MEXICAN MEATLOAF II
I made this for my wife she is an avid Mexican restaurant visitor. The amount of spice you want in this recipe depends on the RO*TEL® and the salsa. I recommend if you do not like it hot get the mild RO*TEL® and a medium salsa.

CORNBREAD MEATLOAF
Put your leftover cornbread to good use! From a neighbor when I lived down South. UPDATE (4/11/08): Change from original posting: I've always had to cook this about an hour, but I thought that was just me, so I when I originally posted this I left the cooking time at 3/4 hour, which was how I received it. However, since all the reviewers have noted that they, too, have to cook it longer, I have now changed the cooking time to 1 hour.

MEATLOAF CASSEROLE
I got this recipe from my boyfriend's mom and modified it just a little. It's so simple but I love it. The meatloaf mix is my twist on it. The market next door to my house has an amazing pre-made meatloaf mix and I though it would be a great twist on a dish I already knew I loved. You can us ground beef seasoned with meatloaf seasoning mix and I'm sure that it would be just fine.
