This is light and fresh and accompanies fish (i.e. habanero-lime butter grilled salmon) and chicken well. It is a refreshing change to the rice or potato side dish, and everyone always loves it.

1 cup chicken broth
2 tablespoons fresh lemon juice
1 tablespoon lemon zest
1 tablespoon butter
¼ teaspoon salt
⅔ cup couscous
1 (2 ounce) jar sliced pimento peppers, drained
2 tablespoons toasted pine nuts
2 tablespoons chopped fresh parsley

Steps:

  • Stir chicken broth, lemon juice, lemon zest, butter, and salt together in a saucepan; bring to a boil. Add couscous to the liquid and stir to coat completely. Place a cover on the saucepan, remove from heat, and let couscous soak in hot liquid until the moisture is mostly absorbed, about 5 minutes.
  • Fluff couscous with a fork. Stir pimento peppers, pine nuts, and parsley into the couscous.

This light couscous salad with Mediterranean flavors is a perfect summer side dish.

10 ounces plain couscous
2 cups chicken or vegetable broth
2 tablespoons white wine vinegar
2 tablespoons lemon juice
3 tablespoons olive oil
12 fresh mint leaves (sliced thin)
1/2 English cucumber (seeded and diced)
3 Roma tomatoes (seeded and diced)
3 ounces reduced-fat feta

Steps:

  • Bring broth to a boil. Stir in couscous. Cover, remove from heat, and let stand for 5 minutes. Remove lid, fluff with a fork, and allow to cool uncovered for about 10 minutes.
  • Meanwhile, in a large salad bowl, whisk together vinegar, lemon juice, and olive oil. Stir in mint, cucumber, tomatoes, and cooked couscous, and stir together to combine. Add feta and stir gently to evenly distribute the cheese.

We love this light couscous salad - it doubles as a side, can be the main event or works well topped with grilled chicken or Adam's favorite, shrimp! With lots of texture from crisp cucumber, sweet tomatoes, crunchy nuts and raisins, this is certainly one of our favorites. You can even make it ahead of time. See the notes section below for our tips.

1 1/2 cups dried Israeli couscous, also called pearl couscous
Salt and fresh ground black pepper
1/4 cup extra-virgin olive oil
1 teaspoon Dijon mustard
1/2 teaspoon honey
1 teaspoon finely grated lemon zest
2 to 4 tablespoons fresh squeezed lemon juice, depending on taste
1 medium English cucumber, diced
1 large tomato, diced
1/2 cup coarsely chopped fresh herbs; use any combination of fresh parsley, cilantro, basil, dill, or mint
1/4 cup chopped walnuts, toasted
1/4 cup raisins, we love golden raisins

Steps:

  • Bring a large saucepan of salted water to a boil. Add couscous and cook until tender, 8-10 minutes. Drain.
  • While the couscous cooks, in a large bowl, whisk the oil, mustard, honey, lemon zest, lemon juice, 1/2 teaspoon of salt, and 1/4 teaspoon pepper. Add the drained couscous to the dressing and mix well.
  • Stir in the cucumber, tomato, herbs, walnuts and raisins. Taste for seasoning and adjust with salt and/or pepper as needed. Enjoy warm or cover then refrigerate until cool, about 1 hour.

Not your regular leaf, potato or pasta based salad!! When I serve this, if there are leftovers, I have to send it home with a particular friend of mine. She loves this. She always asks me to make it for her pot luck parties now too!!

3 garlic cloves, minced
1 tablespoon margarine
1 1/4 cups water
1 cup couscous (uncooked)
1/2 teaspoon salt
1 cup chopped fresh parsley (1/3 cup if you are using the dried stuff)
1/4 cup chopped mint leaf
4 green onions, chopped
1 pint cherry tomatoes or 1 pint grape tomatoes, cut in half
1/2 English cucumber, diced (I leave the skin on for extra nutrients, but you can peel if you prefer)
1 (19 ounce) can chickpeas, drained
2 tablespoons lemon juice
2 tablespoons olive oil
1 tablespoon ground cumin
3/4 cup feta cheese, crumbled

Steps:

  • In a medium pot, boil water with garlic, margarine and salt. When water is at a rolling boil, add couscous. Stir a couple times. Turn off heat and cover the pot. Leave for 10 minutes without opening the lid.
  • After 10 minutes, give the couscous another stir and let sit, uncovered to cool.
  • Meanwhile, while the couscous is busy cooling, in a large bowl, combine all the remaining ingredients except for the feta cheese, lemon juice and the oil.
  • Add the couscous to the bowl. Mix thoroughly to combine everything.
  • When everything is combined, you can add the lemon juice and oil and mix again. Sometimes, I find I may have to add a litlle bit more lemon juice, but that is my preference --
  • Add feta cheese just prior to serving the salad and mix again.

This keeps well for days - I usually make a big batch and have it for lunch through the week.

Steps:

  • Make the dressing: combine 2 tbsp of olive oil, the orange juice, lemon juice and zest, basil, white wine vinegar and honey in a jar with 1/4 tsp salt and 1/2 tsp black pepper. Put on the lid and shake.
  • Cook couscous as per pack instructions.
  • Par-boil potato wedges in boiling water then fry with 1 tbsp oil until golden. Add them to the couscous, soya beans and spring onions; add dressing. Toss, sprinkle over goat's cheese, serve.

6 green onions, chopped
1/2 cup English cucumber, diced
1 cup chickpeas, drained
1/4 cup parsley, chopped
2 tablespoons mint, chopped (or dill)

1 lemon, zest and juice of, grated
salt & freshly ground black pepper
1/3 cup hazelnuts, toasted and chopped

Steps:

  • In a medium saucepan, bring 2 cups water to boil. Stir in couscous and immediately remove from heat. Cover and let stand until water is absorbed, about 8 minutes. Fluff with a fork and transfer to a large bowl.
  • Stir in green onions, cucumber, chickpeas, parsley, mint, oil, lemon zest and lemon juice.

1 package (10 ounces) couscous

1/2 cup dried cherries
1/4 cup pine nuts, toasted
12 fresh basil leaves, thinly sliced
1/4 cup lemon juice
1-1/2 teaspoons salt

Steps:

  • In a small saucepan, bring broth and 1 tablespoon oil to a boil. Stir in couscous. Cover and remove from the heat; let stand for 5 minutes or until water is absorbed. Fluff with a fork.
