DEVILED EGGS WITH CRAB



Deviled Eggs with Crab image

4 ounces lump crabmeat
1/2 stick celery, finely chopped
2 tablespoons mascarpone cheese, at room temperature
1 tablespoon mayonnaise
1 tablespoon sour cream
1 tablespoon Dijon mustard
1 tablespoon fresh lemon juice
3 tablespoons chopped fresh chives
Salt and freshly ground black pepper
6 hard boiled eggs, peeled, halved, and yolks removed

Steps:

  • In a medium mixing bowl combine the crabmeat, celery, mascarpone cheese, mayonnaise, sour cream, Dijon mustard, lemon juice, and chives. Season, to taste, with salt and pepper. Spoon the crab mixture into the egg halves.
  • Transfer the filled eggs to a platter and serve.

CROSTINI ALLA ROMANA

12 1/2-inch thick slices ciabatta bread
12 slices thinly sliced prosciutto (about 6 ounces)
1 pound fresh mozzarella, cut into thin slices
3 tablespoons butter
6 sage leaves
Pinch salt
Pinch freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the slices of ciabatta on a parchment lined baking sheet. Bake until crisp and golden around the edges, about 8 minutes. Remove the bread from the oven. Place the prosciutto slices and mozzarella on the crostini toast and return to the oven to melt the cheese, about 8 more minutes.
  • Meanwhile combine the butter and the sage leaves in a small saucepan over medium heat. Cook until the butter is melted and starting to brown in spots and the sage leaves are crisp, about 5 minutes. Add the salt and pepper.
  • Remove the baking sheet from the oven. Transfer the crostini to a serving plate. Drizzle the crostini with the sage butter and serve immediately.

DEVILED CRABS

Deviled crabs are a quintessential Gullah dish similar to crab cakes. I like to serve them in cleaned crab shells for a pretty presentation. Ask your local fishmonger for the crab shells-they may sell them. Or, you can bake the deviled crab in small ovenproof dishes, too.

1 large yellow onion, cut into large pieces
1 stalk celery, cut into large pieces
1/2 medium red bell pepper, cut into large pieces
2 tablespoons unsalted butter, plus more, melted, for brushing
1/4 cup mayonnaise
1/4 cup Dijon mustard
2 teaspoons dry sherry
1 teaspoon seafood seasoning
1/4 teaspoon ground mace
2 large eggs, lightly beaten
2 pounds blue crabmeat (lump or claw), picked over to remove any shells
3 cups crushed round buttery crackers, such as Ritz (from 2 sleeves or 64 crackers)
12 cleaned crab shells

Steps:

  • Preheat the oven to 375 degrees F.
  • Pulse the onion, celery and red bell pepper in a food processor until minced. Melt the butter in a large skillet over medium-high heat. Add the minced vegetables and cook until softened, about 5 minutes. Set aside and let cool.
  • Combine the mayonnaise, mustard, sherry, seafood seasoning, mace and eggs in a large bowl. Stir in the cooled vegetables. Fold in the crabmeat and cracker crumbs. Spoon about 1/2 to 3/4 cup of the crab mixture into each crab shell and brush with melted butter. Place the crab shells on a large rimmed baking sheet. Bake until golden brown, 20 to 25 minutes.

BRAISED SHORT RIB CROSTINI WITH REMOULADE



Braised Short Rib Crostini with Remoulade image

2 tablespoons olive oil
1 1/2 pounds boneless beef short ribs, cut into 4 pieces
1 1/2 teaspoons salt
1 carrot, peeled and roughly chopped
1 celery stalk, roughly chopped
1 onion, chopped
3 fresh thyme sprigs
1 bay leaf
1/4 teaspoon red pepper flakes
2 tablespoons tomato paste
1 cup red wine
1 cup beef broth
2 hard-boiled eggs, peeled (see Cook's Note)
1/4 cup chopped cornichons (about 7 cornichons)
1/4 cup mayonnaise
1 tablespoon capers, chopped
1 tablespoon Dijon mustard
1 tablespoon chopped fresh tarragon
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper
16 crostini (see Cook's Note)
4 cornichons, sliced thin, for garnish

Steps:

  • For the short ribs: Heat the oil in a medium Dutch oven over medium-high heat. Sprinkle the short ribs evenly with the salt and add them to the pan. Sear well on all sides. This will take about 15 minutes total, so be patient; the meat should have a deep golden brown color and release evenly from the pan before flipping. Remove the seared short ribs to a plate.
  • To the hot pan, add the carrot, celery, onion, thyme, bay leaf and pepper flakes. Cook, stirring often with a wooden spoon, until very fragrant and beginning to soften, about 4 minutes. Stir in the tomato paste and caramelize for 2 minutes, stirring constantly. Add the red wine and simmer for 5 minutes to reduce slightly. Stir in the beef broth and add the short ribs back to the pan. Bring to a simmer and reduce the heat to low. Cover the pan and simmer until the meat can be pulled apart with a fork, 2 1/2 to 3 hours. Set aside to cool slightly.
  • Place the short ribs in a medium bowl. Using two forks, shred the meat into bite-size pieces. Add about a 1/2 cup of the braising liquid to the meat and toss to moisten.
  • For the remoulade: In a medium bowl, combine the eggs, cornichons, mayonnaise, capers, Dijon, tarragon, salt and pepper. Fold together with a rubber spatula.
  • For the crostini: Spread a small amount of the remoulade on each of the crostini. Top with a spoonful of the shredded meat and another small dollop of the remoulade. Garnish with a slice of cornichon.

CROSTINI WITH SMOKED WHITEFISH

1 teaspoon white sesame seeds
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon kosher salt
20 slices baguette, 1/4-inch thick (about 1/2 baguette)
1/4 cup extra-virgin olive oil
8 ounces smoked whitefish, flaked
6 tablespoons creme fraiche
2 tablespoons chopped fresh dill
20 caperberries, halved

Steps:

  • Preheat the oven to 350 degrees F.
  • Mix the poppy seeds, sesame seeds, garlic powder, onion powder and salt in a small bowl.
  • Brush the baguette slices on both sides with olive oil and spread out on a rimmed baking sheet. Sprinkle with the seed mixture. Bake until lightly browned and crisp, 8 to 10 minutes. Let cool to room temperature.
  • Meanwhile, with a rubber spatula, mix the flaked whitefish, creme fraiche and dill in a small bowl.
  • Top each crostini with a spoonful of the whitefish salad and garnish with 2 caperberry halves.

Steps:

  • In a medium bowl using a rubber spatula mix together the cr√®me fraiche, chives, basil, tarragon, lemon zest, lemon juice, olive oil and salt. Add the crab meat and gently fold it into the herb dressing until the crab is coated and the herbs are evenly distributed. Top each crostini with a tablespoon of the crab mixture and serve.

Steps:

  • Heat oven to 400°. Place bread slices on large ungreased cookie sheet. Brush tops lightly with oil. Bake 3 to 5 minutes or until crisp and very light brown.

100g of White Breadcrumbs
125g celery, finely sliced
150g of Onion, chopped
125g of Butter, melted
4 tablespoons of Milk or Cream
1 teaspoon of Mustard powder
1/2 a teaspoon of Cayenne pepper
2 tablespoons of Parsley, chopped
1 tablespoon of sweet green pepper

Steps:

  • Preheat the oven to 180 degrees.
  • Mix the crab meat with the breadcrumbs, celery, onions and moisten with the butter and cream.
  • Season with the mustard, salt, cayenne, parsley and sweet green pepper and mix thoroughly.

Steps:

  • In a large skillet, saute onion in butter until tender. Stir in flour and salt until blended. Gradually stir in cream until smooth. , Bring to a boil; cook and stir for 2 minutes or until thickened and bubbly. Remove from the heat., Stir a small amount of hot mixture into egg yolks. Return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat. Combine bread crumbs and melted butter; sprinkle over tops. Bake at 375° for 20-25 minutes or until topping is golden brown.
