Quesadillas make a great snack as well as an easy lunch or supper! Kids just love them! This one can be easily made with shrimp, as well. :)

8 ounces lump crabmeat (imitation also works well)
1/2 cup sour cream
2 teaspoons freshly squeezed lime juice
4 green onions, finely chopped
salt
fresh ground pepper
2 cups queso fresco, grated ("or" other white farmer's cheese)
4 tablespoons chopped fresh cilantro
8 8-inch fat-free flour tortillas

Steps:

  • Shred crab meat; mix together with sour cream, lime juice, and green onions in a small bowl.
  • Season to taste with salt and pepper.
  • Heat griddle or small frying pan with a small amount of oil or cooking spray.
  • Take a tortilla, place about 1/8 of crab mixture on it and spread evenly.
  • Top with 1oz.
  • (about 1/4 cup) cheese and sprinkle with some chopped cilantro.
  • Place on hot griddle; when cheese starts to melt, fold in half.
  • Allow to heat through and brown nicely, then remove from heat.
  • Repeat with other tortillas.
  • Quesadillas can be kept warm on a stoneware plate or baking dish in the oven on warm while you are busy with the others.
  • Serve topped with a dallop of sour cream or guacamole, and wedges of lime, if you wish.

Crab quesadillas are the bar food version of fusion cuisine. Crabmeat along with green chiles and cheese makes for a very novel (and delicious) combo.

Number Of Ingredients 8

1 1/2 cup shredded cheddar cheese
1/4 cup mayonnaise
1/3 cup sour cream
8 ounces crabmeat, cooked and chopped
2 tablespoons finely chopped green onion
2 tablespoons chopped green chiles
10 (8-inch size) flour tortillas
2 tablespoons butter, melted

Steps:

  • Preheat the oven at 375 degrees F. Combine the cheese, mayonnaise, sour cream, crabmeat, green onion, and green chiles in a bowl. Mix well. The filling can be made ahead of time and refrigerated for up to 1 day. Place the tortillas on a baking sheet. Spread about 1/4 cup of the filling on one half of each tortilla. Fold the tortilla over to cover the filling. Brush the outsides of the tortilla with the melted butter. Place the baking sheet in the oven and bake at 375 degrees for 10-15 minutes or until lightly browned and heated through. Remove from the oven and cut into wedges. Serve hot.

1 cup fresh crabmeat
1/2 cup sour cream
1 teaspoon lemon juice
3 green onions, chopped
1 (4-ounce) can chopped green chili
1 tablespoon finely chopped cilantro
1 teaspoon chili powder
1/4 teaspoon red bell pepper
1 jalapeño pepper, chopped (optional)
12 tortillas
1 cup grated Cheddar cheese
1 cup grated Monterey Jack cheese
1 egg white
1 tablespoon vegetable oil

Steps:

  • In a bowl, combine the crabmeat, sour cream, lemon juice, green onions, green chiles, cilantro, chili powder, red pepper, and jalapeño, if desired. Place 2 tablespoons of the mixture on a tortilla (small ones work better, easier to turn), spreading to 3/4 inch of the edge. Top with a tablespoon of each of the cheeses. Brush the rim of the tortilla with egg white. Place a second tortilla on top and press to seal. Repeat. Heat vegetable oil in large skillet. Brown the tortillas on both sides to heat and melt the cheese. Cut into wedges. Serve with salsa, sour cream, and/or guacamole.

1 teaspoon freshly grated orange zest
1 tablespoon orange juice
8 ounces pasteurized crabmeat, drained if necessary
4 (8 inch) whole-wheat tortillas
2 teaspoons canola oil, divided

Steps:

  • Combine Cheddar, cream cheese, scallions, bell pepper, cilantro, jalapenos (if using), orange zest and juice in a medium bowl. Gently stir in crab. Lay tortillas out on a work surface. Spread one-fourth of the filling on half of each tortilla. Fold tortillas in half, pressing gently to flatten.
  • Heat 1 teaspoon oil in a large nonstick skillet over medium heat. Place 2 quesadillas in the pan and cook, turning once, until golden on both sides, 3 to 4 minutes total. Transfer to a cutting board and tent with foil to keep warm. Repeat with the remaining 1 teaspoon oil and quesadillas. Cut each quesadilla into 4 wedges.

1/2 cup corn
1/2 cup salsa, chunky
1/4 cup sour cream
2 small jalapeno peppers, seeded, chopped fine
2 cups cheddar cheese, shredded
1 cup monterey jack pepper cheese, shredded
8 tortillas, 8-inch flour

Steps:

  • In medium bowl combine shrimp, crab, corn, salsa, sour cream and peppers.
  • Combine cheeses together.
  • Top 4 tortillas with 3/4 cups of cheese.
  • Top cheese with mixture.
  • Top with remaining 4 tortillas.
  • Heat nonstick skillet over medium heat.
  • Place a quesadilla in skillet and cook until browned, 3 - 4 minutes.
  • Flip and cook 3 minutes more or until cheese is melted.
  • Cut into 6 wedges.
