8 ounces cream cheese
4 ounces canned green chiles, chopped
1/2 small yellow onion, chopped very fine
1/2 teaspoon garlic powder
1/2 teaspoon old bay or cajun/creole seasoning
1/4 teaspoon salt
1/8 teaspoon pepper
1 teaspoon white sugar
1/2 cup shredded cheddar or colby jack cheese
additional shredded cheese for sprinkling

Steps:

  • Preheat oven to 300 degrees.
  • In a large microwave safe bowl, add corn, cream cheese and green chiles. Cook in microwave for 1-2 minutes, until cream cheese is melted.
  • Stir, adding in onion, garlic powder, seasoning, salt, pepper, sugar and cheese, and stirring thoroughly.
  • Spray a 9x9'' baking pan with cooking oil, then add corn and cream cheese mixture to pan. Sprinkle with additional cheese to taste.
  • Bake for one hour, serve.

16 oz american cheese
1 teaspoon salt
15 oz diced tomato, strained
8 oz diced green chiles, strained
1 bunch scallion, sliced
1 bag corn chips, for serving

Steps:

  • Heat the vegetable oil in a large skillet over medium heat. Add the onion and bell pepper and cook for 2 minutes, until starting to soften. Add the ground beef and chili seasoning. Cook until the beef is cooked through, about 5 minutes. Remove the pan from the heat.
  • In a small saucepan, whisk together the milk and heavy cream. Bring to a boil, then remove from the heat.

Corn on the Cob
12 ears fresh corn, unshucked
1/2 pound (2 sticks) unsalted butter, room temperature
4 tablespoons lime juice
1 tablespoon chopped tarragon
Salt and freshly ground black pepper
1/2 pound queso fresco, finely grated
Spice mixture (recipe below)
Spice Mixture
2 tablespoons cayenne pepper
1/4 cup chili powder
2 teaspoons sweet paprika
1 tablespoon garlic powder
1/4 teaspoon ground cinnamon

Steps:

  • Soak the corn in cold water for 1 hour. Prepare the grill. Put the soaked cobs on the hot grill and cook for 25 to 30 minutes, turning frequently.
  • While the corn is grilling, make the lime butter. In a small bowl, add the butter, lime juice, tarragon and salt and pepper, to taste. Mix well and spread onto a large plate. Take the corn off the grill and carefully peel back the husks (they will be hot). Remove the corn silk and tie the husks in a knot so you can hold onto it like a handle. Roll the corn in the butter. Top with a good amount of the queso fresco and sprinkle with the spice mixture. Serve immediately.
  • For the spice mixture, combine all ingredients.
