Quick Corn Salad image

This sensational salad is a delight to serve because you can make it ahead and it's an easy way to put garden bounty to good use. With colorful ingredients like corn, tomato and green pepper, it's also pretty in the bowl and on your plate. -Rita Reifenstein, Evans City, Pennsylvania

2 cups fresh or frozen sweet corn
3/4 cup chopped tomato
1/2 cup chopped green pepper
1/2 cup chopped celery
1/4 cup chopped onion
1/4 cup ranch salad dressing

Steps:

  • In a large salad bowl, combine vegetables; stir in dressing. Cover and refrigerate until serving.

Take advantage of summer's seasonal bounty with Ina Garten's easy Fresh Corn Salad recipe from Barefoot Contessa on Food Network, made with fresh basil.

Number Of Ingredients 7

5 ears of corn, shucked
1/2 cup small-diced red onion (1 small onion)
3 tablespoons cider vinegar
3 tablespoons good olive oil
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup julienned fresh basil leaves

Steps:

  • In a large pot of boiling salted water, cook the corn for 3 minutes until the starchiness is just gone. Drain and immerse it in ice water to stop the cooking and to set the color. When the corn is cool, cut the kernels off the cob, cutting close to the cob.
  • Toss the kernels in a large bowl with the red onions, vinegar, olive oil, salt, and pepper. Just before serving, toss in the fresh basil. Taste for seasonings and serve cold or at room temperature.

I created this fresh corn salad to serve with our lobster dinners that we have about once a month (seafood Sunday). I wanted to do something outside of the traditional sides like corn on the cob and potato. It's now a family favorite! Goes well with a grilled steak or tuna steak as well. The combination of sweet with the corn and salty with the feta is an unexpected delight!

3 ears sweet corn
1 ½ pints cherry tomatoes, halved lengthwise
1 bunch green onions, diced
2 tablespoons minced fresh cilantro
2 tablespoons olive oil
2 tablespoons aged white wine vinegar
salt and ground black pepper to taste
1 (4 ounce) package feta cheese, cubed

Steps:

  • Bring a large pot of water to a boil. Add corn and cook for 10 minutes. Drain and cool under running water so it's easier to handle.
  • Cut corn off the cobs into a large bowl. Add tomatoes, green onions, cilantro, olive oil, vinegar, salt, and pepper and mix together. Add feta cheese just before serving.

6 ears fresh corn, kernels from
1 tomatoes, seeded and diced
1 firm but ripe avocado, diced
2 scallions, white and green parts, thinly sliced
1/4 cup chopped fresh cilantro
2 tablespoons fresh lime juice
1/2 teaspoon finely minced garlic
3 tablespoons olive oil
salt and pepper

Steps:

  • In a large serving bowl, remove corn kernels. Add the scallions, tomatoes, avocados and cilantro.
  • To make the dressing, in a small bowl, whisk together Lime juice garlic and olive oil. Combine the dressing with the salad and gently mix. Garnish with chopped cilantro.
