This steak chili is the best beef chili recipe ever. That's a big statement, but it's true. It has a rich flavor and the tender chunks of slow-cooked chuck steak are dreamy. We go easy on the beans, but you can either omit them or add extra as you like. You'll want to keep this steak chili recipe in your back pocket so you can pull it out every weekend.

Number Of Ingredients 13

2 lb stewing beef (cut into bite-sized pieces)
1 teaspoon EACH: salt and pepper
2 tablespoons oil (divided)
1 large onion (minced)
4 cloves garlic (minced)
2 stalks celery (minced)
5.5 ounce can tomato paste
3 tablespoons chili powder (see notes)
1 teaspoon EACH: oregano and cumin
3 cups beef bone broth (see notes)
28 ounce can crushed tomatoes
2 tablespoons honey
14 ounce can kidney beans (drained and rinsed (omit for paleo chili))

Steps:

  • Dry the beef well with paper towels then sprinkle the salt and pepper over the top.
  • Heat 1 tablespoon of the oil in a large pot over medium-high heat. Add half of the beef and brown well on 2 sides. Remove it from the pan and repeat with the remaining beef, adding more oil as needed. Remove the second batch of browned beef from the pot.
  • Add the remaining tablespoon of oil to the pan. Add the onion and cook until it is soft and starts to brown, about 5 minutes. Add the garlic and celery and cook for 2 minutes.
  • Push the veggies to the side of the pan and add the tomato paste. Let it cook for 2-3 minutes, or until it becomes sweet smelling. Add the chili powder, oregano, and cumin to the pot and mix.
  • Pour the beef broth into the pot and scrape the bottom of the pot with your mixing spoon to remove any of the dark stuck on bits. Add the crushed tomatoes, honey, and browned beef and bring the pot to a boil. Reduce the heat to low and cover the pot. Very gently simmer the steak chili for 2 hours. (See notes)
  • Just before serving, add the beans and let them warm. Season to taste with salt.

CHILI INGREDIENTS
2 medium (or large) steaks (grilled and chilled, cut up small )
3 c water (or tomato juice)
3 large onions (chopped)
6 - 8 large tomatoes (cut up)
2 large (or 1 huge) zucchini (chopped)
1 large red bell pepper (chopped)
1 large green bell pepper (chopped)
4 clove garlic (minced)
1 bunch cilantro, fresh (chopped)
1 can(s) (15-16 ounces) whole kernel corn
2 Tbsp basil, dried
1 Tbsp ground cumin
1 tsp salt (optional)
1 tsp ground black pepper
2 tsp garlic powder (do not use garlic salt!)
1/4 tsp ground cayenne pepper
2 can(s) (large) favorite cheap spaghetti sauce
2 can(s) black beans
2 can(s) kidney beans
3 can(s) chili beans (already seasoned)
OPTIONAL INGREDIENT
1 large can tomato paste (for a thicker chili)

Steps:

  • 1. Cut up the chilled steak into very small pieces. Place in large kettle with the water (or tomato juice). Bring to a boil. Simmer for about 10 minutes while chopping veggies up.
  • 2. Chop up the onion, tomato, peppers and zucchini. Add to the kettle with the steak (you can add more water or juice if desired). Bring to a full boil. Reduce heat and simmer until all the veggies are cooked (about 15 minutes).
  • 3. Chopped Zucchini can be chopped large or small.
  • 4. Add the pasta sauce.
  • 5. Add canned beans and corn.
  • 6. Add the spices. Simmer for 10 minutes
  • 7. Serve! *** If you like a thinner chili, add more liquid. If you want a thicker chili add a large can of tomato paste.

1 1/2 teaspoons ancho chili powder, or other chili powder
1 1/2 teaspoons fine ground espresso coffee
1/2 teaspoon brown sugar
1/4 teaspoon dry mustard
1/4 teaspoon ground coriander
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 1/4 pound shoulder center steak (Ranch Steak), or top sirloin, about 1 1/4-inch thick

Steps:

  • Spray a large nonstick skillet with cooking spray and preheat it over medium-high heat. In a small bowl combine all the ingredients for the rub and coat the steak well on both sides. Cook steak for 14 minutes, turning once, for medium to medium-rare. Allow steak to sit for 5 minutes before slicing.

While searching for an authentic Texas Style Chili, I discovered this recipe from http://recipes.suite101.com/article.cfm/cowboy_steak_chili. There are so many chili recipes with many variations for all types of taste buds, but this one really knocked my socks off. While the chili recipe above will stand up even if all you add is chili powder, this mix will give it more complex depth of flavor. The idea comes from Cowboy Steak, where the essential "Cowboy" element is ground coffee. Was this the result of a creative campfire cook. Or some happy chuck wagon mistake? You can also use this seasoning to make Cowboy Steak. If you do, it is traditional to add onion powder and garlic powder to the mix. You may want to mix up enough to use later as a dry rub for ribs or chops or even chicken. If you do, bloom the mixture just before using. The only change I made was to cook the chili for 8 hours on low in the crock pot before serving. I truly believe that one of the secrets to good chili is a looooooonnnnngggg cooking time. YEEHAA

1 lb sirloin steak, cubed bite-size
4 slices bacon (or 3 Tbsp vegetable oil)
1 lb chorizo sausage (or ground pork)
2 medium onions, chopped
1 bell pepper, seeded and chopped
2 celery ribs, chopped
4 garlic cloves, smashed
1 (4 ounce) can diced green chilies
2 (16 ounce) cans kidney beans, drained and rinsed
1 (16 ounce) can corn (optional)
1 (16 ounce) bottle dark beer or 1 (16 ounce) bottle ale
1 (28 ounce) can chopped tomatoes
3 tablespoons chili powder
1 tablespoon coffee beans, dark freshly finely ground
1 tablespoon paprika
1 tablespoon ground cumin
1 tablespoon brown sugar
1/2 teaspoon salt
1/2 teaspoon dry mustard
1/2 teaspoon ground coriander
1/2 teaspoon fresh ground black pepper
1/4 teaspoon cayenne (or to taste)

Steps:

  • Turn the crock pot on to low.
  • Prepare the Cowboy Steak Seasoning following the separate recipe posting.
  • Roll cubed steak around in the seasoning mix until they are thoroughly coated.
  • In a large, heavy fry pan over medium high heat, brown off the bacon (if using) until crisp.
  • Remove and drain on paper towels or clean newspaper, reserving the drippings.
  • Brown the coated cubes of steak in the bacon drippings (or oil), working in batches if necessary.
  • Transfer browned steak to the crock pot.
  • Add the chorizo or pork and cook it down, stirring, for about 5 minutes.
  • Transfer the chorizo or pork to the crock pot.
  • Add all the "aromatics" to the fry pan and sweat them down, stirring frequently, about 5 minutes.
  • Transfer them to the crock pot.
  • Stir in all the "other good stuff" and the reserved bacon to the crock pot.
  • If there's not enough liquid to cover, add some beef stock or more beer. Put the lid on. Cook for @ 7 hours and then give it a taste and adjust the seasoning if needed and let it simmer at least another hour. The longer the better!

2 tablespoons olive oil
1 teaspoon coarse salt
1 large onion, sliced
2 large garlic cloves, chopped
2 tablespoons chopped fresh cilantro
1 tablespoon plus 1 teaspoon chili powder
1/4 teaspoon dried crushed red pepper
1 tablespoon water
2 poblano chilies, seeded, sliced
2 8-ounce New York strip steaks (about 1 inch thick), trimmed
Additional chopped fresh cilantro

Steps:

  • Heat oil and salt in heavy large skillet over medium-high heat. Mix in onion, garlic, 2 tablespoons cilantro, 1 tablespoon chili powder and crushed red pepper. Add 1 tablespoon water. Cover skillet and cook onion mixture 5 minutes, stirring occasionally. Uncover and continue cooking until onion is tender and golden, stirring frequently, about 3 minutes. Add chilies and sauté until tender about 6 minutes. Transfer onion mixture to plate.
  • Rub each steak with 1/2 teaspoon chili powder. Season with salt and pepper. Increase heat to high and add steaks to same skillet. Cook as desired, about 6 minutes per side for medium-rare. Transfer to platter. Top steaks with cilantro. Surround with onions and chilies and serve immediately.
