COTTAGE CHEESE BREAD

Cottage Cheese Bread image

just a little something different. prep time doesn't include rising time. In the directions I didn't specify kneading. there are 2 schools of thought on this subject. I leave that up to your personal preference. I knead this type of bread but i've know people who don't. As long as the bread gets a good double in size rise you should have good results. You can either use dried herbs or fresh. I prefer fresh but have had good results with the dried. Just remember dried herbs tend to have a more concentrated flavor so you may what to cut back on the amount a bit if using dried herbs.

LASAGNA-STUFFED CROISSANT

Lasagna-Stuffed Croissant image

A fabulous lasagna-style stuffed croissant, of sorts, but without the noodles! A childhood favorite that started with my great-grandmother.

Provided by Cindy L.

Categories     Main Dish Recipes     Pasta     Lasagna Recipes     Meat Lasagna Recipes

Time 1h

Yield 8

Number Of Ingredients 16

½ pound ground pork sausage
½ pound ground beef
1 (6 ounce) can tomato paste
¾ onion, chopped
1 tablespoon dried parsley flakes
½ teaspoon dried basil
½ teaspoon dried oregano
1 pinch garlic powder, or to taste
salt and ground black pepper to taste
1 cup cottage cheese
¼ cup grated Parmesan cheese
1 egg
2 (8 ounce) tubes refrigerated crescent rolls
½ cup shredded Monterey Jack cheese, or to taste
2 teaspoons milk, or as needed
2 tablespoons sesame seeds

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir pork and beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Blot meat with paper napkins to remove as much grease as possible.
  • Add tomato paste, onion, parsley, basil, oregano, garlic powder, salt, and pepper to the browned meat. Reduce heat to medium-low. Mix well and simmer the meat filling, uncovered, for 5 minutes.
  • Meanwhile, mix cottage cheese, Parmesan cheese, and egg together for the cheese filling.
  • Unroll crescent rolls and press together to form a rectangle of dough. Place on an ungreased baking sheet, with the short sides of the dough hanging over the long edge of the baking sheet.
  • Spread 1/2 of the meat filling down the middle of the dough. Spoon cheese filling on top. Layer remaining meat filling over the cheese. Add Monterey Jack cheese on top. Pull sides of dough across one another to form a loaf, sealing all open edges. Brush top of loaf with milk and sprinkle sesame seeds on top.
  • Bake in the preheated oven until deep golden brown in color, 20 to 25 minutes.

GLAZED CHEESE CROISSANTS

Glazed Cheese Croissants image

The cottage cheese in these pastries, from the kitchen of April F. Smith in Bountiful, Utah, creates the flaky layers of a real croissant.

Provided by Martha Stewart

Categories     Food & Cooking     Breakfast & Brunch Recipes

Time 3h

Yield Makes 8

Number Of Ingredients 5

1/2 cup (1 stick) unsalted butter, room temperature
3/4 cup small-curd cottage cheese
1 cup all-purpose flour (spooned and leveled), plus more for rolling dough
1/4 teaspoon salt
Sugar Glaze (see below)

Steps:

  • In a medium bowl, combine butter, cottage cheese, flour, and salt. Shape into a disk, and wrap in plastic; refrigerate until firm, about 2 hours.
  • Preheat oven to 375 degrees. On a well-floured surface, roll dough out to a 14-inch circle. Cut circle evenly into 8 triangles. Roll each triangle up, from wide end to tip, turning ends of roll in to form a crescent shape. Place croissants 3 inches apart on a rimmed baking sheet (to catch any drips); bake 30 to 35 minutes or until golden brown. Transfer to wire rack. Cool 10 minutes.
  • Meanwhile, make Sugar Glaze: In a glass measuring cup, add 2 teaspoons milk by 1/2 teaspoonfuls to 1/2 cup confectioners' sugar, stirring until glaze is of a drizzling consistency. It should be thin enough to pour while still thick enough to coat croissants. Drizzle over croissants. Serve warm, or let cool to room temperature. Store at room temperature in an airtight container, up to 2 days.
