COTTAGE PIE
This is a recipe from my Gram who is English. She served this often, and I have modified her recipe for my family and this is it. A great alternative to Shepherd's Pie.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch deep-dish pie plate.
- Place potatoes into a pot; cover with salted water, and bring to a boil over high heat. Reduce heat to medium-low, cover; simmer until tender, about 20 minutes. Drain; mash with 2 tablespoons of the butter and the garlic. Season to taste with salt and pepper; set aside.
- Meanwhile, heat the olive oil in a skillet over medium heat. Add ground beef, herbes de Provence, and nutmeg; cook and stir until beef is lightly brown and crumbly, about 10 minutes. Spread the beef evenly in the prepared pie plate. Cover evenly with the peas; spread the mashed potatoes over the peas. Dot the casserole with the remaining butter.
- Bake, uncovered, in the preheated oven until heated through and bubbly, about 20 minutes.

- In a Dutch oven, cook the first five ingredients over medium heat until turkey is no longer pink and vegetables are tender, breaking up meat into crumbles; drain., Stir in flour, herbs, Worcestershire sauce, salt and pepper until blended. Add broth; cook and stir until broth is absorbed, 1-2 minutes. Stir in peas; heat through., Transfer to a greased 9-in. deep cast-iron skillet or deep-dish pie plate. Top with mashed potatoes; if desired, sprinkle with cheese. Bake at 400° until filling is bubbly, 20-25 minutes.

- Preheat oven to 400 degrees F (200 degrees C). Line a 9x5-inch loaf pan with aluminum foil.
- In a large bowl, combine ground beef, ketchup, tomato juice, salt, pepper, red pepper, eggs, bread crumbs, onion, and mustard for meatloaf until well mixed. Press meat mixture into the prepared pan.
- In a separate bowl, combine ketchup, mustard, and brown sugar for topping until smooth. Spread brown sugar mixture over meatloaf.
- Bake in preheated oven 35 to 45 minutes, until no longer pink. Drain off fat. Let rest 5 minutes before serving.

BAKED MEATLOAF SHEPHERD'S PIE
After doing a search, I couldn't find a decent Shepherd's Pie recipe... I did find recipes for meatloaf and mashed potato bake, however. And thus, Baked Meatloaf Shepherd Pie was birthed. This recipe is an adaptation of two highly rated recipes, Meatloaf #54257 and Mashed Potato Bake #41344. It is comfort food and a great dish to bring to someone who needs a meal, as it doubles easily, and freezes well. Enjoy!

- Preheat oven to 350 degrees.
- Prepare meatloaf: Combine first eight ingredients in a large bowl.
- Smooth into a loaf baking dish.
- Bake uncovered for 1 hour.
- While meatloaf is baking, prepare potatoes: Boil potatoes until tender, drain water.
- Mash potatoes with fork, stirring in 1/3 cup of half & half.
- In skillet melt margarine and brown slices of onions.
- Put on lid and cook, stirring occasionally, making sure all of the onions get brown (usually about 10 minutes).
- Mix potatoes and onions in a medium-size bowl.
- Place mixture in 2-qt baking dish and top with cheese.
- Bake at 350 for 20 minutes.
- When meatloaf and potatoes are done, remove from oven.
- Assemble shepherd's pie: Drain the meatloaf of grease and spoon into a 3-qt casserole dish (The meatloaf will break apart as you spoon it out.) Mash the meatloaf down into a flat layer.
- Mix peas and carrots together and add them on top of the beef.
- Spoon mashed potato mixture on top of the vegetables. The potatoes should form the top layer, so be careful not to mix the vegetables with the potatoes.
- Bake at 350 degrees for 20 minutes.

COTTAGE MEATLOAF
I've been making this for years it's a huge family hit. Not sure where I gathered the recipe from but I remember right before I got married I made this folder of recipes I wanted to try on the new hubby. Well this is one that has stuck. It's still in the orginal folder and I use it all the time.

Steps:
- In a large bowl, combine first 12 ingredients. Mix until thoroughly blended.
- Add bread crumbs and rice. Mix again.
- Line a 9 x 5 in loaf pan with foil. Press in beef mixture and shape.
- In a seperate bowl mix topping ingredients, mixing well. Spread over top of meatloaf.
- Bake 400 degrees for 45 minutes or until done.
- Drain off fat. Let meatloaf rest for 5 minutes before serving.

Drain cauliflower on paper towels. Place steamed cauliflower in a food processor, and pulse until finely chopped. Add Cheddar, Parmesan, cream, salt, pepper, and 2 tablespoons of the butter, and process until smooth and creamy.
