Couscous Salad with Sun Dried Tomato and Feta image

Recipe VIDEO above. A 12 minute, no cook, giant Couscous Salad with sun dried tomato, feta, rocket / arugula, herbs and the added nutty tastiness of chickpeas. My shortcut-flavour tip is to use the oil from the sun dried tomato jar as the dressing - free flavour! The flavour pops from the sun dried tomato and feta are quite intense, so this truly is satisfying to have as a meal, or as a substantial side. This makes quite a lot - serves 5 as a main, or 8 - 10 as a side. Keeps very well.

1 1/4 cups dried couscous ((Note 1))
1 1/4 cups / 315 ml boiled water
1 tsp vegetable stock powder ((or 1 cube crumbled) (Note 2))
1 garlic clove (, minced)
1 tsp coriander powder (or cumin - I interchange)
400 g / 14 oz chickpeas (1 can) (, drained)
1/2 cup coriander (, finely chopped)
1/2 cup parsley (, finely chopped (or mint))
1 red onion (, chopped)
220 g / 7 oz jar sun dried tomato strips in OIL ((Note 3))
120 g / 4 oz rocket / arugula lettuce (, chopped into 5 cm / 2" pieces)
Zest of 1 large lemon
5 tbsp fresh lemon juice ((2 large lemons))
1/2 tsp coarsely ground black pepper
60 g / 2 oz feta (, crumbled)
Salt and pepper (, to taste)

Steps:

  • Place chickpeas, couscous, vegetable stock powder, coriander and garlic in a large bowl. Pour over hot water, shake to level out couscous (chickpeas should mostly settle on top). Cover with plate or cling wrap, set aside for 5 minutes.
  • Fluff couscous with fork. Cool a bit.
  • Add coriander, parsley, onion, sun dried tomatoes (including all oil), rocket, lemon juice and black pepper. Sprinkle zest across surface. Toss well to combine.
  • Adjust salt and pepper to taste.
  • Transfer to serving bowl, sprinkle with feta. Serve.

In this recipe, light and fluffy lemony couscous gets tossed with feta cheese, sweety drop peppers, castelvetrano olives, and fresh herbs. It's a super refreshing and completely irresistible Mediterranean salad that you're sure to love.

1/3 cup olive oil
zest from 1 lemon
3 lemons (juiced (about 3/4 cup))
1 tbsp white balsamic reduction
1 clove garlic (minced)
1/4 tsp salt
5 cups cooked couscous (cooked in broth)
1 cup pitted castletrano olives (chopped)
7 oz crumbled feta (one small block)
1/2 cup tear drop peppers (or peppadews)
1/3 cup red onions (minced)
2 tbsp fresh dill (roughly chopped)
2 tbsp fresh parsley (roughly chopped)
2 tbsp fresh mint (roughly chopped)
2 tbsp fresh basil (roughly chopped)

Steps:

  • Whisk together olive oil, lemon zest, lemon juice, white balsamic reduction, minced garlic and salt and set aside.
  • Prepare couscous according to the directions and fluff with a fork. Pour into a large mixing bowl to cool for at least 10 minutes.
  • Stir in Olive Oil and Lemon Dressing.
  • Add chopped olives, feta, peppers, and red onions and stir.
  • Stir in dill, parsley, mint, basil and salt.
  • Toss everything together and season with more salt and lemon juice if needed.

Soft and almost porridgelike in texture, it satisfies the same urge as polenta or risotto. Lemon zest and fresh herbs make it bright, while feta, added at the end, gives the whole thing a creamy richness. Save leftovers to bring to work for lunch the next day; they pack up perfectly. Steps:

  • Heat oven to 450 degrees. In a 9-inch baking dish, cake pan or gratin dish, toss together tomatoes, scallions, 2 tablespoons oil, 1 tablespoon vinegar, garlic, 1/2 teaspoon salt, pepper and oregano sprigs. Roast until tomatoes are tender, about 15 minutes.
  • While tomatoes roast, heat the stock until it boils, then stir in remaining 1 teaspoon salt, adding more to taste. (You want a well-seasoned broth here to flavor the couscous.) Stir in cilantro, lemon zest and cumin.
  • Remove tomatoes from oven and fold in couscous, chickpeas and hot stock mixture. Cover pan tightly with foil, and return to oven for 20 minutes.
  • Remove foil and fold in about 3/4ths of the feta (save the rest for garnish) and Parmesan. Bake uncovered until feta starts to melt, another 5 minutes.
  • To serve, pull out and discard herb sprigs if you like, and spoon couscous into bowls. Top with remaining feta, lots more herbs, pepper and a drizzle of olive oil and balsamic vinegar.

1 cup couscous
boiling water
1/2 cup parsley, chopped
1 green onion, diced
1 tomatoes, diced
1/2 red pepper, diced (or yellow or orange)
1/2 cup feta, crumbled
1/4 cup almonds, whole
3 tablespoons olive oil
salt and pepper, to taste
ground fresh chili paste, to taste

Steps:

  • Boil water.
  • Pour couscous into a soup bowl. Add enough boiling water to cover couscous completely (even a bit more, depending on the type of couscous you have) and cover the bowl with a plate. Set aside for 8 minutes.
  • Chop parsley, green onion, tomato, and pepper.
  • When couscous is done (tender), scoop it into a bigger bowl and fluff it with a fork. Add chopped ingredients and mix together.
  • Add crumbled feta and whole almonds and stir to blend everything together.
  • Add olive oil and salt and pepper, and stir well once again.
  • Serve on two plates and add ground fresh chili paste as you eat, according to your taste! Enjoy!

1 cup pearl couscous (8 oz)
1 1/4 cup water (for boiling)
1/4 cup sliced or silvered almonds (2 oz )
2 cups pitted olives and feta (usually found in deli section )
3 bunches broccolini (stems and tops chopped )
1 tsp kosher salt (reduce by half if using table salt)
1/2 tsp black pepper
1/2 juice from 1/2 a lemon
1 tsp olive oil

Steps:

  • Begin by preheating the oven to 350° and preparing a baking sheet.
  • Wash and pat dry broccolini. Chop it and tossing with olive oil, salt, pepper and lemon juice. Spread evenly over baking sheet and roast for 10-12 minutes until tender and slightly charred. Remove from oven and set aside.
  • While the broccolini is cooking, bring the water to a boil in a large pot. Once water comes to a rolling boil, stir in couscous. Cover and turn off heat. Let sit, covered, for 10 minutes until all water is absorbed.
  • Once couscous is finished, fluff with a fork or spatula. Add broccolini, almonds and olive & feta mix (add brine from packaging if desired) to pot or large bowl and combine everything together. 1 tablespoon olive oil
1/2 teaspoon kosher salt
1 1/2 cup couscous
1/3 cup sun-dried tomatoes in oil, drained and diced
1/3 cup crumbled feta cheese
1/4 cup chopped green onion

Steps:

  • In a dry, non-stick fry pan over medium-high heat, toast the pine nuts, tossing often, until golden brown, about 3-4 minutes. Be sure to watch them closely as they can burn quickly once they get hot. Set aside.
  • In a medium saucepan, bring 1 1/4 cup water to a boil. Stir in the couscous, olive oil and kosher salt, cover, and remove from the heat. Let stand for 5 minutes.

  • Heat the oven to 400 degrees. In the center of a sheet pan, place salmon skin-side down. Pat the salmon dry, then coat with 2 tablespoons olive oil.   • While the salmon roasts, make the couscous: In a lidded pot over medium-high heat, toast the couscous, uncovered, stirring until fragrant, about 3 to 4 minutes. Reduce heat to maintain an active simmer, then cook until the couscous is tender and most of the liquid has been absorbed, 8 to 10 minutes. Drain the couscous in a colander, then drizzle with olive oil, tossing to coat. Stir in the arugula, letting it wilt. Leave in the sink to cool slightly while you make the dressing.
  • Prepare the dressing: In a serving bowl, combine the yogurt with 1/4 cup room temperature water and the zest and juice of 1 lime, then whisk until smooth. Add the remaining 1/2 teaspoon cumin, plus 1/4 cup feta, most of the herbs (reserving some for garnish) and the cucumber. Stir to combine, then season to taste with salt. Set aside.
  • Add the cooked couscous and arugula to the yogurt mixture, tossing to combine. Remove the salmon from the skin, then flake with a fork. Add half the salmon to the couscous, mixing it together. Place the remaining salmon on top, squeeze the roasted lime half over the dish, then garnish with the scallions, remaining feta, parsley and mint.
