You can substitute ground beef in this meatloaf recipe, if you wish. But you save the calories by using ground chicken. This recipe has a great flavour, texture and aroma!

1 lb ground chicken
1/2 cup fine breadcrumbs
1 large egg white
1 medium carrot
1 small onion
1/4 cup ketchup
1/2 teaspoon minced garlic
1 teaspoon Worcestershire sauce
1/4 teaspoon celery seed
1 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Preheat oven to 350 degrees.
  • Combine chicken and bread crumbs in large bowl.
  • Set aside.
  • Cut the carrot& onion into chunks and add to blender.
  • Add the remaining 7 ingredients to the blender.
  • Process in blender until carrot is very fine.
  • Pour blender mixture over meat mixture.
  • Mix very well using your hands.
  • Form mixture into a loaf and place in lightly greased 9" X 13" pan.
  • Cover with foil and bake for one hour.
  • Remove foil& continue baking for 15-30 minutes, until loaf is cooked through.

1 pound ground chicken
1¼ cups breadcrumbs
½ cup finely chopped onion
½ cup shredded Parmesan cheese
¼ cup chopped fresh parsley
1 teaspoon kosher salt
½ teaspoon garlic powder
¼ teaspoon ground black pepper
1 cup milk
2 large eggs
2 tablespoons tomato paste
2 tablespoons Worcestershire sauce
¾ cup ketchup
3 tablespoons brown sugar
1 tablespoon Worcestershire sauce

Steps:

  • Preheat oven to 350°F.
  • In a large bowl, crumble the ground chicken.
  • In a medium bowl, combine all of the dry ingredients (breadcrumbs, onion, parmesan, parsley, garlic powder, salt and pepper) and stir to mix. Add this to the bowl with the ground chicken and stir.
  • Add the remaining wet ingredients (milk, eggs, tomato paste, and Worcestershire sauce) and stir to mix.
  • In a small bowl, make the glaze by stirring together the ketchup, brown sugar and Worcestershire sauce.
  • Spoon a couple tablespoons of the glaze into the bottom of an 8x4-inch loaf pan. Add the chicken mixture to the loaf pan and then spread the remaining glaze on top.
  • Bake in the preheated oven, uncovered, for 80-90 minutes, or until the internal temperature reaches 165°F and the loaf is cooked through.

1 1/2 cups ketchup
1/2 cup light brown sugar
1/2 cup beef broth
2 Tablespoons yellow mustard
1 Tablespoons Worcestershire sauce
1/2 teaspoon onion powder
freshly chopped parlsey, for serving ((optional))

Steps:

  • Combine all ingredients in a 3-quart or larger slow cooker and cook on high heat for 2 to 2.5 hours or low heat for 3 to 4 hours.
  • Reduce the slow cooker to warm and serve.
  • Sprinkle with chopped parley for a little color before serving (optional)

Here's a good old-fashioned recipe for Sunday Meatloaf, with saltine crackers to make it moist and a catsup glaze that is probably my favorite part. I've been making this recipe for years. Ever since my husband and I married, which is now over 30 years.

2 large eggs
1/4 cups whole milk
1 1/2 cups crushed saltine crackers
1/4 cup chopped onion
2 tablespoons dried parsley
1 teaspoon liquid smoke
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 1/2 pounds lean ground beef or ground venison (90/10)
1/4 cup ketchup
1 tablespoon yellow mustard
3 tablespoons brown sugar
3/4 cups ketchup (for glaze)

Steps:

  • Preheat oven to 350 degrees. Begin by gathering your ingredients so that you have them at hand on the counter or table. Prepare the ingredients.
  • Crush the saltine crackers. To do this, I place one sleeve of crackers in a large freezer bag. Close it up squeezing out all the extra air. Then using my rolling pin, I'll crush the crackers until they are a nice fine crumb. This will make just short of 1 1/2 cups. Next, using a Chef's knife and cutting board, chop the onion.
  • In a large glass or stainless bowl, combine the eggs and whole milk. Stir into the egg mixture the crushed crackers, chopped onion, dried parsley, liquid smoke, kosher salt and black pepper. Add in ground beef (or venison), ketchup, mustard, and brown sugar. Mix well, using a large spoon or your hands.
  • Spoon the meat mixture into a greased 9x11 loaf pan. I've used both metal and glass pans to make this meatloaf. I think the glass pans are a little easier to clean up in the end. Plus, if it's pretty, you can serve the meatloaf directly from oven to table.
  • Cover with tinfoil. Bake in preheated oven for 45 minutes. Remove the tinfoil, and pour 3/4 cups ketchup over meatloaf.
  • Bake uncovered for another 10 minutes. Serve warm. This recipe will serve 4-6 people.

2 Tsp Vegetable oil
1 Medium Onion chopped
2 Cloves Garlic minced
2 Large Eggs
1 Tsp Salt
1/2 Tsp Ground black pepper
2 Tsp Dijon mustard
2 Tsp Worcestershire sauce
1/4 Tsp Hot red pepper sauce
1/2 Cup Whole milk
2 Lbs Meat loaf mix (50%beef, 25% pork, 25 % veal)
2/3 Cup Crushed saltines (about 16)
1/3 Cup Fresh parsley chopped Minced
6-8 Oz Thin sliced bacon
Glaze
1/2 Cup Ketchup or chili sauce
4 Tbsp Brown sugar
4 Tsp Cider or white vinegar

Steps:

  • Heat oven to 350 Heat oil in med. skillet - add onion and garlic and saute until softened, about 5 min. Set aside to cool while preparing remaining ingredients. Mix eggs with thyme, salt, pepper,mustard, worchestershire sauce, pepper, pepper sauce, and milk. Add egg mixture to meat in large bowl with crackers, parsley, and cooked onion mixture. Mix until evenly blended and meat mixture does not stick to bowl. If it sticks add additional milk a few tbsp at a time, until no longer sticks. Shape into loaf on cookie sheet lined with foil for easy clean-up. Brush with half of the glaze and arrange bacon slices over top tucking ends under loaf. Bake until bacon is crisp and internal temp is 160 (about an hour). I found that it took longer at 375. Cool 20 min. Simmer remaining glaze until slightly thickened. Slice meatloaf and serve with extra glaze.

2 tablespoons unsalted butter
8 ounces sliced mushrooms
1 cup chopped onion
1 cup thinly sliced celery
3/4 shredded carrots
2 tablespoons water
2 pounds ground round or lean ground beef (85 to 90 percent lean)
1/2 cup flour
1 1/2 teaspoons seasoned salt
1/4 teaspoon dried leaf thyme
1 tablespoon fresh chopped parsley, or 1 teaspoon dried parsley flakes
2 tablespoons light soy sauce

Steps:

  • Gather the ingredients.
  • In a skillet, melt butter over medium heat; add mushrooms, onion, celery, carrots, and water.
  • Heat to boiling; cover and cook for 10 minutes, or until vegetables are just tender-crisp.
  • In a large bowl, combine ground beef, flour, seasoned salt , thyme, parsley, soy sauce, and the cooked vegetables.
  • Mix gently and shape into a loaf in a greased, shallow baking pan (with sides).
  • Bake the meatloaf at 350 F for about 1 hour to 1 hour and 10 minutes, or until the loaf is crusty and browned. The meatloaf is done when it reaches 160 F on a meat thermometer.
