- Whisk 3/4 cup flour, 1 teaspoon kosher salt and 1/4 teaspoon each baking powder and pepper in a bowl. Whisk 1/2 cup milk and 2 eggs in another bowl; stir in the flour mixture. Add 2 cups corn, 1/4 cup each chopped cilantro and scallions, 1 chopped jalapeno and the zest and juice of 1/2 lime. Cook 1/4 cupfuls in a skillet with olive oil, 2 minutes per side. Serve with Greek yogurt.
CAST-IRON OYSTER AND CORNBREAD STUFFING
Growing up in the mid-Atlantic region, my family has always included oysters as a big part of our dining table. This recipe is the perfect way to incorporate these typically uncooked gems into the traditional Thanksgiving spread and pay homage to the early Black oyster farmers of America. The briny and buttery flavor combined with the sweet cornbread is sure to be the talk of the table!

- Preheat the oven to 375 degrees F.
- Melt 10 tablespoons of the butter in a 10-inch cast-iron skillet over medium heat. Add the ham and cook, infusing the butter with the ham flavor, about 5 minutes. Remove the ham to a large mixing bowl with the cornbread, leaving the butter in the skillet.
- Add the garlic, celery, leeks, onions, sage and thyme to the skillet with the flavored butter. Sweat the vegetable mixture over medium heat, stirring as needed, until the vegetables are softened, 5 to 8 minutes. Add the wine and continue to cook over medium heat until the wine is reduced by half, 3 to 5 minutes. Increase the heat to medium-high, then add the oyster liquor and chicken stock. Bring to a boil, then remove from the heat and let cool at room temperature for 10 to 15 minutes.
- Add the oysters to the mixing bowl with the cornbread and ham. Pour the cooled vegetables into the mixing bowl and lightly mix together. Season with salt and pepper, then fold in the parsley and eggs (see Cook's Note).
- Grease the inside of the same skillet with the remaining 2 tablespoons butter. Transfer the cornbread mixture to the skillet, making sure it's evenly distributed throughout the skillet. Cover with aluminum foil and bake for 35 minutes. Remove the foil and bake until the top is nice and browned, 10 to 15 minutes. Allow to cool before serving, about 10 minutes.
FRESH SWEET CORN FRITTERS
Unbelievably light, these fritters are best with fresh sweet corn. Great for breakfast and with ham or ribs. Serve with maple syrup. Easy to make too! My husband loves these and anticipates corn season.

- Whisk flour and baking powder into a bowl and mix in corn kernels. Whisk egg yolks with cream in a small bowl and stir into the corn mixture; season with salt and black pepper. Beat egg whites with an electric mixer until fluffy and stiff peaks form in a separate bowl. Gently fold egg whites into the batter, retaining as much volume as possible.
- Pour vegetable oil into a deep heavy skillet to a depth of 3 inches. Heat to 375 degrees F (190 degrees C).
- Drop fritters into the hot oil, 2 to 3 tablespoons at a time, and cook until golden brown, 2 to 3 minutes per side. Drain fritters on paper towels and serve drizzled with cane syrup.

- Heat oil in a heavy pot or deep fryer to 365 degrees F (185 degrees C).
- In a medium bowl, combine flour, baking powder, salt and sugar. Beat together egg, milk, and melted shortening; stir into flour mixture. Mix in the corn kernels.
- Drop fritter batter by spoonfuls into the hot oil, and fry until golden. Drain on paper towels.

CORN FRITTER CASSEROLE
This savory corn casserole is a cross between a corn pudding and corn bread. You can use 1-1/2 cups frozen cooked corn in place of the corn niblets, In the summer season I like to use any leftover fresh corn that I remove from the cob in this dish, I really don't bother measuring how much corn I use, so even around 2 cups niblets would be fine also! No need to add in any salt as the packaged muffin mix already has salt in it. Since my family likes extreme spicy flavor so I most always add in the jalapeno pepper, but that is optional.

- Set oven to 375 degrees.
- Butter an 11 x 7-inch baking dish.
- In a large bowl combine the first 9 ingredients; mix well to combine (you can omit the jalapeno pepper).
- Add in the corn muffin mix; mix until well combined, then season with black pepper.
- Transfer to prepared baking dish.
- Sprinkle with grated Parmesan cheese to taste.
- Bake for about 40-50 minutes, or until a wooden pick inserted in the center comes out clean.

- For Fritters: In a large bowl, stir together the sugar and melted butter.
- Sift together the dry ingredients.
- Add the milk and beaten eggs to the sugar mix and then slowly introduce the dry ingredients.
- Add the drained corn.
- Mix until moistened.
- In a non-stick fry pan on medium high heat, add just enough vegetable oil to coat bottom of fry pan.
- Drop a serving size spoon full of corn fritter mix in fry pan.
- Do not let Corn fritter patties touch one another while frying.
- Cook on each side until lightly golden.
- When done place on paper towel to drain.
- You may need to add more oil while frying all of the corn fritters.
- When fritters have been completed let cool on paper towels.
- Casserole: In fry pan add 2 Tbs.
- of butter, place onions and bell pepper in fry pan.
- Sautéé on medium low heat until onions are transparent.
- Remove fry pan from heat and set aside.
- Place chicken bouillon cubes in 1+1/3 C.
- of water and dissolve.
- In large bowl crumble corn fritters, add sauteed onions and bell peppers, add 3 Tbs.
- melted butter.
- Pour dissolved chicken bouillon and water mixture over corn and sauteed vegetables and mix well.
- Place mixture in well oiled 8"x 8" baking pan and cover with foil.
- Place in a preheated oven at 350 degrees for 20- 25 minutes.
- Remove foil and place back in oven for 10- 15 minutes.
STUFFED CORN FRITTERS (SORULLOS DE MAíZ)
This is one of grandma's recipes. It has some calories but is worth the 2 hour workout after eating them! Dip them in mayo-ketchup sauce seasoned with s&p.

- In large bowl mix flour and milk until flour appers to be thick but smooth. You might need more or less milk, depending on the texture yo prefer.
- Flour/milk mix needs to be thick enough so that you can stuff with meat.
- Add remaining ingredients.
- For meat:.
- In hot pan, add sofito and tomato sauce. Add meat and season to taste with adobo.
- Using your hand or a fkat surface, use sufficient amount of mixture to cover the palm of your hand.
- Add about 3tbs of ground beaf.
- Add another layer of flour mixture.
- Fry with canola oil, on medium heat, for 10-15minutes.
