  1. vegan butter
  2. shallot
  3. low sodium vegetable broth
  4. whole wheat couscous
  5. pine nuts
  6. currants
  7. salt

Steps:

  1. melt butter in a small saucepan
  2. add chopped shallot and simmer for about 2-3 minutes , stirring a few times
  3. add vegetable broth and bring to boil
  4. once boiling remove from heat and add couscous
  5. give it a quick stir and cover
  6. let it sit covered for 10 minutes', "while it's sitting toast pine nuts", 'put the pine nuts in a small pan and cook over low-medium heat for about 3-5 minutes , until the nuts are fragrant
  7. shake the pan around a few times too
  8. lastly , add the pine nuts and currants to the couscous and stir to combine everything
