CRACKER BARREL PEACH COBBLER WITH ALMOND CRUMBLE TOPPING
Made with Cracker Barrel pancake mix (the best pancake mix in the world) and so light but decadent! My family thought I picked this up from restaurant take out. I could hardly convince them I concocted the recipe myself! A must try recipe...easy and quick too.

Steps:
- Mix all batter ingredients in a bowl with wisk until well incorperated and light. Pour into non greased 8 x 8 baking pan.
- Drain peaches of syrup except for about a tablespoon of juice in each can, and mix with sugar until it has dissolved. Pour over batter but do not mix -- batter will rise over peaches and juices on it's own.
- Mix all topping ingredients with hands slightly breaking up almonds as you incorperate. Do not place on cobbler yet as the almonds will burn! That step will come later.
- Place into 375 degree oven for 45 minutes. Then, while leaving cobbler in oven, place crumble topping over cobbler and bake another 10-15 minutes. Watch carefully so that nuts don't burn.
- Serve while still a little warm with some cinnamon ice cream and enjoy!

- Combine flour, almond flour, sugar, and salt in a small bowl, mix together thoroughly with a whisk. Cut the cold butter into small cubes and add to the dry mixture. Use a pastry blender to cut the butter into the dry mixture until coarse crumbs form.
- Add almond extract and almond slice, use a fork to mix. Cover and refrigerate until ready to use.
- Add flour, sugar, salt, baking soda and baking powder to a medium mixing bowl and mix with a whisk to combine. Toss the cubed butter in the flour mixture and work it into the flour with the tip of your fingers until about pea size and larger.
- Make a well in the middle of the flour mixture and pour in buttermilk, vanilla extract and almond extract. Fold with a spatula or wooden spoon until a wet dough forms. Cover and refrigerate until ready to use.
- Preheat the oven to 375°F.
- Peel and dice the peaches into bite size pieces. Add peaches and lemon juice to a medium mixing bowl.
- Whisk together the brown sugar, salt, cinnamon and tapioca flour in a small bowl and sprinkle over the peaches. Toss gently with a spatula until evenly coated. Transfer peach cobbler filling to a 9" square baking pan.
- Using a small ice cream scoop or a tablespoon, drop spoonfuls of biscuit dough on top the peach filling evenly. Then sprinkle almond streusel over the top.
- Bake for 40 - 45 minutes until the topping is golden brown and the filling is bubbling.
- Remove from the oven and allow to cool enough to handle before serving.

SIMPLE PEACH PIE WITH APPLE ACCENT AND CRUMBLE TOPPING
This recipe was the result of one too few peaches and an extra apple lying around. It calls for 3 tbs butter for the apple crumble mix,but make sure you have enough to completely coat the crumble. I used Pillsbury pie crust and T. Marzetti apple crisp mix. I hope you enjoy this!

- Preheat your oven to 400°F.
- Peel, pit and slice your peaches and do the same for the apple. Make sure your apple is sliced very thinly. Combine the fruit in a medium sized bowl and set aside.
- Roll out the pie crust and sprinkle it with a pinch of your sugar.
- Add the rest of your sugar, vanilla, cinnamon and nutmeg to your fruit mixture and fold together. Fill your pie crust with the fruit mixture.
- Cover the filling of the pie with aluminum foil and bake this for 10 minutes.
- While your pie is baking, add the butter to your apple crumble mix and combine until the mix is completely coated.
- Remove pie and aluminum foil. Add the crumble and bake for a remaining 30 minutes.
