Cornmeal Molasses Pancakes Recipe

  1. egg
  2. buttermilk
  3. dark molasses
  4. butter
  5. unbleached all-purpose flour
  6. salt
  7. baking soda
  8. baking powder
  9. yellow cornmeal


  1. in a large bowl , combine the egg , buttermilk , molasses and melted butter
  2. add the flour , salt , baking soda and baking powder
  3. add the cornmeal last , stirring just until combined
  4. the batter will be slightly lumpy
  5. drop by tablespoons ful on a hot greased griddle until bubbles form around the outer edges
  6. turn and brown on the other side --
  7. serve with butter and sorghum molasses or maple syrup
