My Mexican grandmother would use leftover corn tortilla chips in our meatloaf and everyone loved it! They all wanted seconds along with the recipe. A delicious Mexican-American comfort food.

1 ½ pounds lean ground beef
1 cup crushed tortilla chips
¾ cup shredded pepper Jack cheese
1 small onion, chopped
1 (1 ounce) packet taco seasoning mix
2 eggs, beaten
½ cup milk
¼ cup mild red taco sauce, or more to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Thoroughly combine beef, tortilla chips, pepper Jack cheese, onion, and taco seasoning in a bowl.
  • Whisk eggs, milk, and taco sauce together in a separate bowl. Add to meat mixture and stir until well combined.
  • Press mixture into a 9x5-inch loaf pan and top with a strip of taco sauce down the center.
  • Bake in the preheated oven until cooked through and browned on top, 45 to 60 minutes.

1 pound cubed or minced pork stew meat
1 (1.25 ounce) package taco seasoning mix
1 tablespoon vegetable oil
1 cup chunky salsa
1 (16 ounce) can chili beans, undrained
⅓ cup apricot preserves
12 taco shells
1 (10 ounce) can sliced ripe olives, for topping

Steps:

  • In a large resealable bag, toss pork meat with the taco seasoning mix until coated. Heat oil in a skillet over medium-high heat. Fry the seasoned pork in the hot oil, stirring occasionally until pork is no longer pink.
  • Stir the beans, salsa and apricot preserves into the skillet with the pork. Reduce heat to low, and simmer until heated through, about 10 minutes.
  • Spoon 1/3 cup of the pork mixture into each taco shell, and top with sliced olives.

1 lb. lean ground beef
3/4 cup finely chopped yellow onions
1/3 cup seasoned dry bread crumbs
1/4 cup KRAFT Sweet Honey Barbecue Sauce
1 egg, beaten
2 tsp. chili powder
1 pkg. (24 oz.) ORE-IDA STEAM N' MASH Cut Russet Potatoes
1 Tbsp. butter or margarine
1 can (5 oz.) evaporated milk
1 Tbsp. chopped fresh parsley
1 tsp. garlic powder
1/2 cup OSCAR MAYER Real Bacon Bits
1/4 cup french-fried onions
2/3 cup KRAFT Mexican Style Shredded Four Cheese with a TOUCH OF PHILADELPHIA

Steps:

  • Heat oven to 375ºF.
  • Mix meat, yellow onions, bread crumbs, barbecue sauce, egg and chili powder just until blended; press onto bottom of 9-inch square baking dish sprayed with cooking spray.
  • Bake 20 to 25 min. or until done (160ºF).
  • Meanwhile, microwave potatoes as directed on package; place in medium bowl. Add butter, milk, parsley and garlic powder; mix well. Gently stir in bacon and French fried onions.
  • Remove baking dish from oven. Heat broiler. Spread potato mixture over meat mixture; top with cheese. Broil, 4 inches from heat, 3 to 5 min. or until cheese is melted.

2 lbs ground beef ((lean ground beef up to 80/20 ground chuck))
1 1/2 cups tortilla chips ((crushed))
3/4 cup pepper jack cheese ((or a combination with cheddar or Colby, grated))
1/2 cup milk
2 large eggs ((at room temperature))
1 packet taco seasoning mix ((1 ounce, or see recipe))
1/2 Tbsp dried minced onion
1/3 cup red taco sauce ((mild or medium))

Steps:

  • Preheat your oven to 350°F (175°C).
  • In a medium to large-sized mixing bowl combine the meatloaf ingredients (ground beef, tortilla chips, cheese, milk, eggs, taco seasoning, dried minced onion) with the exception of the taco sauce. Mix just enough to combine, and do not over-mix the meatloaf.
  • Transfer the meatloaf mixture into a 9x5-inch loaf pan and shape the loaf (leaving a well around the edges gives the fat somewhere to drain off to).
  • Bake at 350°F (175°C) for 45 minutes, then remove the meatloaf and top with red taco sauce if desired. Return to your oven and continue cooking an additional 10-15 minutes (55-60 minutes total) or until the meatloaf has an internal temperature of 160°F (71°C) before serving.
  • Remove the fully cooked meatloaf from your oven and loosely tent with a sheet of aluminum foil. Allow the meatloaf to rest for 10 minutes before slicing and serving.

  • Preheat the oven to 450 degrees F (220 degrees C). Prepare the macaroni and cheese according to the directions on the package.
