Ingredients:

  1. fresh lump crabmeat
  2. egg
  3. dijon mustard
  4. flour
  5. extra virgin olive oil
  6. butter
  7. lemon wedge
  8. salt and black pepper

Steps:

  1. gently combine crab , egg , mustard , salt , pepper and 2 tablespoons flour
  2. cover
  3. and put in freezer for 5 minutes
  4. shape mixture into 4 hamburger-shaped patties
  5. line plate with plastic wrap , and put crab cakes on it
  6. cover with more plastic wrap , and refrigerate for about 30 minutes , or freeze for 15 minutes
  7. put flour for dredging in a bowl
  8. combine oil and butter in 12-inch skillet , and turn heat to medium
  9. when butter melts and its foam subsides , gently dredge a crab cake in flour
  10. gently tap off excess flour
  11. and add crab cake to pan
  12. repeat with remaining crab cakes , and then turn heat to medium-high
  13. cook , rotating cakes in pan as necessary to brown first side , 5 to 8 minutes
  14. turn and brown other side
  15. serve hot , with lemon wedges
