MUSHROOM SAUCE

See in post for more uses!Luxurious yet simple, the key here is getting complexity into the sauce using wine, parmesan and broth. See note for how to lighten this up.Makes around 3 cups - enough to generously smother 4 to 5 pieces of protein, or toss through pasta for 3 to 4 people.

Steps:
- Heat oil and melt butter in a skillet over medium high heat. Add mushrooms and leisurely cook until golden brown - takes about 4 to 5 minutes. No need to stir constantly.
- Just before they're done, add the garlic and a pinch of salt and pepper. Cook until garlic is golden (~ 1 minute).
- Add white wine - it will sizzle! Stir, scraping the bottom of the skillet, for 1 minute or until mostly evaporated.
- Add broth, cream and parmesan. Stir, then lower heat to medium so the sauce is simmering - do not boil rapidly, cream may split.
- Stir occasionally and simmer for 2 - 3 minutes until it thickens. It shouldn't be super thick, this is a rich sauce.
- Stir through thyme, adjust salt and pepper to taste. Remove from stove.
- Serve over steak or other cooked protein. Toss through pasta, stuff into baked potatoes, serve with roast beef, chicken or pork, smothered omelettes. See in post for more ideas!

COUNTRY PUB MUSHROOM SAUCE
This is the recipe used in our local country pub and given to me by the chef. You can also brown some chopped bacon (a smoked bacon is nice) with the mushrooms and follow the recipe to make a very easy entrée served on crisp buttered toast or add some chopped cooked chicken to the sauce (we like it with bacon & chicken) and serve stirred through some hot cooked pasta spirals for a quick meal. It is a very versatile recipe but we like it best served over a nice juicey grilled steak. :) Note: I use a good heaped teaspoon of crushed garlic from a jar in place of the 1 clove garlic because we like garlic and also I season well with freshly ground black pepper & a little salt if needed.

Steps:
- Saute the mushrooms in the butter until soft.
- If using add in some chopped bacon and continue cooking til this is lightly cooked.
- Add wine, stock, cream and garlic.
- If using now is the time to add in some cooked chopped chicken.
- Bring to a boil and then continue cooking for a few minutes uncovered until thickened to the consistency you like.
- Add chives if using and serve either as is over steak etc, or with bacon added over some toast triangles, or with chicken & bacon added over spiral pasta.

WILD MUSHROOM SAUCE
This sauce is excellent over most grilled meats, including veal or beef medallions. Mushroom varieties noted are suggestions--substitute based on local availability or preference. A standard mushroom sauce can be prepared by substituting all wild mushrooms for the typical grocery store variety.

- Melt butter in a saucepan over medium heat. Saute shallots briefly, then stir in all of the mushrooms. Saute until tender and translucent, about 3 minutes. Pour in red wine, and simmer for 3 minutes. Stir in demi glace, and simmer for 6 minutes, or until sauce has thickened.

COUNTRY TURKEY LOAF WITH MUSHROOM SAUCE

- * (Note: Recipes in both calendars are the same however, the Mushrooms Sauce recipe is different. See below.) Mushroom Sauce: * In a 2-quart saucepan over medium-high heat, sauté mushrooms in butter for 2 minutes. Stir in flour. Cook and stir until flour is moistened. Add broth or bouillon. Stirring constantly, bring to a boil and boil for 1 minute. Remove from heat. Stir in sour cream until smooth. Reheat over low heat if necessary (do not boil). Makes 2 1/4 cups. Preheat oven to 350°. In a medium skillet over medium-high heat, saute onion and celery in oil until tender. Remove from heat.In a large bowl, mix turkey, sausage, bread crumbs, eggs, pepper, poultry seasoning and cooked vegetables until well blended. Spread mixture in a 9 x 5 x 3-inch loaf pan. Bake for 1 hour and 15 minutes or until cooked through. Pour off fat. Turn out onto a platter and slice.Serve with Mushroom Sauce. Mushroom Sauce:*In a small saucepan, mix soup, sour cream and milk until smooth. Stir over low heat until heated through (do not boil). Makes about 2 1/4 cups.
