1 cup fresh or frozen corn
1 tablespoon olive oil
2 cups cherry tomatoes, halved
1/4 teaspoon salt
1/4 teaspoon pepper
3 fresh basil leaves, thinly sliced

Steps:

  • In a large skillet, saute corn in oil until crisp-tender. Stir in the tomatoes, salt and pepper; cook 1 minute longer. Remove from the heat; sprinkle with basil.

4 ears of corn, husked
2 tablespoons unsalted butter
2 cups assorted cherry or grape tomatoes, halved
Kosher salt and freshly ground pepper
2 tablespoons chopped fresh chives
1 tablespoon chopped fresh basil

Steps:

  • Cut the corn kernels off the cobs and transfer to a medium bowl. Using the back of the knife, scrape the cobs to release the corn milk into the bowl.
  • Melt 1 tablespoon butter in a large skillet over medium-high heat. Add the tomatoes and cook until softened, about 3 minutes. Stir in the corn and corn milk, 1 tablespoon water, 3/4 teaspoon salt and a few grinds of pepper and cook until the kernels are tender,3 to 5 minutes. Remove from the heat and add the chives, basil and the remaining 1 tablespoon butter; toss to combine.

2 1/2 tablespoons olive oil
1 lb medium shrimp, peeled and deveined
2 garlic cloves, minced
1/2 cup onion, chopped
1 1/2 cups fresh corn kernels
2 cups cherry tomatoes
1/2 cup fresh basil, chopped
1/4 teaspoon salt
1/4 teaspoon black pepper, coarsely ground

Steps:

  • Heat 2 tbs of the oil in a medium nonstick skillet over medium-high heat.
  • Add shrimp and cook until lightly golden, about 2 minutes on each side.
  • Transfer shrimp to plate.
  • Add the remaining 1/2 tbs oil, the garlic, and onion to the skillet.
  • Saute until the onion starts to soften, about 1 minute.
  • Stir in the corn and cook 1 minute.
  • Add the cherry tomatoes and cook 1 minute longer.
  • Add the reserved shrimp and continue to saute until they are opaque inside, 1-2 minutes.
  • Remove the heat and stir in the basil, salt, and pepper.

Mined this off the web and made my own version of it for dinner. I had some frozen mahi mahi from Tader Joe's and it was so perfect with the tomato basil sauce! Do not sub the sauce--or if you do, consider adding some of the below ingredients, like fish sauce. The sauce is a little sweet and goes especially well with seafood. This is also really, really easy--good weeknight meal.

16 ounces mahi mahi fillets
2 1/2 cups tomatoes, diced
1/2 cup fresh basil leaf, chopped
1/3 cup red shallot, sliced (I didn't have any shallots, so just used a little more onion)
1/4 cup yellow onion, diced
1/4 cup garlic, chopped
2/3 cup chicken stock
2 tablespoons tomato paste
2 tablespoons fish sauce or 2 tablespoons soy sauce
1 tablespoon vinegar or 1 tablespoon lemon juice
1 tablespoon sugar

Steps:

  • Coat pan with cooking oil and pan fry Mahi Mahi fillets until golden brown.
  • To prepare sauce, saute garlic and shallots in pan.
  • Add onion, tomato paste and chopped tomatoes, fish sauce, vinegar or lemon juice and sugar.
  • Stir in chicken stock and simmer until sauce thickens.
  • Remove from heat and add basil.
  • To Serve, top Mahi Mahi fillets with generous helping of tomato basil sauce.
  • (Vegetarian option: Substitute Mahi Mahi fillets with deep fried tofu and use vegetable stock in the sauce.) You can also substitute any mild white flesh fish instead of Mahi if you can't get it in your area.
  • Garnish with a pretty whole basil leaf or bunch of leaves.
