This one-dish skillet supper is a big hit with children. We've added green beans and other vegetables to it and ti always turns out. To speed up prep, use chopped green pepper and onion.

1 can (10-3/4 ounces) condensed tomato soup, undiluted
1/4 cup salsa
2 tablespoons ketchup
1 tablespoon steak sauce, optional
1 package (8-1/2 ounces) cornbread/muffin mix
Minced fresh parsley, optional

Steps:

  • In a 10-in. ovenproof skillet, cook the beef, onion and green pepper over medium heat until meat is no longer pink; drain. Stir in the soup, salsa, ketchup and steak sauce if desired. Meanwhile, prepare cornbread batter according to package directions; let stand for 2 minutes. , Spoon over beef mixture. Bake at 400° for 15 minutes or until lightly browned. Sprinkle with parsley if desired.

  • Sift together cornmeal, whole wheat flour, baking powder, soda and cinnamon. Stir flour mixture into banana mixture until blended. Fold in walnuts and sliced bananas. Pour into prepared pan.
  • Bake in preheated oven for 40 to 50 minutes, or until brown on top.

I've made it with almond, rice, soy, and regular milk and they are all very similar to identical in flavor and consistency.

1/2 cup bell pepper

1 pkg cornbread mix or homemade cornbread recipe

Steps:

  • Preheat oven to 350 degrees. Cook hamburger meat, green pepper and onion until done, drain. Add tomato sauce and, using can, add 1 cup water. Add corn. Add Worcestershire sauce and chili powder to taste. Cover and simmer for 15 minutes. Pour into 13x9 pan. Make cornbread (using prepared mix OR homemade cornbread) and spread on top of mixture. Bake until cornbread is done.

2/3 cup milk
2 eggs
1 (16 oz) can cream style corn
1 large onion, chopped
1/4 cup chopped jalapeño peppers, without the seeds
1 1/2 to 2 cups shredded sharp cheese
1/4 pound crumbled, cooked bacon
1/2 pound turkey/pork sausage, cooked, drained
1/2 pound ground beef, cooked, drained
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
sour cream and chives for garnish

Steps:

  • Preheat oven to 425°.
  • Coat with cooking spray a 9" skillet pan.
  • Brown hamburger and sausage on medium high and drain.
  • Sauté onions in meat, add peppers and bacon; set aside.
  • In a mixing bowl combine jiffy muffin mix, eggs, milk, creamed corn, and garlic and chili powder.
  • Stir to combine; do not over mix.
  • Pour half of batter into prepared skillet.

Steps:

  • Position oven rack in the center of the oven ad preheat the oven to 400F degrees.
  • Lightly coat a 9-inch pie pan with nonstick cooking spray and set the pan aside.
  • In a large mixing bowl, beat the bananas with an electric mixer on low speed until they are smooth, about 1 minute.
  • Stop the mixer and add the biscuit mix, eggs, sweetened condensed milk, milk, butter, and vanilla.
  • Beat on low speed until the mixture is well blended, about 1 minute more.

The meat filling is a harmonious mix of beef, raisins, and olives that will make your tongue tingle when you take your first bite. And don't be surprised when you've eaten more of the pie than you had planned.

Substitute sharp Cheddar for the Asiago if you prefer, and try an 8-inch square pan instead of a pie plate. Good cold or warm.
