. spoon batter into 15 muffin cups coated with cooking spray
  14. bake for 20 minutes or until lightly browned
  15. cool in pan 5 minutes on a wire rack
  16. remove from pan
  17. cool completely
  18. combine remaining 3 tablespoons butter , juice and honey in a small bowl
  19. stir until well blended
  20. serve with muffins
