- Roll out pastry to fit two 9-in. deep-dish pie plates. Transfer pastry to pie plates; flute edges. Line unpricked pastry with a double thickness of heavy-duty foil. Fill with dried beans, uncooked rice or pie weights., Bake at 450° for 8 minutes. Remove foil and weights; bake 5 minutes longer. Cool on a wire rack., Place potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender., Meanwhile, in a large skillet, cook beef and onions over medium heat until meat is no longer pink; drain. Stir in water and taco seasoning. Bring to a boil; cook until liquid is evaporated. Spoon into pastry shells., Drain potatoes and place in a large bowl. Add the milk, butter, garlic powder, salt and pepper; mash until smooth. Spread over meat mixture., Sprinkle one pie with half of the cheeses. Cover and freeze for up to 3 months. Bake remaining pie, uncovered, at 350° for 35 minutes. Sprinkle with remaining cheeses. Bake 5-10 minutes longer or until heated through and cheese is melted., To use frozen pie: Thaw in the refrigerator overnight. Remove from the refrigerator 30 minutes before baking. Cover and bake at 350° for 1-1/2 hours. Uncover; bake 10-15 minutes longer or until heated through.

- Prepare mashed potatoes according to package directions. Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add the tomatoes, corn, olives, taco seasoning, chili powder, salt and garlic powder. Bring to a boil; cook and stir for 1-2 minutes. , Transfer to a greased 2-1/2-qt. baking dish. - Preheat oven to 400 degrees F.
- Heat a 10-inch oven-safe skillet over medium-high heat and add smoked sausage, cook until browned. Add garlic, onion and bell pepper and cook until vegetables are soft, about 6 minutes.
- Stir in chili powder, cumin, salt, tomatoes with their juice and beans. Cook for 3 - 5 minutes, until mixture starts to bubble. Turn off heat and stir in cheese.
- Mix jalapeno into the prepared corn muffin mix. Spread corn muffin batter over the mixture and bake until golden brown and cooked through, 20 - 25 minutes.

TACO SHEPHERD'S PIE
My kids love tacos and shepherd's pie so I put the two of them together for another family favorite!

Steps:
- Preheat oven to 350°F.
- Cook potatoes in boiling salted water until tender, about 20 minutes.
- Drain potatoes and mash as usual.
- Heat 1 tablespoons butter in saute pan; add onion, and saute for 5 minutes.
- Add ground beef, and cook until beef is lightly browned; drain off any excess fat.
- Add taco seasoning mix and cook as per package directions.
- Remove from heat.
- Place meat mixture into ovenproof casserole.
- Cover with corn.
- Cover with mashed potatoes.
- Sprinkle with grated cheese.
- Bake at 350 degrees for 30 minutes, or until potatoes are light golden.
- Serve.

- Brown ground beef and drain, return to pan.
- Add taco seasoning and salsa, stir to combine.
- Prepare mashed potatoes as directed on package.
- In a casserole dish, layer first a thin layer of mashed potatoes.
- Next add half of the ground beef mixture, then half the frozen vegetables.
- Sprinkle 1/2 cup of cheese on top of the vegetables.
- Next layer again, potatoes, beef mixture, vegetables and cheese.
- Top with a final layer of mashed potatoes.
- Cover with foil and bake at 350 for 30 minutes.

- Place potatoes in a large saucepan and cover with 1-inch water. Stir in 1 tsp. salt and bring to a boil over HIGH heat. Reduce heat to a simmer, cover and cook until potatoes are tender when pierced with a fork.
- While potatoes are cooking, heat a separate large non-stick skillet over MEDIUM heat until hot. Add Ground Beef and cook 8-10 minutes, breaking beef into small crumbles and stirring occasionally. Add garlic and continue cooking for 1 minute. Drain, sprinkle in the taco seasoning, add salsa and stir to combine. Cook for a few minutes, stirring frequently, until the mixture comes to a simmer and thickens. Remove from heat and gently stir in black beans.
- Drain potatoes and return to pot. Mash potatoes until smooth. Add butter, milk, green chilies and 2/3 cup of cheese. Stir until well combined, cover and set aside.
