QUICK CRAB MELTS
Two types of cheese on top of a savory crab mixture make these open-faced sandwiches ooey-gooey good! I usually serve them for dinner, but they also make a great app when cut in half. -Donna Bennett, Bramalea, Ontario

Steps:
- Preheat broiler. In a small bowl, mix crab, mayonnaise, celery and green onion until blended. Place muffin halves on an ungreased baking sheet., Broil 4-6 in. from heat until toasted. Spread with crab mixture. Top with tomato and cheeses; sprinkle with paprika. Broil until bubbly.

LOBSTER (OR CRAB) NEWBURG FOR TWO
This is another recipe from the Dayton's-Hudson's- and Marshall Field's cookbook. This one was submitted by Leny Sanders of Marshall Field's. It's sinfully delicious, and very easy.

Steps:
- In lg skillet, melt butter; saute shallot and red pepper.
- Add flour and stir until mixed; add broth and sherry.
- Simmer for 3 minutes.
- Add mushrooms; simmer 5 minutes.
- Add lobster or crab and half and half.
- Do not boil, but let this mixture heat through.
- Spoon into 1 qt casserole dish.
- Sprinkle with breadcrumbs and Parmesan cheese.
- Place under broiler until breadcrumbs are light brown.
CREAM CHEESE AND CRAB SPREAD
Cream cheese and crab are two of my favorite ingredients. I would use chipotle as the hot pepper sauce. The servings yield is for cracker appetizer size.

Steps:
- In mixer, beat until creamy: cheese, reserved liquid, onion, lemon juice, salt and hot pepper sauce.
- Stir in crab meat.
- Turn into shallow greased baking dish.
- Sprinkle with almonds.
- Bake uncovered in preheated 350° F oven 20 to 30 minutes or until bubbly.
- Serve hot as a spread on bread rounds or crackers.
