Couscous Paella With Shrimp Recipe

  1. olive oil
  2. onion
  3. garlic cloves
  4. sweet red pepper
  5. yellow sweet pepper
  6. salt
  7. pepper
  8. dried thyme
  9. red pepper flakes
  10. turmeric
  11. chicken broth
  12. water
  13. frozen peas
  14. large shrimp
  15. couscous
  16. pitted black olives


  1. heal oil in a large heavy-bottom pot over medium-high heat
  2. add onion , garlic and peppers
  3. cook for 8 minutes , or until tender , stirring occasionally
  4. add salt , black pepper , thyme , red pepper flakes and turmeric
  5. stir in broth , 1 cup water and the peas
  6. bring to a simmer and add shrimp
  7. simmer , covered , for 2 minutes or until the shrimp is cooked through
  8. remove from heat
  9. stir in couscous
  10. cover and let stand 5 minutes
  11. to serve , fluff with fork and garnish with olives

See more Paella without the work I really loved this dish. Not a fan of scallops so I used shrimp and chicken sausage. I also didn't have any fennel but it didn't matter. The saffron was so flavorful and it gave the couscous such a wonderful aroma. This one is definitely a keeper!
