COSTA RICAN PATI (BEEF TURNOVER)
Whether you call them pati, pattie, patty or paty, these traditional Costa Rican turnovers are one of the best things this cuisine has to offer. They are easy to make and easy to carry around and eat. Make a bunch and take them to work or school as an alternative to sandwiches. I have no idea on prep time, cook time or yield, I just estimated. Posted for ZWT.

- For the dough,
- combine the shortening, butter and oil with a wooden spoon and slowly add the sifted flour and salt. Sprinkle cold water as needed to create a homogenous mixture. Knead the dough and roll it out onto a flat surface to about 1/8 inch thickness. The idea is to have it thin but not so much that it tears.
- For the filling,
- sautee the onions, garlic and peppers on a pan with the oil. Once they brown a bit add the ground beef, the cilantro, the salt and pepper and the breadcrumbs. Stir well and cook thoroughly until the mixture is fairly dry. Let cool.
- Assembly,.
- Cut the pastry into circles or 6 inch squares. You can add the filling to one side, leaving a one inch border to press the edges, or add it into the center and then fold into thirds or fill the circle and cover it with another pastry circle. Each household has its own pati recipe version, so don't be afraid to experiment and use the technique that is easiest for you.
- After filling the patties, press the edges with a fork, then punch some holes into the center of the Costa Rica pati with the fork so that the steam from the filling has a place to exit. Bake until golden brown on a 200°C (400°F) oven. Enjoy!

COSTA RICAN ENYUCADOS
These croquettes stuffed with cheese are the quintessential accompaniment to a Costa Rican breakfast, lunch or coffee hour. Boiled yucca is mashed and stuffed with mozzarella, then fried to golden perfection.

- To peel the yucca, slice the root in half, then make a cut on the long edge. Peel back the outer skin. Alternatively, use a peeler to remove skin. Slice the yucca into 2-inch rounds.
- Put the yucca in a 3-quart stockpot. Add 1 teaspoon salt and cover with water, about 6 cups. Bring to a boil and simmer until the yucca is very tender, about 30 minutes.
- Drain excess water from the yucca, then mash until a puree is formed. Allow the puree to cool before forming the croquettes.
- Flatten about 1/2 cup (3 to 4 ounces) of yucca in your hands (you can use a bit of flour on your hands or food-safe gloves so the yucca doesn't stick). Place about 1 ounce of mozzarella in the middle and form the yucca around the cheese into a flat oval patty; set aside. Repeat with the remaining yucca and mozzarella.
- Pour about 1 inch of oil into a frying pan and heat over medium-high heat until bubbling. Carefully place half of the patties in the oil and fry, flipping about halfway through, until golden brown on the outside but still tender on the inside, about 5 minutes per side. Using tongs, remove the enyucados from the oil and allow excess oil to drain; sprinkle with salt. Place the enyucados on a plate covered with a paper towel to absorb additional oil. Repeat with the remaining patties.
- Serve with salsa rosada or your preferred dip, if desired.
FRIED YUCCA (CASSAVA) COSTA RICAN STYLE
This is my favorite Saturday morning treat that my husband always makes for me. Its very easy and tastes way better than potato french fries.

Steps:
- Skin the yuca using a potato peeler or a knife.
- Cut the yuca into 2-3 inch chunks and then cut those chunks in half.
- Boil the yuca until it is just soft enough to poke with a fork. Don't over boil or let it sit in the hot water or it will become to soft and wont fry.
- There is a very indigestible stringy part in the middle, be sure to take that out if its visible.
- Cut the half chunks into smaller fry-shaped pieces.
- Melt the butter in a frying pan, add the yuca and fry on medium or medium-low heat, turning occasionally until they are browned to your liking.
- Add salt and dip in ketchup.

- 1. put in a sauce pan the choped meat ,at medium heat put onions ,green pepper choped and minced garlic, also add cilantro dried and oregano 1 tablesoon of adobo seasoning and package of sazon w/ culantro and achiote annato for red color,also 2 tablespoon pimento olives,and tomato paste. stir with large spoon ,make sure eveything is blended taste and if you like it like that then don't add the salt, cover let meat cook at low heat,for 15 minutes. see if tender and well cook ,if too much extra oil drain and put aside ,ready to form the meat patties. take 1 disc dough for meat patties add 2 tablesppons fold with a fork press edges in one side and the other, do the same for all the pastelillo dic, when formed heat the oil and add 2 at a time at midium heat ,turning so it won't get darkend , just till golden brown, when finish arrange them in a flat plate and serve to ur kids or guess. makes 10 but if you want more , then double the amount, and buy more pattie disc. hope you enjoy this recepi, bon appettite.
