Crab Tartlettes Recipe

Ingredients:

  1. spanish olive oil
  2. onion
  3. garlic clove
  4. dry white wine
  5. eggs
  6. milk
  7. canned crabmeat
  8. parmesan cheese
  9. flat leaf parsley
  10. nutmeg
  11. prepared tart shells

Steps:

  1. heat olive oil in a pan
  2. add onion & cook for 5 minutes , or until softened but not brown , followed by garlic for another 30 seconds
  3. add a splash of wine & cook for 1 2 minutes , or until most of the wine has evaporated
  4. lightly whisk the eggs in a large bowl followed by the milk or cream
  5. add the crabmeat , cheese , parsley & the onion mixture
  6. season with nutmeg and salt & pepper to taste
  7. mix well
  8. carefully spoon the mixture into the tart shells , taking care not to overfill them
  9. bake in a preheated 375f oven for 25 30 minutes
  10. serve hot or at room temperature , garnished with fresh dill sprigs
