Texas Cowboy Stew image

Hearty, filling and man-pleasing describes this stew. Link sausage, cumin, chilies, and chili powder is what gives this soup its Southwest flavor. This dish is quick, easy, and tastes best when it simmers in a slow cooker or even on the stove all day. Bake some Mexican cornbread, toss a simple green salad, and you have a great meal.

2 pounds ground beef
2 (16 ounce) packages kielbasa sausage, sliced into 1/2 inch pieces
2 cloves garlic, chopped
1 onion, chopped
2 (14.5 ounce) cans peeled and diced tomatoes, drained
4 medium baking potatoes, peeled and diced
2 (15 ounce) cans pinto beans, with liquid
2 (15.2 ounce) cans whole kernel corn, with liquid
1 (14.5 ounce) can diced tomatoes with green chile peppers, with liquid
1 (10 ounce) package frozen mixed vegetables
4 cups water
2 teaspoons ground cumin
2 teaspoons chili powder
salt and pepper to taste

Steps:

  • Crumble the ground beef into a large skillet over medium-high heat. Add the sausage, garlic and onion; cook and stir until the meat is no longer pink. Drain off grease, and transfer the contents of the skillet to a large pot.
  • Pour the tomatoes into the pot with the meat, and stir in the potatoes, pinto beans, corn, diced tomatoes with chilies, mixed vegetables and water. Season with cumin, chili powder, salt and pepper. Cover, and simmer over medium-low heat for at least 1 hour. Stir occasionally. The longer this stew cooks, the better it gets.

1 ½ pounds ground beef
1 onion, chopped
1 (14.75 ounce) can cream-style corn
1 (15 ounce) can chili with beans
1 (15 ounce) can baked beans with pork
1 (15 ounce) can tomato sauce
1 (4 ounce) can diced green chiles

Steps:

  • Crumble the ground beef into a large skillet or Dutch oven over medium-high heat. Add onion; cook and stir until beef is no longer pink. Drain off grease. Reduce heat to medium-low and stir in the corn, chili with beans, baked beans, tomato sauce and green chilies. Cover and simmer for 30 minutes, stirring occasionally.

1 tablespoon canola or vegetable oil
1 cup chopped onion
1 pound lean ground beef or ground chuck
1 can (15 ounces) prepared chili beans
1 can (15 ounces) pork and beans
1 can (12 to 15 ounces) cream-style corn
1 can (15 ounces) tomato sauce
Optional: 1 green or red bell pepper, chopped
Garnish: sour cream, shredded cheese, chopped avocado

Steps:

  • Heat the oil in a large skillet over medium-high heat until it begins to shimmer.
  • Add the onion and bell pepper, if desired. Sauté for 5 minutes or until the vegetables start to soften.
  • Add the ground beef and cook, stirring often and breaking up any large clumps of meat, until no pink remains. Drain well.
  • Combine the beef mixture in the slow cooker with the beans, cream-style corn, and tomato sauce; cover and cook on low for 5 to 8 hours.

This is delicious and very easy to make! I like making this because it's tasty and it makes plenty of leftovers for later in the week. And it's even better heated up a day or two later! Serve with homemade cornbread! Found this recipe in the Texas Country Reported Cookbook, which is one of my favorites! I'm not real sure about the cooking time, but I think it takes about an hour!

1 tablespoon butter or 1 tablespoon margarine
1 lb ground beef
1 large onion, chopped
1/4 cup chopped celery
1/4 cup chopped green bell pepper
2 garlic cloves, pressed
1/2 teaspoon sugar
3 -4 carrots, sliced
1 (14 ounce) can diced tomatoes
1 (16 ounce) can whole kernel corn
1 (32 ounce) can ranch style beans
6 medium potatoes, peeled and diced
3 cups water, more if desired
salt, to taste
pepper, to taste

Steps:

  • Brown meat in butter.
  • Transfer to a large stockpot and add remaining ingredients.
  • Cook until potatoes and carrots are done.
