SHRIMP CAKES WITH SCALLION DIP



Shrimp Cakes with Scallion Dip image

1/2 cup mayonnaise
1/2 cup chopped fresh parsley
1 scallion, roughly chopped
1 small clove garlic, grated
2 tablespoons fresh lemon juice
Kosher salt and freshly ground pepper
1 pound medium shrimp, peeled and deveined
1 cup panko breadcrumbs
1 large egg, lightly beaten
1/2 teaspoon grated lemon zest
3 tablespoons vegetable oil, plus more for forming
1 5-ounce package mixed greens (about 6 cups)
4 radishes, thinly sliced

Steps:

  • Preheat the oven to 400 degrees F. Puree the mayonnaise, parsley, scallion, garlic, 2 tablespoons water, 1 tablespoon lemon juice, 1/2 teaspoon salt and 1/4 teaspoon pepper in a food processor; transfer to a bowl.
  • Add half of the shrimp to the food processor and pulse until a thick paste forms. Add the remaining shrimp, 1/2 cup panko, 2 tablespoons of the prepared dressing, the egg and lemon zest. Pulse until combined but still chunky. With oiled hands, shape the mixture into eight 1/2-inch-thick patties. Transfer to a baking sheet; freeze 5 minutes.
  • Put the remaining 1/2 cup panko on a plate. Heat the vegetable oil in a large nonstick ovenproof skillet over medium heat. Coat the patties on both sides with the panko; cook until golden, 2 minutes per side. Transfer the skillet to the oven and bake until the patties are cooked through, 5 to 7 minutes.
  • Meanwhile, toss the greens, radishes, 2 tablespoons of the dressing and the remaining 1 tablespoon lemon juice; season with salt and pepper. Serve the shrimp cakes with the salad and remaining dressing.

Cooked shrimp, about 12 ounces, chopped
2 to 3 tablespoons mayonnaise
1 large egg, lightly beaten
2 tablespoons seasoned dry bread crumbs
1 tablespoon fresh chives, chopped
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 cup mayonnaise
1 tablespoon grain mustard

Steps:

  • Heat a griddle or nonstick skillet with cooking spray and set over medium-high heat to preheat.
  • In a medium bowl, with a spoon, combine shrimp, mayonnaise, egg, bread crumbs, chives, salt, and black pepper. Mix well and shape mixture into 4 cakes, each about 1-inch thick.
  • Place cakes on hot griddle and cook 3 minutes per side, flipping with a spatula, until cooked through. Remove from griddle.
  • While cakes are cooking, in a small bowl, with a spoon, combine mayonnaise and grain mustard. Mix well. Serve shrimp cakes with remoulade spooned over top.

1-pound (450g) raw shrimp, peeled and deveined
1 medium onion, finely chopped
2 garlic cloves, crushed
3/4 cup (80g) breadcrumbs
2 tablespoons chopped parsley
1 egg
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/4 red chili flakes
Olive oil for frying
2 tablespoons Mayonnaise
3/4 cup (170g) Sour cream
2 teaspoons Mustard
1 tablespoon chopped chives

Steps:

  • 1. Place the shrimp in the bowl of a food processor. Pulse until coarsely chopped - do not over process. 2. Transfer the shrimp to a large bowl. Add chopped onion, crushed garlic cloves, breadcrumbs, parsley, eggs and spices. Mix until well combined. 3. Form the mixture into patties. 4. In a large pan heat olive oil. Add the shrimp patties and cook for about 3-4 minutes on each side or until golden brown. Transfer to a paper towel to drain. 5. For the dipping sauce: in a medium bowl, mix all the ingredients until combined and smooth.

1 large egg white, lightly beaten
1 teaspoon Dijon mustard
¼ teaspoon hot pepper sauce
1/4 teaspoon salt, preferably kosher
¼ teaspoon coarsely ground pepper
⅓ cup fine, unseasoned dry breadcrumbs
2 teaspoons extra-virgin olive oil

Steps:

  • Thoroughly mix shrimp, crab, egg white, mustard, hot pepper, salt and Peppercorn Blend in a bowl. Shape into 8 patties, each about 3/8 inch thick. Spread breadcrumbs in a shallow dish and coat the patties on both sides with crumbs.
  • Heat oil in a large nonstick skillet over low heat; add crab cakes and cook until golden on both sides, about 3 minutes per side.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch baking pan.
  • Beat eggs in a stand mixer fitted with the whisk attachment on high speed until thick and lemon-colored, about 3 minutes. Gradually add sugar, beating until mixture is thick, about 5 minutes. Fold flour, baking powder, and salt into the batter by hand.
