This Creamy Cilantro Lime Dressing is packed with bright, fresh flavor and jalapeno and tomatillos for a bold, tangy taste with a little kick. quick Use it on anything from salads and veggies to burritos and quesadillas!

1 cup mayonnaise
2 Tablespoons ranch dressing mix (1 ounce packet)
1/2 cup sour cream
1/2 bunch fresh cilantro (packed)
2 to matillos (husks removed, roughly chopped)
1 jalapeno (seeds removed, roughly chopped)
2 cloves garlic
2 Tablespoons fresh lime juice
1/2 cup milk or buttermilk (as needed)

Steps:

  • Combine all dressing ingredients except milk in a large blender. Blend until smooth. Add milk as needed to get the consistency you like.
  • Chill for 30 minutes. The dressing will thicken slightly in the fridge.
  • Keeps for 1-2 weeks in the fridge.

I'm mostly posting this here so I don't lose it again but this is really, really good dressing. I think there's a bunch of Costa Vida resturants out west but I went to the one in Portland, ME and am now hooked!

Number Of Ingredients 12

3 tomatillos, medium, cut into quarters
2 tablespoons lime juice
1 cup cilantro, fresh
5 scallions (white and ends)
2 garlic cloves, crushed
1/4 teaspoon salt (or to taste)
1/2 cup buttermilk
1/2 cup mayonnaise
1/2 cup sour cream
1 ounce ranch dressing mix (I use 1 pkt. Hidden Valley mix)
1/4 teaspoon cayenne pepper
1 jalapeno, chopped

Steps:

  • Put all ingredients in the blender and blend well. If you like it a little more mild, use less cayenne pepper and less of the jalepeno seeds. I usually only use 5-6 seeds & a tiny piece of the core. My mom uses the whole pepper seeds and all.
  • "Cooking" time does NOT include chilling time - chill in fridge for at least 2 hours to let the flavors meld.

1 packet Hidden Valley Ranch mix (TRADITIONAL not BUTTERMILK)
1 cup mayonnaise (I prefer Best Foods)
1 cup buttermilk
2 tomatillos (remove husk, diced)
1/2 bunch cilantro (fresh )
1 clove garlic
1 lime (juiced)
1 jalapeno (we like it SPICY so we kept the seeds in it, if you like it mild, just remove the seeds)

Steps:

  • Add all the ingredients in to a blender.
  • Blend until smooth.
  • Serve as a dressing over salad or as a dip for veggies and chips.

I've never actually had this dressing at the restaurant, but my husband has and HE says it tastes very close. The only thing I think I would change is to put the chopped cilantro in AFTER you put this into the blender. This is my version of a copy cat, but I don't know, because I've never had it. Let me know if you think it is close. I came up with this recipe because my husband does not like the cilantro ranch dressing.

1/3 cup canned diced green chilis
1 garlic clove
pepper, to taste
1 pinch cumin
1 teaspoon salt

1 cup mayonnaise (or Greek yogurt) I use mayonnaise.
1/2 cup milk
1 packet of ranch dry seasoning mix (or 2 Tablespoons)
1/2 bunch of cilantro, stems cut off.
1/4 cup of Salsa Verde
1 Jalapeno, seeded (toss seeds unless you want heat, then add a few) Don't skimp on this...it really adds flavor to the dressing!
2 cloves of garlic or 2 teaspoons garlic paste
Juice of 1 - 2 medium limes - about 2 tablespoons fresh lime juice.

Steps:

  • In a blender or bullet or food processor, add all ingredients.
  • Blend well.
  • Serve immediately.
  • You can refrigerate {covered} for up to 1 week.
