This easy Crab Avocado sandwich makes for a perfect summer staple with its healthy yet irresistibly delectable taste. Packed with fresh guacamole and crab salad wrapped in soft buttery bread, this recipe is a perfect complement to a bright and sunny day.

6 milk bread buns (or any bread of your choice) (sliced in half)
1 tbsp butter
2 avocado
2 tbsp cream cheese
salt and pepper (to taste)
8 sticks imitation crab
1/2 red bell pepper (julienned)
3 tbsp mayonnaise
2 tbsp onion (diced)
1 tbsp pickle (optional) (diced)
1 tbsp lemon juice
1/2 tbsp dijon mustard
1 tbsp honey
salt and pepper (to taste)

Steps:

  • In a medium bowl, mash avocados and add cream cheese, salt, and pepper. Mix well together.
  • Shred crab imitation sticks with a fork, and add to a separate bowl. Add red bell pepper. In a another small bowl, combine mayonnaise, diced onion, diced pickle, lemon juice, dijon mustard, honey, salt, and pepper. Add to the crab salad and combine well.
  • Prepare a skillet on medium-low heat and melt butter onto the surface. Lightly toast one side of bread slice until golden brown.
  • Assemble sandwiches by filling them with guacamole and crab salad. Serve and store leftover salad in the fridge.

1 pound cooked shrimp, chopped
1 pound jumbo lump crabmeat, picked through for bits of shell
1/2 cup mayonnaise
2 tablespoons chopped fresh parsley, plus 1/4 cup whole leaves
6 to 8 radishes, finely chopped, plus 2 thinly sliced
2 stalks celery, finely chopped, plus 1/4 cup thinly sliced
2 small shallots, finely chopped
Juice of 2 lemons, plus wedges for serving
Pinch cayenne
Kosher salt and freshly ground black pepper
4 large avocados, well washed
8 cups baby arugula
2 tablespoons olive oil

Steps:

  • In a bowl, mix together the shrimp, crabmeat, mayonnaise, chopped parsley, chopped radishes, chopped celery, shallots, lemon juice, cayenne, 1/2 teaspoon salt and a few grinds of pepper.
  • Halve and seed the avocados. Use a spoon to scoop out most of the flesh, leaving 1/4 inch behind. Chop the avocado flesh and gently mix it into the seafood salad. Add salt and pepper to taste. Spoon the seafood salad into the avocado halves.
  • Toss the arugula with the sliced celery, sliced radishes, parsley leaves, olive oil and a pinch of salt. Divide among 8 plates; nestle the avocado halves on top. Serve with lemon wedges on the side.

1 ripe avocado
3 tablespoons lemon juice
1/4 teaspoon salt, plus more for seasoning
1 teaspoon Dijon mustard
Pinch white pepper
1/2 pound lump crabmeat
2 tablespoons chopped chives

Steps:

  • Pit and peel the avocado and cut it into 1/2-inch chunks. In a small bowl toss the avocado chunks gently with 1 tablespoon of the lemon juice and season with salt to taste. In a medium bowl, whisk together remaining lemon juice, 1 teaspoon Dijon mustard, pinch of white pepper, and 1/4 teaspoon salt. Add crabmeat and toss.
  • Stand an empty 15-ounce can with both top and bottom removed on a serving plate. Scoop a quarter of the avocado into the can. Place 1/4 of the crabmeat on top and press down gently into the mold. Gently pull the can off the avocado and crab mixture. Garnish with a half teaspoon of chives. Repeat with the remaining 3 servings and serve.

5 ounces small cooked shrimp, chopped
1 stalk celery, diced
1 green bell pepper, seeded and chopped

¾ cup mayonnaise

1 teaspoon Worcestershire sauce
salt and ground black pepper to taste

Steps:

1 tablespoon unsalted butter, at room temperature
1/2 pound (14 to 16) small cooked shrimp
1 large avocado (Hass variety preferred), peeled and chopped
2 tablespoons mayonnaise
1 green onion, , finely chopped
1 tablespoon chopped fresh cilantro
2 medium tomatoes, thinly sliced
1/4 teaspoon salt
3/4 cup finely shredded lettuce

Steps:

  • Butter each half of the rolls and set aside. In a medium bowl, mix the shrimp, avocado, mayonnaise, onion, and cilantro. Divide the shrimp mixture equally on the bottom half of each roll. This is so good! And very adaptable to your own tastes or to what you have available in your kitchen (the best part is the taste of crab & avocado together!). I first tried it at a restaurant 20+ years ago and have been making it at home ever since. I like it just the way I've posted but you can sub any type of bread, any type of crab, use avocado dip instead of fresh slices, and your choice of condiments. You can also melt the cheese for a couple of minutes under the broiler for a hot sandwich. Have fun!

1 onion roll, halved
1 tablespoon mayonnaise
1 teaspoon Dijon mustard
1/2 fresh avocado, sliced
2 -3 imitation crab legs, halved lengthwise
1 slice swiss cheese
1/4 cup bean sprouts

Steps:

  • Spread mayo and mustard on both sides of the onion roll.
  • Top one slice of the roll with avocado slices and crab, then the cheese slice; if you're going to melt the cheese, now is the time.
  • Top the other slice of roll with bean sprouts, put sandwich together and enjoy!

This is one of my favorite sandwiches, just a light sandwich. I serve this open faced or you can make this panini style, either or, with a big bowl of soup.

1 loaf Italian bread, cut in thin slices toasted with just a drizzle of olive oil
8 ounces shrimp, diced fine (canned will work, but fresh is much better)
1 teaspoon butter (to saute shrimp)
6 ounces cream cheese
4 ounces crabmeat (lump or claw is fine, canned will work too)
3 scallions, chopped fine green only
2 tablespoons brandy
1 teaspoon fresh dill
1/2 teaspoon minced garlic
1/4 teaspoon Worcestershire sauce
hot sauce
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper

Steps:

  • In a medium saute pan, add the butter and heat to medium heat. Saute the shrimp and garlic until done. It will take just a minute or two.
  • Remove shrimp to cool.
  • Now in a medium size bowl, add the shrimp with the cream cheese (room temp), brandy, Worcestershire, hot sauce, seasoning, and fresh dill and mix will. Cover and chill in the refrigerator for several hours. (2 or more to get all the flavors mixed).
  • Toast the bread (I like a little olive oil drizzled on it). Golden brown. Just takes 2 minutes per side in a 425F oven.
  • Lightly toss the shrimp mix with the crab and scallions and spread on the warm bread.
  • That just as an open face sandwich is just perfect to me. A nice bowl of soup and can't get much better.
  • Or just just put on a hot griddle, grill or saute pan for just 2-3 minutes to heat up and press down and just as good. Either way, it is a great sandwich.
