2 lemons, halved
2 medium onions, halved
4 garlic cloves, smashed with the flat side of a large knife blade
Coarse salt
Spice Bundle for One-Pot Shrimp Boil
3 pounds medium red potatoes, scrubbed
8 ears fresh corn, shucked and broken in half
3 pounds unshelled large shrimp, tail on
Spicy Butter
Hot sauce

Steps:

  • Bring 5 quarts of water to a boil in a 10- to 12-quart pot. Squeeze lemon juice into water, then add the halves. Add onions, garlic, salt, and spice bundle. Reduce heat to a simmer; cover, and cook 10 minutes.
  • Add potatoes to pot; return liquid to a boil. Reduce heat; simmer, covered, until potatoes are almost tender, 15 to 20 minutes. Add corn; continue cooking 5 minutes more.
  • Remove from heat. Stir in shrimp, submerging them completely. Cover, and let stand until shrimp are cooked through, about 3 minutes. Ladle 2 cups of broth into a glass measuring cup; drain the rest in a large colander, discarding liquid.
  • Make spicy butter: In a small bowl, stir together melted butter and hot sauce to taste. Divide butter among small dishes or ramekins.
  • Divide reserved broth among small bowls for dipping. Transfer shrimp and vegetables to a large platter, and serve with spicy butter, if desired.

20 fingerling potatoes, cut lengthwise
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 pound large shrimp, peeled and deveined, cut into 1/2-inch pieces
1 tablespoon crab boil seasoning (recommended: Old Bay)
2 tablespoons butter
1 tablespoon chopped fresh parsley, plus more for garnish
Juice 1 lemon
1 (8-ounce) can corn, drained

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large bowl, combine the potatoes, olive oil, salt and pepper, and mix well with your hands. On a roasting tray, spread out the potatoes, cut side up, and roast in the oven until golden, about 30 minutes. Set aside and let cool.
  • In a large bowl, season the shrimp with the crab boil seasoning. Melt the butter in a frying pan over medium heat and saute until cooked through, about 5 minutes. Add the parsley, lemon juice, and corn. Cook for 2 to 3 minutes. Put the potatoes on a platter, cut side up. Divide the shrimp mixture on top of each potato. Sprinkle with additional chopped parsley.

1 pound kielbasa
16 tbsp unsaltedbutter

Steps:

  • In a largepot, bring water, Old Bay seasoning, and salt to a boil over high heat. Addcorn, reduce heat to medium-high so that water is at a low boil, and cook for 4minutes.
  • Add potatoesand kielbasa and cook until potatoes are almost tender when pierced with thetip of a small knife, about 5 minutes. Add butter and garlic. Increase heat tohigh until boiling, then reduce heat so that mixture bubbles gently. Cook for 15 minutes more.

1 egg beaten

1 cup all-purpose flour
1 cup canola oil, for frying

Steps:

  • Lemon aioli or Thousand Island dressing, for serving
  • Peel and grate the potatoes into a large bowl. Add all the other ingredients, except the flour and oil, and combine well. Cook's Note: be careful when you add the blackening spice, if you like more or less, adjust accordingly. Refrigerate for 15 minutes for the flavors to meld.
  • Remove from refrigerator and slowly add the flour, mixing well.

Steps:

  • Pat the shrimp very dry and season with salt and pepper. In a large (12-inch) skillet, heat the olive oil over medium-high. Add the shrimp and cook until pink and lightly golden in spots, 1 to 2 minutes per side. Use a slotted spoon to transfer the shrimp to a plate.
  • Add the tomatoes to the skillet, season with salt and pepper, and cook, stirring just once or twice, until they start to blister in spots, 3 to 4 minutes. 3 cups frozen corn kernels (I've tried fresh as well and frozen works better)
salt
1 teaspoon sugar or 1 teaspoon Splenda sugar substitute
3 large egg whites
1/4 cup all-purpose flour
4 teaspoons canola oil

Steps:

  • Place two non-stick baking sheets in the oven and preheat to 450°F.
  • Cook the corn in a medium saucepan with a cup of boiling water 'until tender, about 2 mintes. Drain the corn in a colander and let cool. Press the corn lightly to squeeze out excess water. No wringing.
  • Puree 1 cup of the corn kernels in a food processor. Add salt to taste, sugar and egg whites and process until just mixed. Transfer the mixture to a bowl and stir in the flour, then the remaining corn kernels.
  • Brush 2 teaspoons of oil on the now hot baking sheets. Spoon small mounds of the latke mixture on the sheets forming 2 to 2 ½ inch pancakes. The sheet should sizzle a bit when the batter hits it. Leave one inch between each latke.
  • Bake the latkes in the oven until golden brown, 6 to 8 minutes per side,turning once with a spatula. (When you turn the latkes, try to flip them onto spots on the baking sheet that still have oil.).
