1 (10 ounce) package frozen chopped spinach, thawed and drained
1 (16 ounce) package cottage cheese
1 slice day old bread, toasted
3 tablespoons melted butter

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a 2 quart casserole dish combine cooked pasta, spinach and cottage cheese; mix well.
  • In a small bowl crumble the toast and add melted butter. Sprinkle over spinach mixture.
  • Bake in preheated oven for 15 minutes, or until heated through.

I have made many stuffed shell recipes, and I always end up adding stuff, substituting stuff, or taking stuff out. We are a no-ricotta-for-me house, mostly (unless it's disguised), so I use all cottage cheese. So, here is my version of spinach and cheese stuffed shells. I think they taste very good. Thank you. ;)

20 jumbo pasta shells, cooked (about half of a 12 oz. box)
1 1/2 cups cottage cheese (I use 2%)
1 cup reduced-fat mozzarella cheese, shredded
2 teaspoons dried parsley flakes
1/2 teaspoon salt
1 teaspoon italian seasoning
2 teaspoons garlic, minced (from a jar-I usually have them heaping, because I love garlic)
1 (10 ounce) package frozen chopped spinach, thawed and drained
1/2 small onion, finely chopped
fresh ground pepper (about 1 teaspoon)
1 egg
3 cups spaghetti sauce, divided (I use Classico Tomato and Basil from Costco)
1/2 cup parmesan cheese, grated

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, combine ingredients "cottage cheese" through "egg".
  • Pour half of the sauce in a 9x13 pan (I never measure the sauce, I just pour it from the jar). Fill the shells full with the cheese mixture, and place them into the pan with the sauce.
  • Drizzle the remaining sauce lightly over the top of the shells (or spoon sauce from the jar over the shells, like I do). Sprinkle with parmesan cheese.
  • Cover with foil and bake for 35 minutes. Let stand 5 minutes before serving.

½ cup finely chopped onion
1 carrot
grated (about ½ cup)
⅓ cup olive oil
4 cloves garlic
minced or pressed
½ teaspoon Italian herb seasoning
One 28-ounce can crushed tomatoes
One 15-ounce can tomato sauce
½ cup beef stock (or vegetable stock
if making vegetarian)
Salt and pepper
10 ounces jumbo pasta shells
24 ounces low-fat cottage cheese (1 ½ containers)
1 egg
slightly beaten
¼ cup grated parmesan cheese
optional
One 10-ounce package frozen chopped spinach
thawed and squeezed dry
½ teaspoon Italian herb seasoning
¾ teaspoon granulated garlic
Salt and pepper
2 tablespoons parmesan cheese
optional
½ cup chopped fresh basil

Steps:

  • For the sauce, in a large saucepan, cook the onion and grated carrot in the olive oil over medium-low heat until vegetables are softened, about 7 minutes; do not let brown
  • Add the garlic and Italian herbs and cook until fragrant, 1 to 2 minutes more
  • Turn up the heat to high, add the crushed tomatoes, and stir with a wooden spoon
  • Once the mixture starts to boil, add the tomato sauce and stock, season with salt and pepper, and bring to a simmer again
  • Reduce the heat to low and simmer for 15 minutes
  • In a large pot of boiling salted water, cook the shells according to package directions and remove 1 minute before the suggested cooking time
  • Rinse, then place in cold water to prevent sticking
  • For the filling, pulse the cottage cheese in a food processor until the large curds are broken down into smaller ricotta-like curds, about 5 pulses
  • (Scrape the sides down with a rubber spatula between pulses
  • ) Scrape the cottage cheese into a medium bowl and stir in the remaining filling ingredients
  • Spoon the filling into a resealable plastic bag, and cut a 1-inch tip open in the corner
  • (Refrigerate if waiting before stuffing shells
  • ) Preheat oven to 350°F
  • Spray a 2½-quart baking dish with nonstick spray
  • Spread ½ cup sauce on the bottom of the pan; add 2 tablespoons water if needed to spread the sauce
  • Pipe filling into each shell and arrange the filled shells in the pan
  • Once shells are filled, pour the remaining sauce on top of the shells, cover with foil and bake for 30 minutes
  • Uncover the pan, top with parmesan cheese, if using, and bake for an additional 15 minutes
  • Let cool for a few minutes before topping with basil and serving

2 tablespoons olive oil
1/2 pound thick-cut pancetta, cut into 3/4-inch cubes
2 pounds frozen spinach, thawed and drained
1 (15-ounce) container whole milk ricotta
1 cup grated asiago cheese
1/2 teaspoon freshly ground black pepper
1/4 teaspoon freshly grated nutmeg
1 tablespoon butter
1 garlic clove, minced
1 cup cream
2 cups grated asiago cheese, plus 1/4 cup
1/4 cup chopped fresh parsley
1/4 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • For the shells:
  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain pasta.
  • Warm the olive oil in a large, heavy skillet over medium heat. Add the pancetta and cook until lightly golden, about 5 minutes. Remove the pancetta from the pan with a slotted spoon and transfer to a large bowl. Add the spinach, ricotta cheese, asiago cheese, pepper, and nutmeg. Stir to combine. Stuff the shells with about 2 tablespoons of the spinach mixture each and place the stuffed shells in a large, buttered baking dish.
  • For the sauce:
  • Melt the butter in a medium saucepan. Add the garlic and cook for 1 minute. Add the cream and bring to a simmer. Turn the heat to very low and add the 2 cups asiago cheese, parsley, and pepper. Stir until the cheese is dissolved. Pour the sauce over the shells. Top with the remaining 1/4 cup asiago cheese. Bake until golden on top, about 25 minutes. Remove from the oven and serve immediately.

Steps:

  • 1 large egg, lightly beatenMake the stuffed shells: Bring a large pot of salted water to a boil. Add the pasta shells and cook until slightly softened but still firm, about 7 minutes. Drain and rinse under cold water. Drizzle with olive oil and toss; set aside.
  • Heat 2 tablespoons olive oil in a large nonstick skillet over medium-high heat. Add the onion and cook, stirring occasionally, until soft, about 4 minutes. Add the garlic and cook, stirring, 30 seconds. Add the mushrooms and cook, undisturbed, until golden in spots, about 2 minutes. Add 1/4 teaspoon salt and continue cooking, stirring occasionally, until the mushrooms are soft, about 5 more minutes. Add the spinach and stir until heated through, about 2 minutes.   • Finely chop the spinach-mushroom mixture and combine in a bowl with the cottage cheese, mozzarella, parmesan, egg, basil and 1/4 teaspoon salt. Stuff each shell with about 2 tablespoons of the filling; set aside.
  • Preheat the oven to 350 degrees F. Make the tomato sauce: Heat the olive oil in a large skillet over medium-high heat. Add the garlic, fennel seeds and red pepper flakes and cook, stirring, until lightly golden, about 30 seconds. Add the tomatoes, then rinse out the can with 1 cup water and add to the skillet; add 1/4 teaspoon salt. Bring to a simmer and cook until slightly thickened, about 10 minutes. Transfer to a blender and puree until smooth. Return to the skillet and rinse out the blender.
  • Make the cheese sauce: Combine the cottage cheese, mozzarella, parmesan and egg in the blender and puree until smooth.
  • Brush a 9-by-13-inch flameproof baking dish with olive oil and pour in half of the tomato sauce. Add the stuffed shells, then top with the remaining tomato sauce. Cover with aluminum foil and bake 25 minutes; uncover and continue baking until bubbly, 15 to 20 more minutes. Turn on the broiler; drizzle the shells with the cheese sauce and broil, about 2 minutes.

36 jumbo pasta shells, cooked and drained

Steps:

1 cup sliced mushrooms
1 small onion, finely chopped

  • Preheat oven to 375°. Cook pasta shells according to package directions for al dente. Drain; rinse with cold water., Meanwhile, in a small skillet, heat butter over medium-high heat. 1/2 cup dry white wine or nonalcoholic white wine
18 uncooked large shrimp (about 1 lb), peeled, deveined

1 container (10 oz) refrigerated Alfredo pasta sauce
2 cups packed fresh spinach leaves

Steps:

  • Cook pasta as directed on package; drain well.
  • Meanwhile, in 1-quart saucepan, cook bread crumbs and butter over medium-high heat 3 to 4 minutes, stirring constantly, until browned. Stir in parsley; remove from heat.
  • In 12-inch skillet, cook bacon over medium-high heat, turning occasionally, until crisp; remove from skillet and drain on paper towels. Crumble bacon.
  • In same skillet, cook onion and garlic in bacon drippings over medium-high heat, stirring frequently, until onion is crisp-tender and starting to brown. Stir in wine and shrimp. Reduce heat to medium; cook 2 to 3 minutes, stirring frequently, until shrimp begin to turn pink.

500 g spinach
250 g low-fat ricotta cheese
500 g low fat cottage cheese
600 ml bottled pasta sauce
250 ml vegetable stock
1 tablespoon finely grated parmesan cheese

  • Cook pasta in a large saucepan of boiling water, uncovered, 3 minutes; drain.
  • Cool slightly.
  • Preheat oven to moderate.
  • Boil, steam or microwave spinach until just wilted; drain.

3 ½ cups spaghetti sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of salted water to boil, gently place pasta shells in boiling water; bring water back to boil. Cook until noodles are just tender; drain well.
  • Squeeze spinach dry. Combine spinach, ricotta, 1/3 cup Parmesan cheese, fennel, basil and garlic in a large mixing bowl. Season with salt and pepper; mix well.

Here's a creamy and delicious, vegetarian main dish from Debbie Herbert in Seymour, Indiana. It's easy to assemble and looks like you really fussed. Serve with a leafy salad, crusty garlic bread and thirst-quenching iced tea.

15 uncooked jumbo pasta shells
1 envelope white sauce mix
1 cup 4% cottage cheese
1/2 cup shredded part-skim mozzarella cheese
1 large egg white
1/2 teaspoon dried basil
1/4 teaspoon garlic powder
Dash pepper
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 tablespoon shredded Parmesan cheese

Steps:

  • Cook pasta according to package directions. Meanwhile, prepare white sauce according to package directions; set aside., Preheat oven to 375°. In a small bowl, combine cottage cheese, mozzarella cheese, egg white, basil, garlic powder, pepper and half of the spinach (save remaining spinach for another use). Pour half of the white sauce into a greased 11x7-in. baking dish. , Drain pasta and rinse in cold water; stuff each shell with 2 tablespoons spinach mixture. Arrange over sauce. Top with remaining white sauce. , Cover and bake 25 minutes or until heated through. Sprinkle with Parmesan cheese.

Spinach with cottage cheese image

An easy recipe for an extremely popular and delicious, rich in iron, Indian vegetarian main course dish !

Number Of Ingredients 11

6 bunches, spinach leaves
2 onions, chopped and sauted (to look transluscent)
6 green chillies
1 bunch coriander leaves
150 gms Paneer, cubed (cottage cheese)
1 tsp Cumin seeds (Jeera)
1 pinch, soda bi-carb (optional)
Salt, to taste
1 tablespoon Oil / Ghee
1 dessert-spoon Butter (optional)
Water

Steps:

  • Cut off the stems from the Spinach leaves and wash the leaves carefully. Blanch them in a pot of boiling water for about 10 minutes, adding a pinch a soda-bicarb to ensure that the colour of the spinach doesn't run. Drain the water and cool the spinach.
  • In a blender, puree the sauted onions, spinach, coriander, chillies and cumin seeds, with a little water, till it is smooth.
  • In a pan / skillet, heat some oil / ghee, and lightly fry the paneer cubes. Remove the goldenish paneer cubes from the pan and keep aside.
  • In the skillet, add the pureed spinach on a medium flame adding about a cup of water (if you want it of a thinner consistency). Add salt to taste and let it remain on the fire, till little bubbles start to appear. Add a tablespoon of butter, for a delicious taste.
  • Now add the paneer to the Spinach.
  • Serve hot with Parathas / Naan / Chapatis / Rotis.

½ yellow onion, chopped
1 cup cottage cheese
4 skinless, boneless chicken breast halves
2 tablespoons Cajun-style seasoning
2 tablespoons melted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Squeeze excess water out of thawed spinach; in a large bowl, mix spinach with onion and cottage cheese and set aside.
  • Season chicken breasts with Cajun-style seasoning, then place 1/4 of cheese/spinach mixture in the center of each breast and fold in half. Secure with toothpicks and place in a lightly greased 9x13 inch baking dish.
  • Drizzle with melted butter and bake at 350 degrees F (175 degrees C) for about 25 minutes, or until chicken is cooked through and juices run clear.

A really unique stuffed shells recipe. I usually make this for company. The original recipe included one pound of bulk Italian sausage in the stuffing, which I have omitted for my own personal tastes. I'm getting hungry just typing this recipe and remembering how good it is!

1 large onion, chopped
1 (10 ounce) package frozen chopped spinach, well drained
1 (8 ounce) package cream cheese, softened
1 egg, beaten
2 cups shredded mozzarella cheese, divided (8 oz)
2 cups shredded cheddar cheese (8 oz)
1 cup cottage cheese
1/4 grated parmesan cheese
1/4 teaspoon salt
1/4 teaspoon pepper
1 dash cinnamon (optional)
20 large shell noodles, cooked and drained
1 (29 ounce) can tomato sauce
1 tablespoon dried onion flakes
1 1/2 teaspoons dried basil
1 1/2 teaspoons parsley flakes
2 cloves garlic, minced
1 teaspoon sugar
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a skillet, cook onion until tender.
  • Transfer to a large bowl.
  • Stir in the spinach, cream cheese, and egg.
  • Add 1 cup mozzarella, cheddar, cottage cheese, parmesan, salt, pepper, and cinnamon if desired; mix well.
  • Stuff shells and arrange in a greased 13x9x2 baking dish.
  • Combine sauce ingredients; mix well.
  • Pour over shells.
  • Cover and bake at 350 degrees for 40 minutes.
