Steps:
- Gently warm tortillas until they become soft and pliable.
- Divide ingredients into 6 parts and place some in the middle of each burrito, leaving 2-4 inches without ingredients on one side.
- Fold up the part of the burrito without ingredients over the burrito, then fold the top down and roll burrito, securing with a toothpick if necessary to keep it from unrolling.

BBQ CHICKEN & RICE BURRITO (COWBOY CRUNCH BURRITO)
This is a copycat of a burrito I ate while visiting a small chain in Harrisburg, PA. It was excellent and so easy to recreate a similar taste at home -- and still be healthy! You can use any rice you like, and of course, you don't have to use the low-fat or wheat options if you don't want to. It should turn out great any way you do it!

- Prepare rice as directed on bag, or in rice cooker.
- Coat diced chicken with cajun seasoning.
- Cook chicken over medium heat in a skillet. You may saute in butter/margarine or in a light cooking oil or spray, your choice.
- Once chicken is cooked, switch to low heat and add barbecue sauce and ranch dressing. Mix until chicken is coated in sauces.
- Once rice has finished cooking, add to skillet with chicken mixture.
- Crush tortilla chips and add on top of chicken and rice.
- Mix all ingredients.
- Serve on warm tortilla with lettuce, tomato, and cheese, if desired.
- * You can also add refried beans if you'd like. Really, you can customize this to your liking. So easy and so good!

- In a large resealable bag, toss pork meat with the taco seasoning mix until coated. Heat oil in a skillet over medium-high heat. Fry the seasoned pork in the hot oil, stirring occasionally until pork is no longer pink.
- Stir the beans, salsa and apricot preserves into the skillet with the pork. Reduce heat to low, and simmer until heated through, about 10 minutes.
- Spoon 1/3 cup of the pork mixture into each taco shell, and top with sliced olives.

BEEF AND BEAN BURRITOS

- Preheat the oven to 170 to 180 degrees F.
- In a large skillet over medium heat, cook the onions until softened. Then add the ground beef and cook until the beef is cooked through. Add the cumin, chili powder, oregano and salt and stir to combine. Pour 2 cans of the Mexican tomato sauce into the meat and simmer over low heat for 5 minutes. Add a little water if the mixture gets too dry.
- Meanwhile, heat the refried beans in a saucepan over medium-low heat. Add the cheese, and stir it in till its melted. Remove from the heat.
- Heat the tortillas in the microwave for 1 minute, and then spread a small amount of beans on each tortilla. Add a small amount of the meat. Fold over the ends of the tortilla, and then roll them up. Repeat with the rest of the tortillas. Then place them in a large baking dish, cover with foil and keep warm in the oven.
- When ready to serve, drizzle the remaining can of tomato sauce over all of the burritos and sprinkle with more grated Cheddar. Return to the oven for a couple of minutes just to melt the cheese.
- Sprinkle the tops with the cilantro leaves and serve immediately to the fork-bangers in your life. They'll kiss you and hug you. Repeatedly.
AWESOME BREAKFAST BURRITOS

- In a large cast-iron skillet over medium-high heat, add the bacon and onion. Cook until the bacon is crisp and the onion is softened, 6 to 8 minutes. Remove to a paper towel-lined plate. Add the sausage to the same skillet and, using the back of a wooden spoon, break it up into small bits. Cook until golden brown, 5 to 7 minutes. Add the bacon and onion back to the skillet, along with the ham. Pour in the whisked eggs and use a rubber spatula to scramble the eggs and meat. Cook until the eggs are set, about 5 minutes, then add the cheese, salsa verde and chiles and stir everything together. Season with salt and pepper.
- Divide the scramble among the 12 tortillas. Roll up the tortillas, leaving the ends open. Wrap each burrito in foil. Serve immediately.
- To make ahead: Refrigerate the burritos after assembling; reheat the next day at 350 degrees F for 35 minutes in a pan covered with foil.
HOMESTEAD COWBOY BEANS
I have an enormous family and all of the men go trail riding several times a year and these beans are one of the things they look forward to. My aunts and I put together their favorite combination several years ago, and have it ready at their camp, and they are some happy cowboys! You can mix different beans to your liking (lima, kidney, etc.), but the boys in our family like this mixture the best.

- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and crispy, 10 to 12 minutes. Drain bacon slices on paper towels and crumble when cool enough to handle.

- In a large pot, add in oil and heat over medium/high heat. Once heated place the beef in and brown on both sides ~2-3 min per side. As the meat it browning season both sides with all of the seasonings.
- Add 2 cups of water to the pot and turn the heat to low. Cover and simmer for 2 hours or until meat is tender enough to shred.
- Once the meat is tender remove the roast to a cutting board and shred apart with 2 forks. Put the shredded meat back into the pot with the liquid that remained from simmering.
- Add diced poatoes to pot and turn heat to medium. Cover with lid slightly cracked and cook until the potatoes are tender ~10 minutes.

- In a small mixing bowl or glass measuring cup, combine the chipotle pepper, adobo sauce, Weber® Cowboy Seasoning, and Member’s Mark™ 100% Pure Olive Oil. Whisk to combine (add in more olive oil if you think this amount in not enough to cover your steak). Place the steaks in a large gallon size plastic zip top bag and pour the marinade over the steak. Close the bag shut and massage the marinade all over the steak. Place the steaks in the fridge for 30 minutes or overnight.

- Preheat oven to 335º. Once oven is ready, place 6 strips of bacon on a baking rack with a baking tray underneath. Season with onion powder, black pepper and a pinch of salt. Bake for 20 minutes. (It's better this way-I promise...less messier for sure!) Cook your hash brown by baking or use an air fryer for the same time and temperature as listed for the bacon. Pre-heat your cast iron pan. Chop up your chile habanero pepper, red onion, green pepper, yellow pepper, smoked turkey sausage. Once bacon is cooked, chop it up as well. Line your pre-heated pan with olive oil. Mix with your hands again and knead the flour well. It should be wet a tacky yet form a dough. Knead for as long as you need to until the dough is perfect for you and let it rest.(approximately 12-15 minutes). Break apart your dough and make dough balls resembling a golf ball. Now you'll need your tortilla Press. Place the ball in the tortilla press with the clear film on both sides of the tortilla and press down. Place your tortilla in a cast iron pot on medium high and already sprayed with Pam or a non-stick spray. It should cook on each side for approximately 2-5 minutes. Assemble your burritos and ENJOY!

- Heat the peppers over high heat or on the grill until they blister, rotating frequently. Place the peppers in a plastic sack with a tablespoon of cold water and seal. Let rest a few minutes, then remove from the sack and peel off the outer skin. Dice and remove the seeds, if desired. Set aside.
