Number Of Ingredients 9

1-1/3 cups all-purpose flour
2/3 cup cornmeal
2 tablespoons sugar
4 teaspoons baking powder
1 teaspoon salt
2 large eggs
1-1/3 cups 2% milk
1/4 cup canola oil
Pancake syrup

Steps:

  • Combine the first five ingredients. In another bowl, whisk eggs, milk and oil; stir into dry ingredients just until moistened. Pour batter by 1/4 cupfuls onto a lightly greased hot griddle. Turn when bubbles on top begin to pop; cook until second side is golden brown. Serve with syrup.

These egg free Cornmeal Pancakes are tender and sweet with flavors of cornbread. Super easy to whip up with ingredients you likely already have in your pantry, they are a nice change of pace from traditional pancakes. Top with butter and syrup - or add honey and fresh berries!

Number Of Ingredients 8

1 1/3 cups all purpose flour ((lightly spooned into measuring cup, and leveled off with a knife))
1 cup cornmeal
3 Tbsp sugar
1 1/2 Tbsp baking powder
1/2 tsp salt
2 cups milk or DF milk
1/3 cup vegetable or canola oil
1 tsp vanilla extract (optional, but recommended)

Steps:

  • Heat electric skillet to 350F.
  • Whisk together all dry ingredients in large bowl.
  • Add all wet ingredients to dry ingredients (if batter is too thick, add 1 Tbsp of milk at a time until thinned to desired consistency - use a liquid measuring cup for liquids, for best results). Whisk or stir with large spoon until moistened. Batter will be slightly lumpy. Allow batter to rest for 2-3 minutes to thicken.
  • Pour batter onto heated skillet to desired size. Cook until golden brown on first side, then carefully flip and cook until second side is golden brown.
  • Remove from skillet. Add toppings of choice, and enjoy!

Cormeal gives an excellent flavour to pancakes, although it makes them kinda hard to spread. Since these pancakes don't have sugar, they can be made either "sweet" or "savory" depending on what you have them with. They also taste great served hot right off the griddle!

2 cups cornmeal
2 tablespoons unsalted butter
1 teaspoon salt (If using salted butter, reduce the amount of salt, or omit it altogether)
1 cup skim milk
1/3 cup water (you might need more)

Steps:

  • Cream the cornmeal, salt, and butter together.
  • Add the milk and enough water to make a moist but firm batter.
  • Drop, using about 1/4 cup of batter, onto a hot greased griddle, and flatten using the back of a spoon wetted with water.
  • This can be a tad tricky, but wetting the spoon helps a lot!
  • When brown, turn and cook the other side.
  • Serve hot with maple syrup, honey, or butter.

3/4 cup all-purpose flour (see Cook's Note)
1/2 cup cornmeal
2 tablespoons sugar
1 teaspoon baking powder
1/4 teaspoon fine salt
1/8 teaspoon baking soda
1/8 teaspoon freshly grated nutmeg
2 large eggs, separated and at room temperature
1 1/2 cups buttermilk, at room temperature
4 tablespoons unsalted butter, melted, plus more for the skillet
1/2 teaspoon pure vanilla extract
Blackberries, for serving
Maple syrup, for serving

Steps:

  • Preheat the oven to 200 degrees F.
  • Whisk together the flour, cornmeal, sugar, baking powder, salt, baking soda and nutmeg in a large bowl. Whisk together the egg yolks, buttermilk, melted butter and vanilla in a medium bowl. Whisk the buttermilk mixture into the flour mixture until just combined to make a thick batter.
  • In another bowl, whip the egg whites until they hold soft peaks. Use a rubber spatula to fold the whites into the batter just until no white streaks remain.
  • Heat a large nonstick skillet over medium heat and brush lightly with butter. Working in batches, drop about 1/4 cup batter per pancake into the skillet. Cook until bubbles form on the tops of the pancakes and the undersides are golden brown, about 2 minutes. Flip and continue to cook until the pancakes are cooked through, about 1 minute more. Transfer the cooked pancakes to the oven to keep warm and continue to make more pancakes, brushing the skillet with butter as needed, until all the batter has been used. Serve the pancakes with blackberries and maple syrup.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan. In a heavy saucepan combine the 1/3 cup of flour and water. Cook over medium heat stirring constantly until thick. Transfer to a mixing bowl and set aside to cool.
  • In a small saucepan, melt butter. When butter has melted, add the cocoa and mix until smooth; set aside to cool. Beat the sugar and vanilla into the cooled flour mixture. 1 1/2 cups/192 grams all-purpose flour
3 tablespoons/45 grams sugar

  • Heat the oven to 325 degrees. Whisk cornmeal, flour, sugar, baking powder, baking soda and kosher salt together in a bowl. Using the whisk, make a well in the center. If you are using a large skillet or a griddle, repeat once or twice, taking care not to overcrowd the cooking surface.
  • Flip pancakes after bubbles rise to surface and bottoms brown, after about 2 to 4 minutes. Cook until the other sides are lightly browned. Remove pancakes to a wire rack set inside a rimmed baking sheet, and keep in heated oven until all the batter is cooked and you are ready to serve.

3/4 cup self-rising white or buttermilk cornmeal mix
1/2 cup yellow cornmeal
1 cup buttermilk
2 eggs
2 tablespoons sugar
2 tablespoons vegetable oil or bacon drippings
Additional vegetable oil or bacon drippings
Real maple or maple-flavored syrup

Steps:

  • In large bowl, stir together Bisquick mix, cornmeal mix and cornmeal with whisk. Add buttermilk, eggs, sugar and 2 tablespoons oil; stir with whisk just until blended. Let stand 5 minutes.
  • Meanwhile, heat griddle or skillet over medium-low heat (325°F). Brush with oil (add more oil as needed during cooking). For each pancake, pour 1/4 cup batter onto hot griddle. Cook 3 to 5 minutes or until bubbles form on top. Turn; cook other side until golden brown.
