Ingredients:

  1. couscous
  2. boiling water
  3. salt
  4. olive oil
  5. garlic cloves
  6. onion
  7. diced tomatoes
  8. fresh basil
  9. pine nuts
  10. fresh spinach
  11. muenster cheese
  12. cracked black pepper

Steps:

  1. add couscous and salt to boiling water
  2. cover and let sit 5 minutes , then fluff with fork
  3. preheat oven to 375
  4. heat oil in large skillet
  5. saute garlic and onion for ten minutes , or until tender
  6. drain canned tomatoes , reserving 1 / 3 cup juice
  7. add drained tomatoes to garlic and onions
  8. cook 10 more minutes , stirring frequently
  9. stir tomato mixture into couscous
  10. mix in reserve tomato juice , basil , pine nuts , raw spinach and pepper
  11. spread half of the couscous mixture in a shallow baking dish
  12. sprinkle muenster evenly , then top with remaining couscous mixture
  13. cover dish with foil and bake at 375 for 25 minutes
