CORNED BEEF PASTIES

Corned Beef Pasties image

This recipe was given to me by my Aunt, Carol Cron. My Great Grandfather Tretheway loved meat pies, and this recipe has been with us forever. You can use round steak if you wish. You may also make 1 large pie rather than 5 pasties.

CORNED BEEF PASTIES

Corned Beef Pasties image

Flakey, golden pastry with a smooth but flavour full filling and so easy to make!

Provided by charl91

Time 40m

Yield Makes Pasties

Number Of Ingredients 8

- 2 packs ready to roll puff pastry
- 1 can corned beef
- 2 large (3 medium) potatoes
- 2 tbsp butter
- salt and pepper
- 1 beaten egg
- Greaseproof paper
- Flat baking tray

Steps:

  • Peel and cut up potatoes and boil until soft.
  • Finely dice them and finely dice the corned beef.
  • Heat the butter in a frying pan until melted and add the corned beef and potato. Warm through for 5-10 mins and then mash up. (Roughly. You do not need it completely smooth! Can leave it as a chunky as preferred)
  • Add salt and pepper and leave to cool.
  • Preheat the oven to 200degrees.
  • Roll out the pastry to approx 2mm thickness.
  • Cut around a small side plate or saucer (approx 6").
  • Fill one half of the circle with the mixture leaving a margin around the edge.
  • With a pastry brush paint egg around the margin and close the pasty by folding the other half of the circle over.
  • Seal shut by crimping (pushing down with your finger tips) all the way around the edges.
  • Place the finished pasty on a lined baking tray and brush the top with more egg.
  • NB: You do not need to prick holes.
  • I have been told you can't re-roll puff pastry, but I can't see waste, so I did and it all turned out fine! So, repeat as many times as you can and then scrunch all your leftovers together, re-roll and cut out as many more as you can! I managed 10, depending on the size of your cut outs you may get more or less.
  • Bake until golden brown (approx 20 mins) and then leave to cool on a wire rack.
  • These are just as yummy cold the next day as they are warm, fresh from the oven!

BEEF & POTATO HAND PIES (CORNISH PASTIES)

Beef & Potato Hand Pies (Cornish Pasties) image

Simple beef and potato hand pies (aka: classic Cornish Pasties) made with leftover roast and healthier store bought pie crust!

Provided by Dena Norton

Categories     lunch

Time 40m

Number Of Ingredients 6

3 cups each: cooked beef roast meat and potatoes
1/2 cup juices from cooked roast (stirred into meat and potato mixture)
Optional: cooked onions (carrots, English peas, or other veggies from your roast)
Dough for 2 pie crusts (if you're short on time, Trader Joe's has a frozen pie crust made with clean ingredients!)
1 egg (beaten)
sea salt and pepper

Steps:

  • Preheat oven to 400 degrees and line two baking sheets with parchment.
  • Roll out pie crusts and use a 8-9" tart pan or other pan, inverted, to cut the dough into 4 large circles. You may have to reform and roll the dough between cuttings to get all four circles. Lay 2 dough circles on each parchment lined baking sheet.
  • Pile about 1 1/2 cups of the meat and potato mixture (with juices) onto one half of each dough circle. Spread evenly over that half of the dough circle, leaving about 1/2" rim around the edge for crimping. Sprinkle some sea salt and pepper over the meat and potato mixture.
  • Use a pastry brush to brush the 1/2" rim of pastry with some of the beaten egg - this will serve as "glue" to seal the pastry edges.
  • Gently fold the "blank" side of each dough circle over the meat and potato filling side, matching the edges of the pastry to create a half-circle shaped hand pie. Use your finger to press and seal the edges of the pastry together, fluting them for decoration if desired.
  • Once each hand pie is formed, use a very sharp knife to lightly score the top of each pie.
  • Use a pastry brush to cover the surface of each hand pie with beaten egg.
  • Bake for 25-30 minutes or until crusts are golden and firm to the touch.

CORNED BEEF & POTATO PIE

Corned Beef & Potato Pie image

This recipe for Corned Beef & Potato Pie is very poignant, as it was my late father's favourite pie. Mum used to make it for him regularly and he always enjoyed it with homemade chips and baked beans. This pie recipe is simplicity itself, and it only has three main ingredients in it, apart from the pastry, that's corned beef, potatoes and onions. I made this with my own shortcrust pastry recipe last time, but puff pastry also works well, although my dad preferred a good buttery shortcrust pastry for pies and pasties, as do I. You can make one big pie with this recipe, or, you could make individual pasties if you and your family (or friends) are going out for a picnic, as they are easier to manage.

Provided by Karen Burns-Booth

Categories     Pies

Time 50m

Number Of Ingredients 6

500g home-made shortcrust pastry or shop-bought ready-made pastry
1 x 340g tin of corned beef, cut into small cubes
2 to 3 potatoes, peeled, diced and boiled until soft
1 large onion, fried in a little rapeseed oil or butter
1 egg, beaten for the glaze
Salt and pepper to taste

Steps:

  • Pre-heat oven to 200C/400F/Gas mark 6. Grease and/or line a 10"/23cm pie plate or a large baking sheet for pasties. Mash the potatoes with salt and pepper and then add the corned beef; mash them together and then add the fried onions. Roll out the pastry and line the pie plate with half the pastry, trim off the edges and save the excess pastry for decorations. Spoon the corned beef filling into the middle of the pastry, leaving about 1"/2.5cm border around the edge. Roll out the remaining pastry and cover the filling with the pastry, sealing around the edges with your thumb, or with a knife/fork. (You can brush some beaten egg on the border before sealing) Trim the edges and brush the beaten egg all over the pie crust, make two a cuts for air holes in the top and decorate with excess pastry if desired. Bake for 25 to 30 minutes, or until the crust is golden brown and crisp; serve warm or cold with vegetables, salad and assorted pickles and sauces. Shortcrust Pastry Recipe: 340g SR flour (12 ozs) 160g butter (6 ozs) cold water (to mix, about 30ml) pinch of salt Basic Shortcrust Pastry - my mum's recipe for shortcrust pastry which uses SR flour and not plain flour for a lovely light texture Mix flour and salt in basin, rub in the butter until it resembles fine breadcrumbs. Using a knife to cut and stir, mix with cold water to form a stiff dough. Do not over mix, light of hand is best. Allow pastry dough to chill and "relax" for 30 minutes, in a fridge or a cool place, cover the bowl or put the pastry in some cling film. Turn dough on to a floured surface and knead lightly. Roll out and use as required.

CORNED BEEF AND POTATO PIE

My Nana's recipe for a deep filled pie

Provided by nataliehanif

Time 1h20m

Steps:

  • Grease 20cm by 20cm pie tin and preheat the oven to 180°C. Sift the flour into a bowl, add the salt, add the butter and lard, cut up and rub into the flour until it resembles breadcrumbs. Add very cold water, bit by bit, mixing with a knife, then bring it together with your hands till the pastry forms a ball, try not to add too much water, just enough. Cover in cling film and chill.
  • Peel and chop the potatoes, put them in a large pan of water, add the vegetable stock cube and boil until tender, for approximately 20 minutes. Drain the potatoes and mash, add the knob of butter and plenty of salt and pepper, and the crumbled oxo cube and mix it all together.
  • Saute the onions in the knob of butter until soft and then stir into the mashed potato. Chop the corned beef into small squares and stir it into the potato mix with a fork till all combined well. Take the pastry from the fridge and let it rest for five minutes before rolling it out. Roll out just over half of the pastry on a floured surface and line the bottom of the tin with it. (Roll out the remaining pastry for the top of the pie and leave to one side).
  • Fill the pie with the potato and corned beef mixture. Wet the edge of the pie dish, lay on the lid, and with a sharp knife trim the pastry from around the pie. Knock up the sides of the pastry, press around the edge with a fork and crimp the edge of the pie with your fingers.
  • Make slits in the top of the pie for the steam to escape. Make some pastry leaves with the spare pastry and decorate the pie. Brush the top of the pie with milk. Place the pie in the middle of the oven for about 40 minutes, but check after 30 minutes.

HAIRY BIKERS' CORNISH PASTY RECIPE

Hairy Bikers' Cornish pasty recipe image

This Hairy Bikers' Cornish pasty is made with beef, onions, swede, and potatoes. It's a proper authentic pasty recipe for true pasty lovers.

Provided by Hairy Bikers

Categories     Lunch, Packed lunch

Time 1h10m

Yield Serves: 6

Number Of Ingredients 6

450g plain flour
2tsp baking powder
1tsp salt
125g unsalted butter
2 egg yolks
125ml cold water

Steps:

  • To make the shortcrust pastry: Place the flour, baking powder, salt, butter, and egg yolks into a food processor and blitz until the mixture forms crumbs. Slowly add the water until a ball of pastry miraculously appears - you may not need all the water. Wrap the pastry in clingfilm and leave it to chill in the fridge for an hour.
  • To prepare the Cornish pasty filling: Preheat the oven to 180°C (gas mark 4). Roll out the pastry to the thickness you like, but be careful not to tear it. Using a dinner plate as a template, cut out 6 discs of pastry.
  • Season the vegetables separately with salt and black pepper. Put the beef into a bowl and mix with the flour and some salt and pepper. Place some potatoes, swede, onions, and beef on one half of the circle, leaving a gap around the edge. Dot with butter. Brush around the perimeter of the pastry circle with the beaten egg, then fold the pastry over the vegetables and meat and seal firmly. Starting at one side, crimp the edges over to form a sealed D-shaped pasty. Brush the whole pasty with a beaten egg, then make a steam hole in the center with a sharp knife.
  • Repeat to make the other pasties. Put the pasties in the oven and cook for 50 mins until they are crispy and golden and the filling is cooked through. Leave them to rest for 5-10 mins before eating.

  • Start by preparing the crust dough at least and hour to up to a day prior to serving. Combine the flour, salt and butter in a food processor and process until the butter is cut into the flour into little beads. Don’t over-process. Next, add water into the mix by 1/4 cup at a time until the dough holds together but not sticky. Again don’t over-mix as you don’t want to develop too much of the gluten. Roll the dough into a ball and cover with plastic wrap, allowing it to rest in the fridge at least 30 minutes up to overnight.
  • Next, prepare your filling (for the St. Patty’s leftovers version, scroll to the bottom) by mixing together the allspice, coriander, cloves, ginger, red pepper flakes, cinnamon, steak seasoning and salt and then rub that mixture all over the meat. Place the seasoned meat, mustard, vinegar, water, apple juice, and carrots into an electric pressure cooker and cook on high for 20 minutes or into a slow cooker and cook for 6 hours on high. The meat should be fork tender, able to be easily pulled apart.
  • Next, place the butter into a large pot over medium heat and as soon as the butter is melted, add the cabbage and sauté until the cabbage is soft, stirring occasionally for even cooking. Add the sautéed cabbage to the beef.
