  • using a shallow non-metal dish or reasealable plastic bag add all the ingredients and mix together well
  • up to 3 pounds of beef , chicken , or pork can be placed in the marinade and refrigerated for 8 hours but no longer than 24
  • cover the dish or seal the plastic bag and turn meat occasionally
  • grill meat to desired doneness and discard remaining marinade

  1. This recipe is enough for 3-4 people. 1. Cut onion, celery and pepper into small square pieces. Also cut garlic cloves. Set aside. 2. Shred carrots and cut cilantro into small pieces. Set aside 3. In a wok or a deep frying pan, put some vegetable oil and add garlic. Let that saute a minute and then add celery, pepper and onion. 4. Saute until onion is clear and celery is soft. 5. Add carrots and saute a few minutes 6. Add shredded chicken. Mix and stir fry about a minute 7. Add cilantro and sautee and mix for a minute. 8. Add rice, one packet of chicken consomme (optional), two tablespoons of Salsa Lizano (or more to taste) and one tablespoon of Achiote. Mix well. If you don’t want to put consomme, you can use a seasoning mix with garlic powder, salt, onion powder and basil but traditionally, Costa Ricans use chicken consomme.   8. Crema de Pejibaye. If you love rich soups, then you must try crema de Pejibaye. Pejibaye, or peach palm is a type of fruit native to Central America. It kind of looks like a really small coconut but the inside is a soft, kind of grainy fruit that tastes a bit like sweet potato.
