Crab Wontons With Szechuan Blackberry Sauce Recipe

Ingredients:

  1. blackberry
  2. sake
  3. cornstarch
  4. salt
  5. red pepper flakes
  6. ginger
  7. lime juice
  8. garlic cloves
  9. honey
  10. spinach leaves
  11. butter
  12. onions
  13. cream cheese
  14. lemon juice
  15. dry breadcrumbs
  16. crabmeat
  17. pepper
  18. tabasco sauce
  19. wonton wrappers
  20. peanut oil

Steps:

  1. to make the sauce , puree blackberries and mix with remaining sauce ingredients in a medium saucepan
  2. bring to a boil or medium-high heat
  3. cook until thickened
  4. sauce may be made a day ahead
  5. to make the filling , wash the spinach
  6. with water still clinging to leaves , place in a large pan over medium-high heat
  7. cook until spinach just begins to wilt and most of the water has evaporated
  8. empty onto a cutting board and chop fine
  9. set aside
  10. melt butter in a saute pan over medium heat
  11. add onion and saute until translucent , about 5 minutes
  12. reduce heat to low
  13. add cream cheese
  14. when cheese begins to soften , add lemon juice and mix
  15. remove from heat and stir in crab , bread crumbs and spinach
  16. to assemble , place 1 to 2 teaspoons filling on each wonton wrapper and seal according to package directions
  17. heat about 1 / 4 inch of peanut or vegetable oil in a wok or saut pan until hot but not smoking
  18. place a single layer of wontons in the hot oil and fry 2 to 3 minutes until golden brown
  19. drain on paper bags or towels
  20. serve immediately , drizzled with sauce
